6 pieces peppered bacon, chopped
4 large eggs
2 sweet potatoes, peeled and diced into 1/2-inch pieces
4 parsnips, peeled and diced into 1/2-inch pieces
2 cups Brussels sprouts, quartered
1 medium red onion, chopped
3 cloves garlic, minced
Kosher salt and freshly ground black pepper
1 Roma tomato, diced
1 cup crumbled goat cheese
1/4 cup fresh parsley leaves
8 leaves basil, chiffonade

Steps:

  • Line a plate with a paper towel and set aside. Heat a large nonstick skillet over medium-high heat. Fry the bacon, stirring occasionally, until crisp, 4 to 5 minutes. Remove the bacon to the lined plate with a slotted spoon or spatula.
  • Remove all but 2 tablespoons of grease from the skillet, reserving the remaining grease. Fry the eggs in the bacon fat for 2 to 3 minutes. Remove to a plate and cover with a paper towel to keep warm.
  • Add 1 more tablespoon bacon grease and turn up the heat to high. Add the sweet potatoes, parsnips, Brussels sprouts, onion, garlic and some salt and pepper, then cook, stirring occasionally, for 3 to 4 minutes. Deglaze the pan with 1/4 cup of water, then put the lid on and steam for 1 to 2 minutes.
  • Place fried eggs on top of hash and sprinkle over the bacon, diced tomatoes, goat cheese, parsley and basil.

1 sweet potato
1 tablespoon olive oil
½ red onion
1 clove garlic
2 bell peppers
1 jalapeño, optional
2 green onions
1 tablespoon fresh rosemary
4 eggs

Steps:

  • Dice the sweet potato
  • Heat the olive oil in a large skillet over medium-high heat. Add the diced sweet potato, cover, and cook, stirring occasionally, for about 10 minutes, or until it begins to soften.
  • While the sweet potato cooks, dice the red onion and mince the garlic. Add to the skillet.
  • Dice and seed the bell peppers and add to the skillet.
  • Dice the jalapeño, if using, and add.
  • Chop the green onion and rosemary, if using fresh, and add to skillet. Cover and cook for about 5 minutes, or until the sweet potato is tender.
  • Create 4 wells in the vegetable mixture, not too close to the edges of the skillet, but far enough apart that they aren't touching. Crack 1 egg into each well. Cover and cook for 3-5 minutes more, or the eggs are cooked to your liking.
  • Breakfast is served!

3 russet potatoes, cut into bite-size pieces
1 red bell pepper, diced
1 small white onion, diced
olive oil, to taste
1 tablespoon dried rosemary
1 tablespoon garlic, minced
1 teaspoon paprika
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Preheat oven to 500˚F (260˚C).
  • Dice potato, red bell pepper, and onion. Place on a baking sheet.
  • Drizzle olive oil over everything and season with rosemary, garlic, paprika, salt, and pepper. Mix until evenly coated and spread into an even layer.
  • Bake for 30 minutes, stirring every 10-15 minutes.
  • Serve with your favorite breakfast sides.

3 cups sweet potato, diced, about 2 large potatoes
½ yellow onion, diced
1 red bell pepper, sliced
salt, to taste
pepper, to taste
½ tablespoon paprika
1 teaspoon cumin
2 cups spinach
15 oz black beans, 1 can

Steps:

  • Heat olive oil on medium heat in a 4-quart chicken fryer. Add sweet potatoes, onion, pepper, salt, pepper, paprika, and cumin, and stir. Cook for 10 minutes, occasionally stirring.
  • Add spinach and cook for an additional five minutes.
  • Lastly, add the black beans and stir until all ingredients are well-blended.
  • Serve with toppings of your choice. We topped our hash with an egg and avocado slices.

1 1/2 lbs sweet potatoes, scrubbed and cut in 3/4-inch cubes (about 2 medium)
black beans, drained and rinsed
1 large onion, peeled and diced
3/4 lb loose sausage, crumbled into large pieces
3 tablespoons olive oil, plus additional for serving
1 1/4 teaspoons smoked paprika
1/2 teaspoon red pepper flakes (to taste)
kosher salt & freshly ground black pepper
2 packed and heaping cups Baby Spinach
6 large eggs
chopped cilantro, for serving

Steps:

  • Line a baking sheet with parchment paper. Place sweet potatoes, black beans, onions, and sausage on pan. Drizzle with olive oil, smoked paprika, and red pepper flakes, and season generously with salt and pepper. Toss to coat.
  • Transfer to oven and bake, stirring three times, until sausage and sweet potatoes are just turning golden, about 25-30 minutes. Remove pan from oven, add spinach and stir to combine.
  • Make 6 wells on the sheet pan for eggs to bake. Crack an egg into each well, season with salt and pepper, and return to the oven. Bake just until whites are set and yolks are still runny, about 7 minutes.
  • Divide eggs and hash among serving plates. Drizzle each serving with additional olive oil, top with cilantro, and serve.
