Sweet and Savory Cheesy Bacon Wrapped Puff Pastry Twists image

The holiday appetizer everyone asks for...year after year...quick, easy, and delicious!

Time 1h

Number Of Ingredients 8

1/2 cup light or dark brown sugar
1-2 tablespoons chopped fresh rosemary, using to your taste
kosher salt and black pepper.
2 sheets (1 box) frozen puff pastry, thawed
1 egg, beaten
1 cup shredded sharp cheddar cheese ((or a mix of your favorite cheeses))
1-2 teaspoons cayenne pepper ((optional))
24 strips thin cut bacon, or 12 sticks of thicker bacon, halved

Steps:

  • 1. Preheat oven to 375° F. Line 2 baking sheets with foil and place a wire rack on top. Lightly rub each rack with olive oil. 2. In a shallow bowl, combine the brown sugar, rosemary, and a pinch each of salt and pepper. 3. Place both sheets of pastry on a lightly floured counter. Brush the surface of each with a beaten egg. Evenly sprinkle about 1/2 cup of cheese over each sheet, then sprinkle with cayenne. Dust a rolling pin lightly with flour and roll the rolling pin over the cheese, gently pressing the cheese into the pastry. Fold the pastry in half, then cut each into 12 (1/2 inch) wide strips. Pinch the ends to seal, then gently twist each strip several times to enclose the cheese. It's ok if some of the cheese falls out. 4. Take a piece of bacon and wrap it around the twisted pastry. Repeat with the remaining twists. Dredge the twist through the brown sugar mix, tossing to coat, placing the twist on the prepared baking sheet as you go. 5. Bake 30 to 50 minutes, rotating the pans halfway through. My bacon took 50 minutes to cook, start checking the twists at around 30 minutes. Serve warm or at room temperature...though I love them warm!

1 pound slab bacon, cut into 1-by-1/2-inch pieces
1/4 cup pure maple syrup
1/4 teaspoon coarsely ground black pepper
1/8 teaspoon cayenne pepper

Steps:

  • Place the bacon in an even layer in a large skillet. Cook over medium-low heat, stirring often with a rubber spatula, until the bacon is light golden brown, about 20 minutes.
  • Meanwhile, combine the maple syrup, black pepper and cayenne in a small bowl.
  • Pour off some of the rendered bacon fat, leaving just a small amount. Return the skillet to the heat and pour the maple syrup mixture over the bacon. Braise gently until the syrup thickens and glazes the bacon and the bacon is deep golden brown, about 15 minutes. Serve warm.

Steps:

  • Preheat oven to 350°F.
  • Stir together brown sugar, cayenne, and black pepper in a small bowl.
  • Arrange bacon slices in l layer on a large broiler pan and bake in middle of oven (or upper third of oven if baking with eggs) 20 minutes. Turn slices over and sprinkle evenly with spiced sugar. Continue baking until bacon is crisp and brown, 15 to 20 minutes more, then transfer to paper towels to drain.

1 ½ teaspoons prepared yellow mustard
1 (1 pound) loaf sliced white bread
1 pound maple-flavored bacon, strips cut in half crosswise
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with foil, and place a baking rack on the foil-lined sheet.
  • In a bowl, mix together the condensed milk and mustard until thoroughly combined. Cut the crusts off the bread and discard crusts or save for another use. Roll a slice of bread out flat with a rolling pin. Place 2 pieces of bacon down onto a work surface, side by side, and lay the bread slice on top of the bacon. Spread about 1 tablespoon of the milk-mustard mixture over the bread. Sprinkle about 1 tablespoon of Cheddar cheese in a line down the center of the bread.
  • Roll the bacon and bread into a firm roll, working from the short ends of the bacon so they wrap horizontally around the roll. Secure the roll with a toothpick. Repeat for remaining ingredients. Place the bacon rolls onto the baking rack over the pan.
  • Bake in the preheated oven until the bacon is crisp and brown, about 20 minutes, turning the rolls over once or twice during baking to crisp the bacon uniformly.
