- Preheat oven to 350 degrees and spray an 8 x 8-inch baking dish with non-stick cooking spray. Pyrex Baking Dish are great for baking, can be used in the freezer, microwave, and are dishwasher safe.
- In a small saucepan, combine milk, butter, flour, paprika, salt, pepper, garlic powder, and onion powder. Allow mixture to steep but not boil.
- Add half the shredded cheese to the milk mixture and whisk until all the cheese melts. Set aside.
- Layer the potatoes and onions into the baking dish, alternating until both ingredients are gone.
- Carefully pour the liquid cheese mixture over the potatoes and onions. Top with additional shredded cheese.
- Bake for 45-60 minutes or until potatoes are fork tender.
- Remove from oven and allow to cool for approximately 20 minutes before serving.
- Store any leftovers in the refrigerator for up to 3 days in an airtight container.

- Position a rack in the upper third of the oven and preheat to 425 degrees F. Generously brush a large skillet with butter, then rub with the garlic. Heat the skillet over medium-high heat. Add half of the potatoes, sprinkle with 3/4 teaspoon salt, and pepper to taste, then arrange the remaining potatoes on top. Sprinkle with 3/4 teaspoon salt, and pepper to taste. Pour the broth and milk over the potatoes, then add the nutmeg and bay leaves; simmer 3 minutes.
- Generously brush a shallow baking dish with butter and slide the potatoes into the dish; arrange with a fork, if desired. (If your skillet is ovenproof, you can skip this step and bake the potatoes right in the skillet.)
- Dot the potatoes with the cut-up butter and sprinkle with the gruyere. Bake until golden, about 25 minutes. Let rest 5 minutes before serving. Discard the bay leaves.

- Preheat the oven to 350 degrees F. Brush a shallow 2 1/2-quart baking dish with butter. Put the potatoes in a large pot. Whisk the cream, flour, bay leaf, nutmeg, 1 teaspoon salt and 1/4 teaspoon white pepper in a bowl, then pour over the potatoes. Cook over medium heat, carefully stirring occasionally, until the cream just comes to a simmer, about 12 minutes. Continue to simmer, adjusting the heat if necessary and stirring to prevent the bottom from scorching, until the potatoes just begin to soften, about 5 more minutes.
- Transfer the potato mixture to the prepared baking dish; discard the bay leaf. Set the baking dish in a roasting pan and add enough water to come about halfway up the sides of the baking dish. - Spray or grease a large casserole dish.
- Wash the potatoes and peel the skin if you like. I did not as the golden potatoes have a very thin skin so they didn't need it.
- Slice the potatoes about 1/8 - 1/4 inch thick.
- Place a layer of potatoes on the bottom of the casserole dish.
- Sprinkle some of the cheese.
- Sprinkle a little black pepper on top.
- Repeat layering potatoes and cheese until you fill the dish.
- Pour cream over all the potatoes.
- Cover with foil and place in the middle of a preheat 375 degree oven for about 1 hour.
- Check with a fork to see if the potatoes are tender.

- Preheat the oven to 375 °F. Peel the potatoes and thinly slice them. Generously grease a baking dish with vegan butter or margarine.
- Now make the sauce. Combine all of the ingredients for the sauce in a high speed blender and blend until smooth. Spread about half of the potato slices into the bottom of the prepared baking dish.
- Top with about half of the sauce.
- Cut the onion into thin slices. Heat some oil in a pan and sauté the onion for about 3 minutes. After 2 minutes add the garlic. Equally divide the onion and the garlic on the first layer of potatoes.
- Add a second layer of potatoes with the remaining potatoes. Top with the remaining sauce.
- Generously top with vegan shredded cheese.
- Bake for 50 minutes. Cover with aluminium foil towards the end of the baking time if the top gets too dark. Sprinkle with freshly chopped chives and serve immediately.

- Start by slicing the potatoes about 1/8-1/4 inch thick.
- You may peel them first if you like.
- In a casserole dish, lay down a single layer of potatoes.

- Preheat oven to 375 degrees F (190 degrees C).
- Thoroughly grease a 9x13-inch baking dish with either butter or cooking spray.
- Thinly slice potatoes and onion and pat dry.
- Dice the butter and split it into three portions.

- Lightly spray a 8x8 or 9x9 baking pan and preheat your oven to 350°.
- Thinly slice 2 pounds peeled potatoes. To keep from oxidizing, soak in cool water.
