Terrific flavor and something different for a make-ahead party appetizer.

½ cup white wine
1 small onion, minced
1 lemon wedge
2 pounds mussels, cleaned and debearded
¼ cup olive oil
3 cloves garlic, minced
1 small carrot, shredded
½ red bell pepper, chopped
½ yellow bell pepper, chopped
¼ cup chopped fresh parsley
3 tablespoons red wine vinegar
¼ teaspoon ground black pepper
1 pinch salt

Steps:

  • Combine wine, onion, and lemon in a large skillet; add mussels. Bring mixture to a simmer and steam mussels until they break open, about 5 minutes. Transfer mussels to a bowl using a slotted spoon and continue simmering wine mixture until slightly reduced, about 5 more minutes.
  • Remove mussels from shells, reserving some shells for serving.
  • Heat olive oil in a skillet over medium-low heat; cook and stir garlic until fragrant, about 2 minutes. Stir reduced wine, carrot, red bell pepper, yellow bell pepper, parsley, vinegar, pepper, and salt into garlic; cook until heated through, 3 to 5 minutes.
  • Mix mussels and vegetable-wine mixture together in a bowl; marinate in refrigerator, about 24 hours. Serve by scooping a mussel and marinade into reserved half shells arranged on a platter.

My recipe is made without ground beef. It's wonderful baked slowly in the oven or in the crock pot. Throw in a sliced hot dog or two and call it "dinner".

15 ounces butter beans with molasses and bacon, do not drain
15 ounces dark red kidney beans, drained slightly
11 ounces pork & beans, do not drain
1/4 lb bacon, cooked, drained & chopped
1 medium onion, peeled and sliced
3/4 cup light brown sugar
1/4 cup cider vinegar
1 -2 garlic clove, minced
1 teaspoon dry mustard
hot sauce, several dashes

Steps:

  • Cook bacon, mix all together in a crockpot, Dutch oven or casserole dish.
  • Place in Crock pot for 4-6 hours. Start on high & turn down the temperature.
  • OR.
  • 325° oven, covered for 1 hour, uncovered for 1 hours or until hot & tender and desired consistency. *check periodically: careful not to let dry out.
  • Stir occasionally.
  • NOTES:.
  • Use similar can sizes.
  • If doubling or tripling, you can cut back on brown sugar and vinegar some.
  • Tripled: use 1# bacon.

1 lb bacon
1 1/2 lbs lean ground beef
1 large sweet onion, finely chopped
1 (15 ounce) can white beans, drained and washed
1 (15 ounce) can pinto beans, drained and washed
1 (15 ounce) can red kidney beans, drained and washed
1 (15 ounce) can lima beans, drained and washed
1 (15 ounce) can black-eyed peas, drained and washed
1 cup ketchup
1 cup brown sugar
3 tablespoons apple cider vinegar
1 tablespoon dry prepared mustard
3 tablespoons spicy mustard

Steps:

  • Chop and thoroughly cook bacon. Drain.
  • Brown hamburger and onion together. Drain.
  • Combine all ingredients in crock pot.
  • Cook on high for 1 hour or on low for as long as you wish.
