Sweet n Sour Sirloin Stir-Fry with Ranch Mashed Potatoes image

This is an all American twist on traditional Asian style stir fry. The "special sauce" can be thrown together with items we all have on our refrigerator door. Stir things up and try this one out!

Provided by Rachael Ray : Food Network

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 18

1 1/2 pound piece sirloin, 1-inch thick
Handful fresh dill, chopped
Handful fresh chives, chopped
2 pounds Idaho potatoes, peeled and cubed
Salt
3 tablespoons vegetable, peanut or canola oil
2 large red bell peppers, seeded and sliced
1 large green bell pepper, seeded and sliced
1 bunch scallions, cut into 2 to 3-inch pieces on bias, greens and whites
2 cups shelled frozen edamame
3 tablespoons brown sugar
3 tablespoons soy sauce
1/4 cup yellow mustard
1/4 cup ketchup
2/3 cup buttermilk
Freshly ground black pepper
A few dashes hot sauce
Handful fresh flat-leaf parsley, chopped

Steps:

  • Pop the meat in the freezer for a few minutes to stiffen it up for slicing.
  • Place potatoes in a pot and cover with cold water. Bring water to a boil. Salt the water and cook the potatoes until tender, 12 to 15 minutes. Drain. Halve the steak lengthwise then very thinly slice the meat. Heat the oil in a very large skillet over high heat. When oil wafts smoke and ripples, add the meat and stir-fry until caramelized 3 minutes. Add peppers and stir-fry 2 minutes then add in scallions and edamame for 2 minutes more. Stir together the sugar, soy, mustard and ketchup and pour over stir-fry the last minute of cooking. Season, to taste, if necessary. Mash potatoes with buttermilk, salt and pepper, hot sauce, parsley, dill, chives, adjust seasoning with salt and pepper, to taste, and serve with stir-fry on top!;

Provided by SuzieQutie

Categories     Pork

Time 45m

Yield 4 serving(s)

Number Of Ingredients 18

2 cups water
1 cup white rice
2 scallions, finely chopped
2 tablespoons canola oil
1 tablespoon hot sauce
1 lime, juice of
3 tablespoons honey
3 tablespoons tamari soy sauce, soy sauce
3 tablespoons rice wine vinegar
1 (8 ounce) can tomato sauce
1 tablespoon cornstarch
1 lb pork tenderloin, trimmed of silver skin and cut into 1-inch dice
2 garlic cloves, grated
1 inch ginger, peeled and grated
2 green bell peppers, seeded and cut into 1-inch pieces
1 large onion, cut into 1-inch pieces
6 slices fresh pineapple, drained and cut into 1-inch pieces
1 pinch ground black pepper

Steps:

  • Bring the water to a boil in a medium-size pot with a lid. Add the rice, give it a stir then put the lid on and reduce the heat to a simmer. Cook the rice until tender, about 18 minutes. Once it's ready, fluff the rice with a fork and stir in the scallions.
  • When the rice is about halfway done, place a large skillet over high heat with 2 turns of the pan of oil, about 2 tablespoons. While the pan is heating up, grab a small bowl and combine the hot sauce, lime juice, honey, tamari, vinegar, tomato sauce and cornstarch, stirring to dissolve the cornstarch. Set the sauce aside.
  • When the pan is searing hot, add in the pork and cook the meat until caramelized, 3-4 minutes. Add in the garlic, ginger, peppers and onions, and stir-fry the meat and veggies for 2 minutes more. Add in the pineapple and reserved sauce, and stir everything together. Bring the sauce to a boil and allow it to cook for 1 minute to thicken up.
  • Season everything with some ground black pepper and serve the sweet and sour pork over the scallion rice.

SAVORY AND SWEET PORK STEW WITH ANCHO CHILES

Savory and Sweet Pork Stew with Ancho Chiles image

Provided by Rachael Ray : Food Network

Categories     main-dish

Time 2h

Yield 4 to 6 servings

Number Of Ingredients 18

1 medium red onion, sliced
Juice of 2 limes
Salt and freshly ground pepper
5 or 6 dried ancho chiles, stemmed and seeded
4 cups chicken stock
1/2 cup blanched whole almonds
1/2 cup unsalted peanuts
1 tablespoon unsweetened dark cocoa powder
1/2 teaspoon ground cloves
3 to 4 cloves garlic, grated or made into a paste
1 small yellow onion, chopped
Handful of raisins
2 pounds pork shoulder, cut into bite-size cubes
About 2 tablespoons vegetable or peanut oil, plus more for drizzling
2 large bay leaves
1 cinnamon stick
12 flour or corn tortillas
Queso fresco or Cotija cheese, crumbled

Steps:

  • Separate the red onions into rings and place in a small plastic container. Dress with the lime juice and season with salt and pepper. Cover and store in the refrigerator.
  • Place the ancho chiles in a pot and cover with the chicken stock. Turn on the heat and warm the stock to reconstitute the chiles, 10 minutes or so.
  • Meanwhile, in a large Dutch oven, toast the almonds and peanuts over medium heat until browned. Transfer the nuts to a food processor. Reserve the pot. Add the ancho chiles with the stock to the food processor along with the cocoa powder, cloves, garlic, yellow onions and raisins. Season with salt and pepper. Puree until smooth. (You may need to do this in two batches.)
  • Pat the pork dry and heat a thin layer of oil in the Dutch oven over medium-high heat. Sprinkle the pork with salt and pepper, then brown in two batches, adding more oil between batches as needed. Return all the pork to the pot and pour the ancho sauce over it. Bring the mixture to a boil and add the bay leaves and cinnamon stick. Reduce the heat to a simmer and cook until the pork is very tender, 1 hour 15 minutes to 1 1/2 hours (depending on how large you cubed the meat).
  • Warm or char the tortillas. Serve the stew with the lime-pickled onions, crumbled cheese and the tortillas.
  • Cook's Note: If you are not serving the pork immediately, cool and store it in the refrigerator. Reheat over medium heat.
