This Mexican tuna salad is full of crunchy corn, creamy avocado, tender black beans, & more. A tasty way to get a huge serving of veggies!

1 cup canned corn (rinsed and drained)
1 cup black beans (rinsed and drained)
2 small bell peppers
1 avocado
1/4 purple onion
1 head lettuce
14 oz tuna
1/4 cup ranch dressing
1 tbsp taco seasoning

Steps:

  • Dice all vegetables into small pieces. Drain the tuna can of any excess liquid.
  • Toss the dressing and taco seasoning into the salad right before serving. Enjoy right away!

Recipe for Mexican style tuna salad with cilantro and lime. This is our photographer's recipe. Tuna salad served with saltine crackers is a very popular quick meal in Mexico.

2 cans water-packed tuna
1/2 medium white onion
8 sprigs cilantro
3 small carrots
3 stalks celery
1/2 head butter lettuce (or lettuce of your choice)
1/2 cup mayonnaise
4 limes
1 package saltine crackers (or your preferred crackers)
salt and pepper to taste

Steps:

  • Drain the tuna very well.
  • Peel and finely chop the carrot.
  • Finely chop the onion and celery.
  • Remove the stems from the cilantro and finely chop the leaves.
  • Place the tuna and the chopped ingredients in a mixing bowl. Add the mayonnaise and stir well.
  • Add salt and pepper to taste.
  • Wash and separate the lettuce leaves. Pat dry with a towel.
  • On each cracker, place a lettuce leaf and then top with a spoonful of tuna salad. Serve with a sliced lime on the side.
  • You can also use it as a filling for tuna salad sandwiches.

1 -7 oz can tuna (drained)
1 ½ cup iceberg lettuce (chopped)
½ cup tomatoes (diced)
¼ cup onions (chopped)
1 -8oz can mixed vegetables
⅓ cup mayonnaise
½ cup Mexican crema (or sour cream)
¼ cup pickled jalapeños (chopped)
¼ cup brine from pickled jalapeños
salt

Steps:

  • Place lettuce, tomatoes, onions, and mixed veggies in a medium bowl.
  • Drain well the tuna and add it to the bowl.
  • Add Mexican crema, mayonnaise, pickled jalapeños, and brine.
  • Toss everything for 1-2 minutes.
  • Adjust salt to taste and serve on tostadas, saltine crackers, or stuffed in a sandwich.

Mexican Tuna Salad spices up a classic, for a high-protein lunch or snack. Tomatoes, avocado, taco sauce, sour cream and lime juice help make this salad a hit.

12.8 oz Albacore (white) tuna (Use two, 6.4 ounce pouches)
1 small avocado (chopped)
1 small tomato (chopped)
3 tbsp mayonnaise
2 tbsp taco sauce
1 tbsp sour cream
4 pickled jalapeño slices (finely chopped)
2 tsp lemon juice
2 tsp lime juice
1 tbsp chopped cilantro (optional)

Steps:

  • In a small bowl, whisk together the mayonnaise, sour cream, taco sauce, lemon and lime juices and salt until smooth. Add the finely chopped jalapeño pepper and stir until combined.
  • In a larger bowl, add the tuna and use a fork to break it up. Add the chopped avocado and tomato. Add the mayonnaise and taco sauce dressing and stir until well combined.
  • This salad can be stored in an air-tight container in the refrigerator for up to 2 days. I do not recommend freezing this recipe.

2large pitta breads
400g can mixed beans , drained and rinsed
1 avocado , sliced or chopped
4large tomatoes , deseeded and chopped
½ bunch spring onions , sliced
1 red chilli , chopped
400g can tuna in water, drained
3 tbsp French dressing , homemade or bought

Steps:

  • Toast the pitta breads. Once cool, tear into large pieces. Mix together the beans, avocado, tomatoes, spring onions and chilli. Flake the tuna on top of the salad, pour over the salad dressing, then add the crisp pieces of pitta. Mix gently and serve straight away.
