This simple, refreshing salad from Alice Waters, the founder and owner of Chez Panisse, the legendary Berkeley restaurant, can be served as a first course or to revive the palate between the main course and dessert. It came to The Times in 2010 when the Well blog featured a number of recipes from "The Food Network South Beach Wine & Food Festival Cookbook: Recipes and Behind-the-Scenes Stories from America's Hottest Chefs."

2 medium ruby grapefruit
1 teaspoon white wine vinegar
Salt
Freshly ground black pepper
2 tablespoons extra virgin olive oil
2 medium Hass avocados, cut in half and pits removed
Fresh chervil

Steps:

  • With a sharp knife, peel the grapefruit down to the flesh, removing all the rind and pith. Cut the sections free, slicing carefully along the partitioning membranes, and set them aside. Squeeze the juice from the membranes. Measure 2 tablespoons of the juice into a small bowl.
  • Stir the vinegar into the juice, and season with salt and pepper to taste. Whisk in the oil. Taste, and adjust the acid and salt.
  • Peel the avocado halves and cut them into 1/4-inch slices. Sprinkle lightly with salt. Arrange the grapefruit sections and avocado slices alternately on a plate, and spoon the vinaigrette over. Garnish with chervil, and serve.

2 tablespoons verjus* or 3 1/2 teaspoons white grape juice and 2 1/2 teaspoons apple cider vinegar
2 tablespoons fresh lemon juice
2 tablespoons minced shallot
1/4 cup walnut oil
1/4 cup olive oil
Fine sea salt
8 large butter lettuce leaves
3 ripe avocados, halved, pitted, peeled, thinly sliced, rinsed under cold water
3 large Ruby Red grapefruits, all peel and white pith cut away, segments cut from between membranes

Steps:

  • Whisk first 3 ingredients in small bowl to blend. Gradually whisk in both oils. Season dressing to taste with sea salt and pepper.
  • Arrange lettuce on platter. Top with avocado and grapefruit, then dressing.
  • Milder than vinegar, verjus is a tart juice made from unripe grapes; available at specialty foods stores and from chefshop.com and terrasonoma.com.

1 tablespoon Dijon mustard
1/4 cup freshly squeezed lemon juice
1 1/2 teaspoons kosher salt
3/4 teaspoon freshly ground black pepper
1/2 cup good olive oil
4 ripe Hass avocados
2 large red grapefruits

Steps:

  • Place the mustard, lemon juice, salt, and pepper in a small bowl. Slowly whisk in the olive oil until the vinaigrette is emulsified.
  • Before serving, cut the avocados in 1/2, remove the seeds, and carefully peel off the skin. Cut each half into 4 thick slices. Toss the avocado slices in the vinaigrette to prevent them from turning brown. Use a large, sharp knife to slice the peel off the grapefruits (be sure to remove all the white pith), then cut between the membranes to release the grapefruit segments.
  • Arrange the avocado slices around the edge of a large platter. Arrange the grapefruit segments in the center. Spoon the vinaigrette on top, sprinkle with salt and pepper, and serve.

1 ripe avocado
1 medium pink grapefruit
1 cup mixed salad green
vinaigrette dressing, of your choice

Steps:

  • Peel and pit the avocado.
  • Slice lengthwise.
  • Peel and section the grapefruit.
  • Place the salad greens on 2 salad plates.
  • Arrange grapefruit and avocado in an alternating band on top of the salad greens.
  • Top with vinaigrette.

  • For the avocados, substitute 2 large or 4 small artichokes. Trim off all the leaves, remove the chokes, and cook the hearts until tender in salted boiling water. Slice and marinate in a couple spoonfuls of the vinaigrette.
  • Slice thin 1 small sweet spring onion. Marinate in a spoonful of vinaigrette. Scatter over the arranged salad before spooning on the dressing.

1 small red onion, sliced into thin rounds, about 1/3 cup
2 tablespoons white wine vinegar
1 (8 ounce) bag mixed salad greens (prefer baby greens)
1 small pomegranate
3 red grapefruits (or a mixture of citrus fruits)
2 kiwi
1 large avocado
1 tangelo, zest and juice or 1 small orange, juice and zest of
sea salt
fresh ground black pepper
2 tablespoons extra virgin olive oil
1/4 cup roasted pistachio nut, coarsely chopped

Steps:

  • Toss the onion rings with the vinegar and set them aside in the refrigerator.
  • Wash salad mix, spin dry, then wrap in a towel and refrigerate until ready to use.
  • Cut the pomegranate into quarters, then break out about 1/2 cup of the seeds. Working in the sink, gently squeeze a tablespoon or so of juice from the remaining pomegranate and set it aside.
  • Peel and section the grapefruits.
  • Neatly peel and thinly slice the kiwi.
  • Peel and cut the avocados into neat chunks.
  • To make the dressing, combine the zest, 1/4 cup tangelo juice plus 1 tablespoon pomegranate juice, and 1/4 teaspoon salt, then whisk in the oil.
  • Loosely arrange the salad greens on a plate with the grapefruit sections (minus their juice).
  • Add the kiwi, avocado, and onions, which will be pickled by now, then pour the dressing over all.
  • Season with pepper and garnish with the pistachio nuts.
