SWEET AND SOUR CUCUMBERS
Steps:
- In medium saucepan over high heat, combine the vinegar, salt, sugar, the crushed garlic clove and 1 serrano pepper. Bring to a boil, then turn the heat off and allow to cool.
- Put the cucumbers and red onions in a large, nonmetallic serving bowl with remaining serrano pepper and the thinly sliced garlic and toss to combine.
- When the vinegar mixture has cooled, strain it into a small bowl and pour it over the vegetables. Stir to coat the vegetables with the vinegar mixture. Cover and refrigerate for at least 1 hour before serving.

Sweet, slightly sour, super crunchy with condensed cucumber flavor, this is exactly what this sweet and sour cucumber is. Really simple and easy to make. It's not really a pickle but will last in the fridge for 2 weeks.

Steps:
- Clean and slice the cucumbers into 3mm rounds
- Add 1tsp of salt and mix well, let sit for 10 minutes
- Drain and squeeze out as much moisture as you can (This step makes the cucumbers super crunchy and condenses the flavor)The cucumbers should look much smaller and almost wrinkly.
- Move the cucumbers into a pint jar, add 2TBsp of sugar and 2 TBsp of vinegar, shake around to mix and keep in the fridge for 2 hours before serving
SWEET AND SOUR CUCUMBER SALAD
Steps:
- Wrap sliced cucumbers in paper towels to absorb excess liquid and refrigerate.
- In a bowl combine lemon juice, vinegar, salt and ginger. Add sugar to taste. Add wasabi and stir until sugar and wasabi dissolve in mixture. Transfer cucumber slices to a bowl. Pour dressing over cucumbers and toss to coat.

SWEET AND SOUR CUCUMBER SLICES
I love these cucumbers. This recipe comes from 'A Spoonful of Ginger' by Nina Simonds who says that cucumbers eaten during the summer dissipate heat. They also are considered to have diuretic and laxative effects. I can't really attest to all that but I can tell you that these slices are really tasty.

Steps:
- Trim the ends of the cucumbers and slice them lengthwise in half, then run the tines of a fork several times down the length to creat a slight decoration on the skin.
- Scoop out the seeds with a spoon and cut the cucumber halves into 3-inch sections; cut the sections, along the length, into almost paper thin slices and place in a bowl.
- Mix the remaining ingredients; add to the cucumbers and toss lightly to coat the slices.
- Cover and refrigerate for 30 minutes; serve cold.

SWEET & SPICY CUCUMBERS
After a shopping trip to Costco I had an over abundance of English cucumbers and red bell peppers so I came up with this recipe. I love things that are sweet, tangy, and spicy so it seemed like the natural thing to make. This has become a favorite of mine and a big hit among friends & family!

Steps:
- In a large bowl combine sliced cucumber + 2 tablespoons of salt and set aside.
- Slice onion and bell pepper and place in a separate bowl. To this bowl add the ingredients for the dressing and stir to combine.
- Rinse the cucumber under cold water and drain.
- Combine cucumbers, onion, pepper and dressing and stir to coat veggies then store in an air-tight container in the refrigerator for up to 2 weeks.
