GARLIC AND HERB TOMATOES

3 tablespoons good olive oil
2 teaspoons minced garlic (2 cloves)
2 pints cherry tomatoes or grape tomatoes
2 tablespoons chopped fresh basil, plus more for garnish
2 tablespoons chopped fresh flat-leaf parsley, plus more for garnish
2 teaspoons chopped fresh thyme leaves
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Heat the olive oil in a saute pan large enough to hold all the tomatoes in one layer. Add the garlic to the oil and cook over medium heat for 30 seconds. Add the tomatoes, basil, parsley, thyme, salt, and pepper. Reduce the heat to low and cook for 5 to 7 minutes, tossing occasionally, until the tomatoes begin to loose their firm round shape. Sprinkle with a little fresh chopped basil and parsley and serve hot or at room temperature.

Steps:

  • Put tomatoes in serving bowl.
  • In saucepan, saute garlic on low for 1 - 2 minutes or until garlic starts to turn golden. Drizzle oil over tomatoes and season with salt and pepper.
  • Marinate for 30 minutes.

1 large leaf lettuce (large leaves torn into smaller pieces)
4 large ripe Italian tomatoes ((or 6 small), about 500 g in total, sliced)
2 cups cherry tomatoes (halved)
16 fresh basil leaves
2 tbsp toasted pumpkin seeds
2 tbsp toasted sunflower seeds
1 small garlic clove (finely chopped)
1 1/2 tsp red wine vinegar
2 tbsp extra virgin olive oil
pepper (to taste)

Steps:

  • To make the garlic vinaigrette, whisk together the garlic, vinegar, oil and pepper in a small mixing bowl.
  • Place a layer of lettuce leaves on a serving platter or on 4 plates and arrange the sliced tomatoes and then the cherry tomatoes on top. Drizzle over the vinaigrette.
  • Scatter the basil leaves and the pumpkin and sunflower seeds over the tomatoes, and serve at once.

1 bunch fresh cilantro, divided
1/2 cup KRAFT Zesty Italian Dressing
2 cloves garlic
10 cherry tomatoes, cut in half
4 tomatillos, each cut into 8 wedges
1 small onion, cut lengthwise in half, then crosswise into thin slices
2 large tomatoes, cut into 1/2-inch-thick slices
1 Tbsp. chopped fresh basil
2 Tbsp. KRAFT Grated Parmesan Cheese

Steps:

  • Chop enough cilantro to measure 1 Tbsp.; reserve for later use. Blend dressing, garlic and remaining cilantro in blender until smooth.
  • Combine cherry tomatoes, tomatillos and onions in medium bowl. Add 1/2 cup dressing mixture; mix lightly.
  • Arrange tomato slices on large platter; drizzle with remaining dressing mixture. Top with basil, cherry tomato mixture, cheese and reserved chopped cilantro.

2 pieces ginger, peeled (this is subjective. The pieces I cut are about 1/4" thick each)
1 clove garlic
1/2 teaspoon sugar (optional)
salt, to taste
1 tablespoon vinegar, to taste or 2 tablespoons lemon juice
1/4 cup olive oil
2 large ripe tomatoes, chopped (I often use cherry tomatoes)
1/2 onion, chopped
3 -4 sprigs fresh coriander leaves, finely chopped

Steps:

  • Crush ginger using mortar and pestle to make fine paste.
  • Add garlic; crush with ginger.
  • Remove to small bowl; whisk in salt, sugar, vinegar and oil.
  • In bowl, mix tomatoes, onion and coriander.
  • Add salad dressing; toss lightly to coat.
  • Note: I often make this with a couple of cupfuls of cherry tomatoes, halving the larger ones.
