MOM'S SPANISH RICE

- In a large skillet, cook beef, onion and pepper over medium heat 6-8 minutes or until beef is no longer pink and onion is tender, breaking up beef into crumbles; drain., Stir in tomato sauce, tomatoes and seasonings; bring to a boil. Add rice; heat through, stirring occasionally. Garnish with green onions, if desired.

SPANISH RICE WITH GROUND BEEF
Steps:
- Place a deep 12-inch skillet over MEDIUM-HIGH heat. Add ground beef and cook, stirring to break it up, until browned and crumbly, about 5 minutes. Drain or blot excess grease if necessary. Add the bell pepper, onion, and garlic. Cook, stirring occasionally for 3 to 4 minutes, until the onion and bell pepper have softened slightly. Add the uncooked rice, Rotel tomatoes, tomato sauce, and taco seasoning mix and stir to combine well. Stir in the broth and bring the mixture to a boil. Reduce the heat to low, cover, and simmer for 25 minutes.
- Remove the cover and stir the mixture well. Stir in the frozen corn, cover the skillet and continue to cook for another 5 minutes until the liquid has been absorbed and the rice is tender.
- Stir well and garnish with cilantro, if desired. Serve with any Mexican entrée, rolled in tortillas, or just add toppings and make it a meal!

MOM'S SPANISH RICE WITH GROUND BEEF
My mom made this from the time I can remember, and it's always been a family favorite with everyone! I don't think it's really a "Spanish" style rice, but that's what she always called it, and I just don't have another name for it! Ha! We make this as a main dish, but if you leave out the ground beef, it's a great side dish...

Steps:
- 1. In a skillet, brown ground beef; drain.
- 2. Stir in the onion, green pepper and garlic. Cook and stir until the vegetables are tender.
- 3. Add tomato sauce, salt and pepper. Let simmer 15-20 minutes on low.
- 4. Bring rice, water and salt to a boil; cover and lower heat, let cook 15-20 minutes or until rice is tender.
- 5. Scoop rice into bowls and cover with the sauce mixture. (I like serving it this way instead of mixing it altogether, because some family members like more sauce than others. But, you can mix it together in the pan before serving.)
HAMBURGER SPANISH RICE WITH BACON
This meaty Spanish rice has lots of flavor. Every time I make this dish, it reminds me of my childhood days when I was in grade school, and the delicious hamburger Spanish rice which was served for lunch. Prep time includes cooking the bacon, hamburger, and vegetables.

- In a 12-inch skillet, cook bacon slices until crisp; drain on paper towel and set aside.
- In the same skillet, along with the bacon grease, brown the hamburger and cook the vegetables; then drain in a colander.
- Return cooked beef and vegetables to the skillet, then add the remaining ingredients.
- Crumble bacon slices, and add to the skillet, and stir.
- Bring ingredients in skillet to a boil, then reduce heat, cover, and simmer for 30 minutes, or until rice is tender and liquid is absorbed.
- Note: You can substitute stewed tomatoes for the regular canned tomatoes.

MOM'S SPANISH RICE
This is my Mom's Spanish Rice recipe. It's so good, that you can actually eat it by itself as a meal and not as a side-dish.

Steps:
- Being that I like to cook quick (and so do you, probably), I like to dice, chop, and get everything out and measured and put aside before I even begin the cooking, so dice your onions and chop up the bell peppers. You can leave the seeds of the peppers if you'd like but make sure to de-stem them.
- In a pot, heat vegetable oil over medium heat.
- Add the chopped peppers, diced onions, salt, pepper, cumin, chili powder, and cayenne. Stir VERY frequently (about 1-2 minutes) and make sure that the all the spices are mixed into the vegetables.
- Immediately, and in a separate pot, prepare your rice according to the package.
- When rice is cooked, add it to the cooking veggies.
- Add the canned tomatoes and stir frequently on medium heat.
- Cook for 30-45 minutes on medium heat, stirring frequently to avoid burning the rice and so that the rice can absorb the tomato, oil, cumin, chili powder, cayenne, salt, and pepper.
- If you want a variation, add small pieces of cooked hamburger meat (prepared in a separate skillet) to the mix. You can add salt, pepper, cumin, chili powder, and cayenne to that, as well, before finally adding it to the mix. If you are a brontosaurus and don't eat meat like your T-Rex friends, skip this step.
- You will know the rice has absorbed everything and that everything is cooked when the rice is golden. (Note: if you believe the rice to taste too salty, gradually add just pinches of sugar until the flavor balances back out; sugar, kids, is a great equalizer -- use it wisely.).
- Serve hot and enjoy!

Growing up, my mom made a version of Spanish rice with ground beef that was hearty enough that it stood on its own as a main dish. During a visit a few years ago, after missing her cooking desperately, I watched her prepare it and jotted down the recipe.
