Our family loves this meatloaf! It's covered with a tangy sweet and sour sauce made on the stove. It is very good!

1 ½ pounds ground beef
1 cup dry bread crumbs
1 teaspoon salt
¼ teaspoon ground black pepper
2 eggs
1 teaspoon dried minced onion
1 (15 ounce) can tomato sauce
2 tablespoons brown sugar
2 tablespoons cider vinegar
½ cup white sugar
2 teaspoons prepared mustard

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the ground beef, bread crumbs, salt, ground black pepper, eggs, onion flakes and 1/2 of the can of tomato sauce. Mix together well and place into a 5x9 inch loaf pan.
  • Push the meatloaf down into the pan forming a well for the sauce around all the edges.
  • Bake at 350 degrees F (175 degrees C) for 40 minutes.
  • Meanwhile, in a small saucepan over medium heat, combine the remaining tomato sauce, brown sugar, vinegar, white sugar and mustard. Bring to a boil and remove from heat.
  • After meatloaf has cooked for 40 minutes, remove from oven and pour sauce over the top of the meatloaf.
  • Return to oven and bake at 350 degrees F (175 degrees C) for 20 more minutes. Let sit 5 minutes before removing from pan.

It is great on a sandwich the next day with a little mayo and cheese. My husband makes me double this recipe and he would eat it every day if I cooked it! We always fight over the leftovers!!

1 -1 1/2 lb ground beef or 1 -1 1/2 lb ground turkey
1/2 cup chopped celery
1/2 cup chopped onion
1/2 cup uncooked rice
1/2 cup cracker crumbs (approx) or 1/2 cup breadcrumbs (approx)
1 egg
1 (8 ounce) can tomato sauce
3 -4 tablespoons packed brown sugar
3 -4 dashes Worcestershire sauce
1 tablespoon yellow mustard
1 tablespoon apple cider vinegar
salt and pepper
garlic powder (optional)
garlic salt (optional)

Steps:

  • Preheat oven to 425°F.
  • To prepare meatloaf: Add celery and onions (and any other veggies you like) to beef.
  • Add egg.
  • Add rice, breadcrumbs or cracker crumbs (I've even used potato chips!) for firmness.
  • Open can of tomato sauce put in a little for moisture.
  • Add some salt and pepper and start mushin.
  • I always like garlic in everything so I usually put in a bit.
  • Make into a loaf.
  • Put in a loaf pan or a dish that will leave some room on sides.
  • I like lots of sauce so I put mine in a corning dish with room all the way around.
  • For Sauce: Pour tomato sauce in same mixing bowl.
  • Add all your remaining ingredients.
  • If you like it a little sweeter, add more sugar.
  • A little more sour, add more vinegar.
  • I usually put in quite a bit more Worcestershire sauce.
  • Mix well and pour over meatloaf.
  • Cook covered in oven for about 35 minutes, depending on altitude and oven intensity.
  • Keep checking it.
  • Insert a knife into the middle to check for doneness.
  • This recipe is served best with Mashed Taters and corn.
  • You mush em all together and it's delicious.

1/4 cup low-sugar grape jam/jelly
1 1/4 lb. raw extra-lean ground beef
1/2 cup chopped onion
1/4 cup quick-cooking oats
1/4 cup fat-free liquid egg substitute (like Egg Beaters Original)
1/4 tsp. each salt and black pepper
Topping
2 tbsp. chili sauce (the kind stocked near the ketchup)
2 tbsp. low-sugar grape jam/jelly

Steps:

  • Preheat oven to 400 degrees. Spray a loaf pan with nonstick spray. To make the loaf, mix chili sauce with jam/jelly in a large bowl. Add all other loaf ingredients and thoroughly mix. Transfer to the loaf pan; if needed, smooth out the surface with a spatula or spoon. In a small bowl, mix topping ingredients. Evenly spread topping over the loaf.
