This is a different take on the usual spinach roll up appetizer. Very tasty. NOTE: Should your yogurt be loose or runny, drain for a couple of hours in a coffee filter set in a strainer to get rid of some of the excess moisture.

- In a large bowl, combine mayonnaise and spices.
- Mix well.
- Stir in spinach until well blended.
- Add dried beef and crab meat.
- Divide evenly and spread over the 12 tortillas.
- Roll each tortilla up jelly-roll style.
- Wrap tighly with plastic wrap.
- Refrigerate overnight to allow the flavors to meld.
- To serve, slice each tortilla into 6 slices and arrange on a platter.

SURF AND TURF DINNER FOR TWO
Date night just got a lot easier -- and less expensive. Here's a traditional surf and turf dinner with a juicy steak, buttery shrimp scampi and creamy scalloped potatoes, but without the restaurant mark-up or complicated prep. Plus, using just one sheet pan means clean-up is a breeze!

- Position an oven rack in the top third of the oven and preheat to broil.
- Lightly grease the left third of an 18-by-13-inch sheet pan with the butter.
- Mix the Parmesan, heavy cream, thyme, garlic, 1 teaspoon salt and a few grinds of black pepper in a medium bowl. Add the potatoes and toss to coat.
- Arrange the potatoes in even overlapping layers on the buttered part of the sheet pan. Pour whatever cream mixture remains in the bowl on top. Sprinkle evenly with the Gruyere.
- Brush oil on both sides of the steak and sprinkle generously with salt and pepper. Put the steak on the middle third of the sheet pan. Broil for 5 minutes to begin browning the potatoes and steak. Meanwhile, put the shrimp scampi in a 1 1/2-quart oval baking dish.
- Remove the sheet pan from the oven, lower the oven to 450 degrees F and put the baking dish with the shrimp on the right third of the sheet pan next to the steak. Return the sheet pan to the oven and bake, stirring the shrimp halfway through, until the shrimp are cooked and the steak registers 135 degrees F for medium-rare, 16 to 18 minutes.
- Remove the steak to a cutting board and allow to rest for 10 minutes. Slice and serve the steak with the potatoes, shrimp scampi, spinach salad and bread for sopping up the flavorful juices.
SURF AND TURF STEAK ROLL UP RECIPE BY TASTY

- Preheat the oven to 375°F (190°C)
- Add 1 tablespoon of salt to a large pot of water and bring to a boil over high heat. Once the water is boiling, add the lobsters, heads first, leaving the rubber bands on the claws. Once the water returns to a boil, boil the lobsters for 10 minutes.
- Use tongs to remove the lobsters and transfer to a cutting board. Let cool for 5-10 minutes. Use scissors to snip off the rubber bands of the claws. With one hand, hold the body of the lobster, and with the other hold the tail. Use your hands to twist the tail off and remove it from the body. Twist the claws off where the leg and body meet.
- Use a pair of kitchen shears to make an incision at the top of the tail, then snip through to the base. Snap the shell back and remove the tail meat.
- Twist the legs at the joints to separate from the claws. Use kitchen shears to cut through the shells and remove the leg and claw meat.
- Roughly chop the lobster meat and add to a medium bowl, along with the cream cheese, 1 teaspoon of salt, and ½ teaspoon of pepper. Use a rubber spatula to mix well.
- Lay a piece of plastic wrap over a cutting board. Pat the flank steak dry with paper towels, then place on the plastic wrap and cover with another sheet. Use a meat mallet to pound out to ¼-inch thick.
- Remove the plastic wrap, then season the steak on both sides with the remaining 2 teaspoons of salt and teaspoon of pepper.
- Spread the lobster mixture in an even layer over the steak. Starting from the short end, gently roll the steak into a log shape. Secure the roll with toothpicks.
- Heat the olive oil in a large cast-iron or stainless steel pan over medium-high heat. When the oil begins to shimmer, add the steak roll and cook for 3-4 minutes on one side, until browned. Using 2 sets of tongs, gently turn the roll over and sear on the other side for 3-4 minutes, until browned.
- Transfer the pan to the oven and roast for 27-30 minutes, until the internal temperature of the steak reaches 145°F (63°C).
- Remove the steak roll from the pan and transfer to a cutting board. Let rest for 10 minutes.
- Make the cream sauce: In a large pan, melt the butter over medium-high heat. Add the garlic and stir for 30 seconds, until fragrant.
- Add the white wine and cook for 3 minutes, until reduced by half.
- Add the heavy cream, salt, and pepper, and cook for 7 minutes, whisking frequently, until slightly thickened and reduced by half.
- Add the parsley and whisk to combine.
- Remove the toothpicks from the steak roll, then slice into 1-inch thick pieces. Transfer to a platter and pour the cream sauce on top, then garnish with more parsley.

SURF & TURF KABOBS
This is another recipe from Jacqueline Bellefontaine's What's Cooking Barbecue with a few alterations from me. I love it because the marinade time is short. You really don't need any more time than stated. It is thick and sticks to the meats beautifully. You will think that there is not enough to marinade the amount of meat, but I thought it was perfect. (Not enough to have extra for rice) The flavors went so well together. Prep time does not include the marinate. I hope you enjoy it as much as we did.

- Cut the steak into bit size pieces and place in a zip-lock bag or a
- nonmetallic dish. (Zip-lock is just too easy).
- Peel and devein the shrimp, leaving the tails attached. (I bought the shrimp that were already deveined with tails on).
- To make the marinade, whisk the oyster sauce, soy sauce, lemon juice and safflower oil in a small bowl until well combined.
- Pour the mixture over the meat, turning to coat and marinate for 15 minutes.
- Add the shrimp to the marinade, toss to coat and marinate for 5 minutes.
- Remove the meat and shrimp from the marinade.
- Thread meat onto metal or presoaked wooden skewers, alternating the steak with the shrimp.
- Broil the kabobs over hot coals for 5-10 minutes turning frequently.
- Transfer to a warm serving plate and serve immediately.

- Soak 4 bamboo skewers in water for 30 minutes.
- Combine 1rst 5 ingredients -- marinate prawns and beef cubes in sauce -- add salt and pepper to taste.
- Preheat bbq to medium high.
- Thread 4 pieces steak and 3 prawns alternately onto skewers.
- BBQ 5-10 minutes till steak is done and prawns are just cooked.

- Preheat grill over high heat. Cut 4 sheets of foil about 12 inches long.

- Preheat to 375F degrees.
- Combine all ingredients except dough until well blended.
- Work with one sheet of phyllo at a time and keep the waiting sheets covered with a damp paper towel or plastic wrap, etc -- to keep from drying out.
- Brush one sheet of phyllo dough with melted butter or spray with cooking spray- butter flavored is best.
- Repeat process stacking the newly buttered/sprayed sheets on top of the other until you have three sheets buttered/sprayed stacked together.
- Spread one third of spinach mixture along one short side of the dough.
- Fold the sides in about 1 or 2 inches to keep filling inside and roll up to make a log shape.
- Repeat method using the remaining dough and filling to make two more logs.
- Spray or butter tops of logs and score diagonally at 1 nch intervals to keep dough from cracking.
- Place logs on baking sheet and bake for 25 minutes or until golden brown.
- Place on cutting board and cut each log into 10 slices with a serrated knife.
- Note: You can freeze uncooked logs for later use. When ready to serve, remove 10 minutes before baking and then follow baking directions.
SURF N' TURF BURGERS
These burgers are to die for! We had them down at the shore at the Green Turtle pub. I've been craving them since and this is the duplication I've come up with after some fooling around in the kitchen. Serve with a side of fries, onion rings or potato salad and of course, a dill pickle. You can make the burgers into 1/2 pounders and make 4 large crab cakes, if you desire. As much as I love ketchup on a burger, please, don't do it to this burger!

- Make your favorite recipe for hamburger patties; make eight 1/4 lb patties.
- For the crab cakes: combine beaten egg, mustard and mayo; then mix in well the crab meat, breadcrumbs, parsley, salt, pepper, Old Bay. Shape into eight cakes.
- Place crab cakes on an aluminum foiled cookie sheet; broil on LOW on one side until lightly browned; flip once and broil until lightly browned; keep warm until burgers are done.
