EASY DEVILED EGGS
After wondering how to make deviled eggs for years, I stumbled across this recipe. It comes from the Durbin Inn, a well-known restaurant in Rushville, Indiana from the 1920s until it closed in the late '70s. - Slice eggs in half lengthwise; remove yolks and set whites aside. In a small bowl, mash yolks with a fork. Add the mayonnaise, sugar, vinegar, mustard and salt; mix well. Stuff or pipe into egg whites. Sprinkle with paprika. Refrigerate until serving.

- For hard-boiled eggs;.
- 1. Place eggs in a single layer in a large saucepan of cold water.
- 2. Cover and bring to a boil.
- 3. Remove from heat and let stand for 15 minutes.
- 4. Place eggs in ice water until cool.
- To assemble deviled eggs:.
- 1. Remove shells and cut each egg in half.
- 2. Remove yolks and mash together in a bowl with a fork.
- 3. Add Miracle Whip, sugar, mustard, salt and pepper to yolks and mix well.
- 4. Spoon filling into each egg half and top with choopped fresh chives.

- Place eggs in a saucepan and cover with water. Bring to a boil, remove from heat, and let eggs stand in hot water for 15 minutes. Remove eggs from hot water and place in a bowl of ice water. Peel.
- Slice eggs in half lengthwise. Remove yolks and transfer to a bowl; mash with a fork or pastry blender until yolks resemble powder. SWEET & SOUR DEVILED EGGS
My mother-in-law made these for our Christmas Eve get-together recently. At first, I thought these would be "just another deviled egg," but they surprised me. They have that traditional deviled egg taste, but with just the right hint of both sweetness and tanginess added. The whole plate disappeared like magic. Even the kids loved them, as they weren't too spicy, nor did they have any "funny chunks" of onions, pickles, etc. They also keep well in the fridge, travel well, and are great to do ahead. I hope you enjoy them as much as our family did.

EASY DEVILED EGGS
I make these a lot for parties and everyone always makes comments on how I make the best deviled eggs. The kids even love to eat them. This is from a 1982 Southern Living cookbook that I have.

- For hard cooked eggs: Put a small pinhole in one end of each egg.
- Place eggs in a pot of water.
- Bring water to a boil.
- When it boils, turn down to simmer.
- Simmer 20 minutes.
- When eggs are done, place immediately in a bowl of ice cubes and water (to keep yolks from turning green).
- Slice eggs in half lengthwise, and carefully remove yolks.
- Mash yolks with mayonnaise (I use a fork).
- Add remaining ingredients except paprika.
- Mix well with hand mixer until nice and smooth.
- Stuff egg whites with yolk mixture.
- Garnish eggs with paprika.

OH SO SWEET DEVILED EGGS
We have chickens and deviled eggs are becoming a weekly treat for us. I have played around with this recipe for a while and think I have it perfect now. If you don't like a deviled egg that is slightly sweet this may not be for you. I have to say the idea of powdered sugar comes from a cooking blog "Measured by the Heart" in her recipe she suggested powdered sugar will blend better than granulated sugar and I agree. I adapted my own recipe but like the powdered sugar idea. Credit for the heavy cream comes from the Pioneer Woman, works nicely to make a creamy filling.

Steps:
- Boil eggs in a large pot using the method you choose. Peel and slice eggs in half.
- Remove the yolks from the eggs and place them in a bowl. Mash the yolks with a fork or in a food processor. Add all of the ingredients. If necessary add a little more Miracle Whip and mustard to make the mixture creamy.
- Spoon the filling into the egg whites. I like to use two spoons to do this. Or you can use a piping bag.
- Top with a tiny sprinkle of paprika if desired.
