BRAISED PORK IN RED CHILE SAUCE



Braised Pork in Red Chile Sauce image

This braised pork in red chile sauce is made by slowly cooking pork butt in a smoky, spicy homemade ancho chile sauce. You'll want to have plenty of tortillas on hand to soak up that sauce.

5 or 6 dried pulla, negro, or guajillo chiles
1 dried ancho chile
4 garlic cloves (peeled)
1 teaspoon ground cumin
2 cups water
1 pound plum tomatoes
1 tablespoon olive oil
2 pounds pork butt (cut into 2-inch [5-cm] pieces)
1 tablespoon kosher salt
1 medium (1 cup) onion (diced)
Corn or flour tortillas and black beans

Steps:

  • Have ready a medium bowl filled with very hot water. In a cast-iron skillet or grill over medium-high heat, toast the chiles until nice and smoky, 1 to 2 minutes per side. Place the chiles in the bowl of hot water to rehydrate for 5 minutes. Drain the chiles.☞TESTER TIP: Reserve the chile soaking water and use it in place of the water called for in steps 2 and 6.
  • In a blender, combine the rehydrated chiles with the garlic, cumin, and 1 cup water. Blitz until smooth, then pour the chile paste into a bowl.☞TESTER TIP: There's no need to clean the blender before using it later for the tomatoes.
  • On the cast-iron skillet or grill used for toasting the chiles, roast the tomatoes, rotating occasionally, until nice and charred in some places, 7 to 10 minutes. Toss the grilled tomatoes into the blender and blitz until smooth.
  • In a Dutch oven or high-sided sauté pan with a lid over medium-high heat, warm the olive oil. Add the pork, season with the salt, and cook, stirring often, until the meat is browned, 10 to 15 minutes. Use a slotted spoon to transfer the pork to a plate, leaving behind the fat in the pan.
  • Reduce the heat to medium, add the onions and cook until softened, about 5 minutes. Stir in the chile paste. Add the pork and stir to coat.
  • Pour in the pureed tomatoes and 1 cup water. Bring the mixture to a boil, then cover, turn the heat to low, and braise the pork until tender, about 1 hour and 45 minutes. Taste and adjust seasoning, if necessary.
  • Serve the pork in chile sauce with warm tortillas and black beans.

3 lbs lean boneless pork butt or 3 lbs pork shoulder
2 tablespoons salad oil
2 large onions, chopped
2 garlic cloves, minced
5 -6 teaspoons chili powder
1 teaspoon ground cumin
1 1/2 teaspoons oregano leaves, crumbled
1 1/4 cups water
1 teaspoon sugar
1 1/2 teaspoons salt
3 tablespoons tomato paste
1/2 cup whipping cream
pumpkin seeds, shelled
avocado, peeled pitted and sliced
tomatoes, cut into wedges
sour cream
lime, cut into wedges

Steps:

  • Trim and discard fat from meat and cut into 1-inch cubes.
  • In a wide frying pan, heat oil over medium-high heat; add meat a few pieces at a time and cook until lightly brown. Push to sides of pan.
  • Add onion, garlic, chili powder, cumin, and oregano; cook until onion is limp.
  • Stir in water, sugar, salt, and tomato paste; simmer, covered, until pork is fork tender (about 1 hour).
  • Skim off fat and discard.
  • Stir in cream and cook, stirring, until mixture boils.
  • Turn into a serving dish and garnish with pumpkin seeds.
  • To serve, fill warm tortillas with meat and garnish with avocado, tomato, and sour cream. Offer lime to squeeze over servings.

3/4 pound pork chop suey meat
1 teaspoon canola oil
1 medium onion, chopped
1 garlic clove, minced
1-1/2 to 2 teaspoons chili powder
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
2/3 cup water
1 tablespoon tomato paste
1/2 teaspoon sugar
1/4 teaspoon salt
1/4 cup heavy whipping cream

Steps:

  • In a large skillet, brown pork in oil. Remove and keep warm. In the same skillet, saute the onion, garlic, chili powder, oregano and cumin for 2-3 minutes or until onion is tender., Stir in the pork, water, tomato paste, sugar and salt. Bring to a boil; cover and simmer for 18-20 minutes or until pork is tender. Stir in the cream; bring to a boil, stirring constantly.

3 pounds pork butt, cubed (with fat)
2 teaspoons salt
1 teaspoon black pepper
1 teaspoon lemon pepper
1/4 teaspoon ground oregano
4 cloves garlic, minced
3 cups Salsa Verde, recipe follows
1/2 cup fresh cilantro, chopped
1/2 teaspoon ground cumin
2 small cans green chiles, minced
1 large yellow onion, chopped
12 tomatillos, husks removed
4 cloves garlic
2 jalapenos, stemmed
1 serrano pepper, stemmed
1 small yellow onion, chopped
1/4 cup fresh cilantro, finely chopped
1 teaspoon salt

Steps:

  • In a large skillet, add the pork butt, salt, black pepper, lemon pepper, oregano and garlic and cook for 10 minutes. Add the Salsa Verde, cilantro, cumin, green chiles and onions and cook for another 5 minutes. Transfer to a slow cooker, cover and cook on high for 30 minutes. Turn the heat down to low and cook for 3 to 3 1/2 hours.
  • In a saucepan, boil the tomatillos, garlic, jalapenos, serrano and half of the onions in 2 cups water until the mixture floats to the top of the saucepan, about 30 minutes. Strain out the pulp and reserve the liquid.
  • In a food processor, blend the pulp with the remaining onions, the cilantro, salt and 3/4 cup of the reserved liquid.

2 carrots, diced fine
1 tablespoon parsley, chopped

1 1/2 cups red wine
1/4 cup butter

Steps:

  • Brown pork on all side in bacon fat. Place pork in narrow casserole dish.
  • Using skillet pork was browned in, heat remaining ingredients except mushrooms.
  • Pour over pork roast.
  • Bake at 325° 1 1/2 hours, adding mushrooms to casserole dish the last half hour.

This is a basic red chile sauce. I usually make this to add into stewed meat recipes for enchiladas or tamales and also as an enchilada sauce.

8 dried New Mexico chiles (stems removed)
1 roma tomato
1/4 white onion
2 garlic cloves
1 teaspoon salt

Steps:

  • Place all ingredients into a sauce pan except for salt. Cover the chiles with water and bring to a boil. Cover and continue to boil for 15 minutes.
  • Drain the water and add the ingredients including the salt to the blender. Add in 1/2 cup fresh water and blend on high for 5 minutes.
  • Add 1 tbsp oil into the empty sauce pan you used to boil the chiles. Pour in the red chile and cook on medium heat for 10 minutes stirring occasionally and adjusting salt to taste.

Chairman Mao's nephew told the author that the people of Mao's home village, Shaoshan, recommend red-braised pork as a health food: "Men eat it to build their brains and ladies to make themselves more beautiful" and this is Mao Anping's recipe. The recipe below gets its lovely reddish gloss from caramelized sugar, but you can also substitute dark soy sauce. Traditional variations also can include stir-frying the finished pork recipe with water chestnuts, garlic cloves, mushrooms or fried tofu.

1 lb lean pork (the recipe calls for pork belly but this is a lighter version)
1 tablespoon peanut oil
2 tablespoons white sugar
1 tablespoon shaoxing wine or 1 tablespoon sherry wine
3/4 inch piece fresh ginger, skin left on and sliced
1 star anise
2 dried red chilies
1 cinnamon stick (or 1 piece of cassia bark)
light soy sauce, to taste
salt, to taste
sugar, to taste
scallion, to garnish (green parts only)

Steps:

  • Plunge the pork into a pan of boiling water and simmer for 3-4 minutes until partially cooked; remove and, when cool enough to handle, cut in bite-sized chunks.
  • Heat the oil and sugar in a wok over low heat until the sugar melts, then raise the heat and stir until the melted sugar turns a rich caramel brown; add the pork and splash in the wine.
  • Add enough water just to cover the pork, along with the ginger, star anise, chilies and cinnamon stick. Bring to a boil, then turn down the heat and simmer for 40-50 minutes.
  • Toward the end of the cooking time, turn up the heat to reduce the sauce, and season with soy sauce, salt and a little sugar to taste; add the scallion greens just before serving.
