SHEET PAN SWEET AND SOUR CHICKEN

Sheet Pan Sweet and Sour Chicken image

Inspired by the flavors of our favorite Asian takeout, here's a recipe that uses canned pineapple tidbits, with the usual veggies. In order to make it sheet-pan friendly, the chicken is not breaded or fried. Add as much of the delicious sauce as you like, and if there is any left, store the sauce in the fridge in a sealed container, up to one week. It's also a great dipping sauce for Asian-style appetizers. Serve over hot steamed rice.

Provided by Bibi

Categories     World Cuisine Recipes     Asian

Time 55m

Yield 4

Number Of Ingredients 17

2 (8 ounce) cans pineapple tidbits in juice
1 red bell pepper, seeded and cut into 1-inch pieces
1 green bell pepper, seeded and cut into 1-inch pieces
1 carrot, peeled and sliced diagonally
½ red onion, cut into 1-inch pieces
3 tablespoons avocado oil
salt and ground black pepper to taste
1 ½ pounds skinless, boneless chicken breast, cut into 1-inch pieces
water as needed
2 tablespoons cornstarch
½ cup light brown sugar
⅓ cup rice vinegar
3 tablespoons ketchup
3 tablespoons soy sauce
1 tablespoon chile-garlic sauce
1 tablespoon ginger-garlic paste
⅛ teaspoon ground white pepper

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Drain pineapple tidbits and place juice into a 1-cup liquid measure. Place drained pineapple in a large mixing bowl; set aside.
  • Add bell peppers, carrot, and onion to the pineapple tidbits. Pour 2 tablespoons avocado oil over top and sprinkle with salt and pepper. Stir until coated with oil and seasoning, then spread in a single layer on a sheet pan. Place chicken into the same bowl, drizzle with remaining 1 tablespoon oil, and season with salt and pepper. Toss to coat and nestle chicken pieces on the sheet pan between the pineapple and vegetable pieces.
  • Bake in the preheated oven until vegetables are tender and chicken is cooked through, about 25 minutes.
  • Meanwhile, add enough water to the reserved pineapple juice to make 1 cup liquid. Transfer 3 tablespoons of the liquid to a small bowl and add cornstarch. Stir with a fork or whisk until smooth.
  • Pour remaining liquid into a saucepan with brown sugar, rice vinegar, ketchup, soy sauce, chile-garlic sauce, ginger-garlic paste, and white pepper. Bring to a boil, stirring occasionally, over medium-high heat. Slowly add cornstarch mixture, whisking briskly. Return to a boil and allow to thicken, whisking constantly, about 1 minute.
  • Drizzle chicken, pineapple, and vegetables with sauce to serve.

Time 1h20m

Yield 8

Number Of Ingredients 24

3 large egg yolks
1 tablespoon soy sauce
1 tablespoon cornstarch
1 teaspoon salt
ground black pepper to taste
3 pounds skinless, boneless chicken breast, cut into bite-sized pieces
3 large egg whites
1 cup water
1 cup cornstarch
1 cup all-purpose flour
1 cup hot water
¼ cup white sugar
3 tablespoons sweet rice wine
2 tablespoons vinegar
1 tablespoon cornstarch
1 tablespoon soy sauce
1 teaspoon chicken bouillon granules
¼ teaspoon salt
1 tablespoon vegetable oil, or as needed
1 medium bell pepper, chopped
2 cloves garlic, minced
1 (8 ounce) can pineapple chunks, drained
2 tablespoons sesame oil
1 teaspoon sesame seeds

Steps:

  • Whisk egg yolks, soy sauce, cornstarch, salt, and pepper for marinade together in a bowl and pour into a resealable plastic bag. Add chicken, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for at least 20 minutes.
  • Beat egg whites for coating in a bowl until foamy. Add water, then cornstarch, then flour, mixing completely after each addition.
  • Combine hot water, sugar, rice wine, vinegar, cornstarch, soy sauce, bouillon granules, and salt for glaze in a bowl.
  • Remove chicken from the refrigerator. Dip each piece in coating.
  • Heat vegetable oil in a wok over medium-high heat until hot. Add chicken and cook in small batches until crispy, about 5 minutes per batch. Remove chicken to a plate and drain oil from the wok.
  • Add bell pepper and garlic to the wok and stir-fry until tender, about 3 minutes. Remove from the wok onto a separate dish.
  • Add pineapple chunks to the wok. Stir the reserved glaze and pour over pineapple. Simmer until sauce thickens, 2 to 3 minutes.
  • Add chicken and bell pepper mixture back to the wok; toss everything together. Drizzle sesame oil over top, stir, and sprinkle with sesame seeds.

SWEET-AND-SOUR CHICKEN-NOODLE BOWL

Sweet-and-Sour Chicken-Noodle Bowl image

In this refreshing noodle bowl dinner, crunchy mix-ins like carrots, cabbage, and cucumbers are tossed with a sweet and tangy mixture of lime juice, sweet chili sauce, and ginger. Thin rice noodles and leftover sliced roast chicken, or meat from a rotisserie chicken, make this a filling meal that's perfect for a warm evening on the patio or packed up for a picnic.

Time 30m

Number Of Ingredients 11

1 teaspoon grated lime zest, plus 3 tablespoons fresh juice (from 1 to 2 limes)
2 tablespoons sweet chili sauce, such as Mae Ploy
2 teaspoons finely grated fresh ginger
1/4 cup coarsely chopped fresh cilantro, plus whole leaves for serving
Kosher salt
1/3 cup vegetable oil
1 cup each shredded cabbage and carrots, or 2 cups store-bought coleslaw mix
2 mini cucumbers, thinly sliced (1 cup)
10 ounces rice vermicelli
1 1/2 cups sliced cooked chicken (preferably breast meat)
Chopped roasted peanuts and sliced red or green serrano chiles, for serving

  • Meanwhile, cook noodles in boiling water until al dente (about 4 minutes); drain. Rinse under cold water, then drain again. Toss with 1/4 cup dressing. Serve noodles topped with cabbage salad and chicken. Drizzle with more dressing. Sprinkle with peanuts, chiles, and cilantro leaves.

SWEET AND SOUR CHICKEN

Sweet and Sour Chicken image

This chicken reminds me of sesame chicken from the local Chinese restaurant, only made with a sweet and sour sauce instead of sesame sauce. You may want to double the sauce for extra sauce for dipping or to put on rice.

Provided by Ransomed by Fire

Categories     Chicken

Time 1h5m

Yield 3 chicken breasts, 3 serving(s)

Number Of Ingredients 15

3 boneless chicken breasts
1 egg
3 tablespoons milk
cornstarch
salt
pepper
msg (optional)
oil (for frying)
1/4 cup brown sugar
2 teaspoons ketchup
1 teaspoon soy sauce
1/4 cup white vinegar
1/3 cup water
2 teaspoons cornstarch (optional)
2 teaspoons water (optional)

Steps:

  • Preheat oven to 350°F.
  • Cut chicken breasts into strips or chunks. (Chunks will make the chicken more saucy.).
  • Beat egg and milk in a bowl big enough to dip chicken pieces.
  • Mix cornstarch, salt, pepper, MSG, and/or any desired seasonings in a bowl to coat chicken.
  • Dip chicken pieces in egg mixture and coat with flour mixture.
  • Deep fry chicken until breading is crisp. (Do not worry if insides are still pink.).
  • Mix sauce ingredients in a medium-sized baking dish. (Double sauce ingredients if you want extra sauce for dipping.).
  • Place chicken in baking dish with sauce and bake for about 45 minutes, turning occasionally.
  • For dipping sauce, mix 2 teaspoons water and 2 teaspoons cornstarch and add to sauce. Heat in a saucepan, stirring, until sauce is thickened.

BEST EVER SWEET & SOUR CHICKEN

Best Ever Sweet & Sour Chicken image

I tried some recipes for making sweet & sour sauce for chicken balls, while they were pretty good I quickly realized with a few tweaks and additions it could make the ultimate sweet & sour!! So I made some up, fried some chicken and then threw the chicken in the sauce.... WOW!!! What a great taste!! I would like to thank lorac for the inspiration on the sauce, http://www.recipezaar.com/26230

Categories     Sauces

Time 35m

Yield 2-4 serving(s)

Number Of Ingredients 14

1/4 cup sugar
1/4 cup vinegar
1/4 cup ketchup
1/4 cup water
1/2 cup pineapple juice
1 tablespoon cornstarch
1 tablespoon flour
3 tablespoons oil
1 teaspoon paprika
1 teaspoon cayenne powder (optional)
1 teaspoon garlic powder
1/2 teaspoon salt
2 tablespoons green peppers, diced
2 -3 chicken breasts

Steps:

  • Add the oil, sugar, and vinegar to a small saucepan set on 1/4 full heat stirring until sugar dissolves in vinegar, then add the pineapple juice.
  • Add the paprika and other spices followed by the ketchup, then the water.
  • Turn up the heat a bit and stir frequently almost bringing to a boil for 2-3 minutes.
  • Add cornstarch and flour, use a whisk to make sure no clumps form. Toss in the green peppers.
  • Keep on low heat stirring occasionally, cook your chicken however you like it, I fry mine. If your sauce starts getting a bit to thick don't worry just add a small amount of water and stir.
  • When you're finished cooking your chicken cut it up and toss it in the sauce which should now be almost ready. Cook it in the sauce for 4-7 minutes.
  • Remove from heat and enjoy! For best results eat it all the day you make it.
