SWEET & SALTY CINNAMON SNACK MIX
Steps:
- Heat oven to 250°F. Spray large roaster pan with no-stick cooking spray.
- Place cereals, peanuts and pretzels into pan.
- Combine Cinnamon Sugar Butter Spread, brown sugar and corn syrup in 3-quart saucepan. Cook over medium heat 8-10 minutes or until mixture comes to a boil. Boil 1 minute. Remove from heat; stir in baking soda. Pour over cereal mixture in pan; stir to coat.
- Bake, stirring every 15 minutes, 45-55 minutes or until coating is golden brown and set.
- Cool 10 minutes; stir in candy and fruit. Spread onto waxed paper; cool completely. Store in container with tight-fitting lid.

SWEET AND SALTY CINNAMON NUTS
This is one of my favorite recipes to make when I need to make a snack really quick. I have made these nuts a couple of times and packaged them for Christmas gifts. They also make a good snack on a cold evening. I often make a double batch and use both pecans and walnuts. Salt can be varied depending on how salty you would like them to be. This recipe was originally from a really old Betty Crocker cookbook, but I varied it a little.

Steps:
- Heat oven to 300 degrees.
- Mix sugar, salt and cinnamon. Set aside.
- Place nuts in a bowl and pour the egg white over them. Stir until nuts are coated and sticky.
- Sprinkle cinnamon-sugar mixture over nuts and stir until nuts are completely coated.
- Spread on an ungreased baking sheet.
- Bake 30 minutes.

- Preheat oven to 300 degrees F. Line a baking sheet with parchment paper; set aside. In a small bowl, whisk together egg white and 1 tablespoon water until frothy, about 2 minutes; set aside. In a medium bowl, combine sugars and cinnamon; set aside. In a large bowl, combine almonds, pecans and egg white mixture until well combined. Stir in brown sugar mixture until evenly coated. Spread almond mixture onto prepared baking sheet in an even layer. Place into oven and bake for 25-30 minutes, stirring at halftime. Let cool completely before serving.

- Melt the butter and sugar in a large skillet over medium heat and add the salt. Add the almonds, cashews, peanuts, pecans, chili powder, cinnamon, cumin and cayenne. Cook until the sugar is melted and the nuts are fragrant, 5 to 6 minutes. Add the rosemary and toss. Immediately spread the nut mixture on a parchment-lined baking sheet. Cool completely, and then serve.

- Preheat oven to 325 degrees, usung about 2 tablespoons butter, generously butter a 15x10x1-inch baking pan,set aside.
- In a large bowl stir together the nuts, grandulated sugar, corn syrup, salt, and pepper until well combined; spread in prepared pan.
- Bake for 25 minutes or until golden and bubbly, stirring once or twice; remove from oven; sprinkle generously with raw sugar; toss to coat.
- Transfer mixture to a large piece of foil (Release foil works great), cool completly about 30 minutes; break apart to serve.
- Store nuts in an airtight container at room temperature for up to 2 weeks or in freezer container in freezer up to 3 months.

- Spread nuts on a baking sheet, bake at 350 for 5 - 10 minutes or until they are golden and crunchy.
- In a bowl, mix together all spices and sugar, salt & pepper.
- In large skillet, add nuts with spice mix at medium high heat or until sugar melts and coats nuts. Shake skillet often to make and even coating and cooking.
- Spread oil on baking sheet add the nuts, seperate them if they are sticking together and let cool.
- Serve with your favorite cocktail!

I make this out-of-this-world tasting homemade nut mixture every Christmas season... no matter how much I make, they never last long, I'll be lucky if they even make it to the table.... so my advice to you, is make lots and lots, then hide some for your guests.

- In a skillet, toast nuts slightly, tossing then so they won't burn.
- Remove from skillet.
- Melt butter in the same skillet.
- Stir in the nuts and the 1/2 cup sugar, stirring occasionally, until sugar melts (about 5-10 mins).
- In a large bowl, mix the spices and remaining 3 Tbsp sugar.
- Stir in the nuts.
- Spread on waxed paper; cool about 20 mins.

- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and lightly coat with cooking spray.
- Combine walnut halves, pecan halves, almonds, and cashews in a large bowl. Add salt, black pepper, cumin, and cayenne pepper; toss to coat.

The first time I made this I had a small tub of raw nuts in my cabinet and didn't know what to do with them. My mom gave me the recipe, and after I made it I couldn't stop eating them. I am not a nut person, but I am totally addicted to these coated nuts. They're perfect for parties and festive occasions!

- Preheat oven to 300 degrees F (150 degrees C).
- Place the nuts on a large baking pan and bake in the preheated oven 10 to 12 minutes, taking care they do not burn. Remove from heat and let cool approximately 5 minutes.
- In a small bowl, mix the white sugar, brown sugar, salt, pepper, cumin, curry powder, cloves and cinnamon.
