- Microwave chicken according to package directions. Meanwhile, in a large skillet, heat oil over medium-high heat. Add green pepper and onion; stir-fry until crisp-tender, 3-4 minutes. Drain pineapple, reserving the juice in a 2-cup measuring cup; set pineapple aside. Add enough water to the juice to measure 1-1/3 cups; stir in vinegar, soy sauce and ketchup. , In a large bowl, combine brown sugar and cornstarch. Stir in pineapple juice mixture until smooth. Gradually add to the skillet. Bring to a boil; cook and stir until thickened, about 2 minutes. Stir in chicken and pineapple; heat through. If desired, serve with rice and sprinkle with green onions and sesame seeds.

- Combine flour, garlic powder, salt, and black pepper in a shallow dish.
- Roll and coat chicken cubes in flour mixture.
- Heat 2 tablespoons vegetable oil in a skillet over medium-high heat.

From Simple & Delicious. You could probably also use popcorn fish or other frozen, breaded or battered, bite-sized meat or seafood or even Quorn nuggets for vegetarians. I served it with Egg Drop Soup #185685 and Fried Rice #185688, plus some chicken & vegetable egg rolls. It's very delicious and simple to throw together. There's a lot of sauce, which was great for dipping the egg rolls into. The serving sizes for this and the other two recipes were fairly generous, too--we ate heartily and still had leftovers for DH's lunch. My toddler couldn't get enough of the chicken in the sauce (though I wish he'd done better with the fruit and veggies!).

I learned this recipe from my mom and I still love it! While it does take some time to make, the outcome is just as good as take-out! You will need a Fry Daddy or a frying pan with oil in order to fry the meat. Put enough oil in the frying pan so that the meat can float to the top.

- Frying the chicken (or pork): Cut up chicken (or pork) into small pieces.
- Mix breading ingredients (it will be runny).
- Dip each piece of meat into the breading then place into the oil until it turns brown.
- Make sure the meat has enough time to cook before removing it.
- Drain the fried chicken (or pork) and set aside, or place a cover over them to keep them warm.
- Sauce: Melt the margarine in a frying pan, and add the onion, green pepper and sliced carrots.
- I often add other peppers or snow peas as well.
- Once the veggies are cooked stir in the rest of the ingredients EXCEPT the pineapple.
- Cook until it boils and add cornstarch if it is too runny.
- Finally add the Pineapple for the last 5 min.

- Finally: Serve over rice if desired.
SWEET AND SOUR SKILLET CHICKEN
This recipe was given to me many years ago by a family friend. I have no idea where she got it.It's very simple to fix; not much fuss. The ingredients for the sauce gave me cause for pause when I first read them, but this is a delicious tasting dish. You're in for a plesant surprise.

- Place onion slices in electric skillet in a single layer.
- Arrange chicken pieces on top of onion slices.
- Sprinkle with salt and black pepper.
- Mix remaining ingredients and pour over chicken.
- Set control at medium.
- Cook, covered for 10 minutes.
- Reduce heat to low simmer setting and cook covered at least 2 hours.
- Turn chicken pieces periodically, and baste with sauce.
- Add a little amount of water at a time if sauce becomes too thick.

- Sift the flour into the mixing bowl, along with the cornstarch and baking powder to make the batter.
- Add the vegetable oil and stir in just barely enough water to make a smooth, thick batter, which will yield about 3/4 cup.
- Put the wok on the stove and pour roughly 2/3 cup of vegetable oil into it, then heat until almost smoking.
- After it is almost smoking, lower the heat slightly.
- Then dip the pieces of chicken into the batter and cover them in the batter.
- After they are covered in batter, cook them in the wok for 2-3 minutes, or until the chicken is cooked through.
- It's acceptable to do the chicken in batches instead of all at once.
- Remove chicken from the wok with a slotted spoon and keep it warm, I'd recommend keeping it in the oven until it is needed.
- Drain all but roughly 1 tablespoon of oil from the wok.
- Add the bell pepper, pineapple pieces, onion, bamboo shoots, and carrot to the wok, and then stir-fry it for 1-2 minutes.
- Remove the vegetables from the wok with a slotted spoon and set them aside for now.
- Mix all the sauce ingredients together until they are combined, and then pour the sauce into the wok.
- Bring the wok to a boil and stir the sauce until it is thick and clear.
- Cook it for about 1 minute, then return the chicken and vegetables to the wok.
- Cook all of this for 1-2 more minutes, and then serve with rice or noodles.

QUICK SWEET & SOUR POPCORN CHICKEN
Steps:
- Preheat oven to 250 degrees F. Place chicken on a baking sheet. Cook for 10 minutes (or until chicken is warmed) shaking chicken turning once. (or shaking tray with mitt on)
- Put chicken, and sweet & sour sauce, in small sauce pan. Cook on medium heat for 10 minutes.
- Cook rice in saucepan, according to directions.
- When all is cooked, place rice in pie dish. Place chicken & sauce on top.
