Pan-Roasted Salmon With Jalapeño image

Here is a simple, easy preparation for salmon that allows wild-caught fish, especially, to shine. The foaming butter amplifies the richness of the flesh, while the jalapeños keep it in check, as soy sauce does to the fattiest sushi. Some prefer to reverse the order of the cooking, so that the fish is served skin-side up, but I find that cooking it this way allows the butter to do its job more effectively and delivers a more beautiful plate of food as well. (Most of it is left in the pan when you're done.) Top with chopped fresh herbs, and serve with roasted new potatoes.

2 5-to-6-ounce fillets of salmon, ideally wild-caught, 1/2-to-1-inch thick
Kosher salt and ground black pepper
2 tablespoons neutral oil, like grapeseed or canola
2 tablespoons unsalted butter
1 medium jalapeño pepper, seeded and diced fine, approximately 2 tablespoons (or to taste)
1-2 tablespoons chopped cilantro, mint or flat-leaf parsley, or a combination of all three

Steps:

  • Pat fillets dry with a paper towel. Season on both sides with salt and pepper.
  • Heat a large, heavy sauté pan or cast-iron skillet over high heat. When the pan is hot, add the oil, and swirl it around. When the oil begins to shimmer, place the fillets in the pan, flesh side down, and allow to sear for about a minute, until the salmon has just started to pick up some color and releases easily from the pan.
  • Use a spatula to turn the fillets onto their skin side, lower heat to medium and let them sizzle until the fish is caramelized around its bottom edges, approximately 2 to 3 minutes. (You may wish to use your spatula to press down on the fillets for the first 10 or 15 seconds to keep the skin from curling in the heat.)
  • Turn heat to low, and add butter and diced jalapeño to the far side of the pan, then use the handle to tilt the pan away from you. Use a spoon to baste the fish with the sizzling butter and jalapeño. Continue basting, quickly and repeatedly, until the fish is golden all over and cooked through, 45 to 90 seconds more, depending on the thickness of the salmon. Remove fillets from the pan, leaving the bulk of the butter and oil in it, and serve immediately, garnished with the chopped fresh herbs.

Steps:

  • Preheat an outdoor grill or grill pan on medium high.
  • Mix together the hot sauce, brown sugar, paprika and cayenne in a small bowl. Transfer 1 tablespoon of the mixture to a large bowl and whisk in the mayonnaise; set aside the rest of the sauce. Add the chives, celery and onions to the bowl with the mayonnaise and toss well.
  • Sprinkle the salmon with salt and pepper. Brush the grill grate lightly with oil. Lay the salmon on the grill, skin-side up, and cook until distinct grill marks appear and the salmon releases easily from the grate, 2 to 3 minutes. Turn and brush the fish with some of the reserved sauce. Continue to cook the fish, brushing the pieces periodically with the sauce, until the salmon fillets are glazed and just cooked through, 13 to 15 minutes more.
  • Transfer the fillets to individual plates and serve with the celery slaw.

4 salmon fillets, skinned (2 inches wide)
1/2 cup jalapeno jelly
2 scallions, rough cut
1/2 cup cilantro, stems okay
2 garlic cloves, minced
1 teaspoon lime zest
2 tablespoons butter
aluminum foil, folded into a little tray

Steps:

  • Put the jelly, scallions, cilantro, garlic, and lime zest into a food processor. Pulse the processor until the mixture is finely pureed.
  • Put in a small saucepan over medium heat, bubbling away for 2-3 minutes. Add to the butter and mix while it all melts into the sauce. Remove from heat and allow to cool.
  • Put the salmon face-down (presentation side) onto the foil. You are putting it face-down because during cooking, you will turn the fish over one time only, therefore ending-up with the pretty side face-up so you can re-glaze at the end.
  • Now brush the less-attractive bottom side (which is now face-up) with the sauce.
  • Put the aluminum foil trays with your salmon onto the grill. Cook for 6-8 minutes. Carefully flip the salmon fillets over with tongs.
  • With a spoon, put a thick layer of the glaze on top and let the salmon finish cooking.
  • Plate the salmon. Add a little more glaze on top and garnish it with lemon and cilantro.

2 (4 ounce) skinless salmon fillets
2 1/2 tablespoons fresh ginger, peeled, minced and crushed
1 fresh Thai red chili peppers (or more to taste) or 1 jalapeno chile 1/2 cayenne, chopped (or more to taste)
2 tablespoons garlic, peeled and minced
2 tablespoons sugar
2 tablespoons fresh lime juice
2 tablespoons asian fish sauce or 2 tablespoons asian oyster sauce
1 tablespoon asian chili-garlic sauce (Sriracha)
4 tablespoons water
1 1/2 tablespoons vegetable oil

Steps:

  • Grind together the ginger, chile pepper, garlic and sugar in a mortar and pestle to get a coarse paste. Transfer paste to a bowl and add fish sauce, lime juice, Sriracha and water; mix to combine. Season with salt; set aside. (This may be done in a small food processor bowl or blender.) This sauce will be divided.
  • Dry with paper toweling and season salmon with salt. Pour over the fillets 4 tablespoons sauce, turning to coat. Set aside the remaining sauce.
  • Heat oil in a non-stick skillet. When hot, add the salmon fillets and the sauce used for coating; cook over moderate heat. (Don't add more otherwise you will 'boil' the fillets instead of glazing.) Turn fillets over so that both sides are cooked, scooping glaze over top. Continue to cook until it carmelizes, coating the salmon. Remove the fillets then immediately add to the hot pan the reserved sauce mixture, simmering until it becomes golden and thick. Pour over reserved fillets.
  • Serve with white or jasmine rice.

1 tablespoon Dijon mustard

4 salmon fillets, 8 oz. each
2 tablespoons canola oil
1 1/2 cups dried black beans
1 small red onion, peeled and coarsely chopped
2 garlic cloves
2 chipotle chiles in adobo, chopped
1 teaspoon ground cumin

1/2 cup sour cream or 1/2 cup creme fraiche

Steps:

  • Salmon: Whisk together honey, ancho chili powder and mustard in a small bowl and season with salt and pepper.
  • Preheat nonstick saute pan over high heat. Brush salmon with oil on both sides and season with salt and pepper.
  • Place salmon in the pan, skin-side down and cook until golden brown and a crust has formed, about 2 to 3 minutes. Brush the top of the salmon with some of the ancho glaze, flip over, and continue cooking about 2 minutes longer, until a crust has formed and the salmon is cooked to medium.
  • Remove salmon from the pan, glazed-side up and brush with some more of the ancho glaze. Spoon some of the Spicy Black Bean Sauce onto a plate, drizzle with some of the Roasted Jalapeno Crema and set the salmon in the center, glazed-side up.
  • Black Bean Sauce: Combine the beans, onion, garlic, chipotles and cumin in a medium saucepan; add cold water to cover by an inch. Bring to a boil, reduce heat and simmer until beans are tender. Add more water if the beans appear dry.
  • Using a slotted spoon, transfer mixture to a food processor. Add 1 cup of the cooking liquid and process until almost smooth; sauce should be a little chunky. Season with salt.
  • Roasted Jalapeno Crema: Place crema and jalapenos in a food processor and process until smooth. Season with salt and pepper. Refrigerate for 30 minutes before serving.

  • To marinate the fish, combine the oil, ginger, garlic, shallots, fish sauce, soy sauce, and sugar in a medium bowl; stir until sugar is dissolved and everything is mixed well.
  • Place the salmon fillets in the bowl and turn to coat with the marinade (or put the salmon in a zip lock bag, add the marinade, squeeze out air, and seal).

  • To cook the fish, build a hot charcoal fire or preheat a gas grill.

6 garlic cloves , unpeeled
1 small onion , cut into thick slices
1 ancho chilli or large red dried chilli, deseeded and trimmed
4 tbsp soft brown sugar
4 tbsp cider vinegar
4 x 150g skinless salmon fillets
1 lime , zested, then cut into wedges
200g crème fraîche or soured cream
chopped coriander , to serve (optional)

Steps:

  • Blacken the whole garlic and the onion slices on all sides in a large, dry non-stick frying pan. Remove, cool briefly, then peel the garlic cloves. Soak the ancho chilli in boiling water for 15 mins, drain, then place in a blender with the sugar, cider vinegar, garlic, onion and some salt and pepper. Whizz to a smooth sauce.
  • Heat the grill. Brush each salmon fillet liberally with the sauce and save any remaining. Grill for 8 mins. Meanwhile, mix the lime zest with the crème fraîche. Serve the fish with extra chilli sauce, a dollop of the crème fraîche and lime wedges for squeezing over. Sprinkle with coriander, if you like, and serve with green beans or rice and a salad.
