Steps:
- In a cast iron skillet over medium-high heat, brown the sausage breaking it up as you cook until it's no longer pink. Do not drain the fat.
- Melt the butter, and sprinkle the flour over the cooked sausage. Cook the flour for 2 minutes, then slowly add milk and stir constantly as you pour it in to avoid clumps.
- Bring the mixture to a boil, reduce heat and simmer until it's thickened.
- Season with garlic powder, salt, and pepper. Taste before adding salt, some sausages are saltier than others and may not need additional salt added.
- Serve immediately after cooking over split biscuits.

- Set a large skillet (I love cast iron) over medium heat. Add in the sausage and with a wooden spatula break up sausage into smaller pieces while stirring. Cook until brown and fully done (about 8 to 10 minutes).
- Place butter in skillet and stir until melted.
- Sprinkle flour, garlic, and pepper on top of the sausage and slowly stir until well coated and grease is full absorbed. Continue stirring and let the flour cook fully for about 2 minutes.
- While stirring, slowly pour in 3 cups of the milk. Continue to stir and simmer until gravy thickens (3 to 5 minutes). Add salt, if needed. If gravy is too thick, add the last 1/2 cup of milk.
- Serve over warm fresh biscuits.

- With your finger, tear small pieces of sausage and add them in a single layer to a large heavy skillet. Brown the sausage over medium-high heat until no longer pink. Reduce the heat to medium-low. Sprinkle on half the flour and stir so that the sausage soaks it all up, then add more little by little. Stir it around and cook it for another minute or so, then pour in the milk, stirring constantly.
- Cook the gravy, stirring frequently, until it thickens. (This may take a good 10 to 12 minutes.) Sprinkle in the seasoned salt and pepper and continue cooking until very thick and luscious. If it gets too thick too soon, just splash in another 1/2 cup of milk or more if needed. Taste and adjust the seasoning.
- Spoon the sausage gravy over warm biscuits and serve immediately!
SOUTHERN HOMESTYLE SAUSAGE GRAVY
This is my mother's recipe. She made this my whole life. It's wonderful. My daddy used to always say he ate it in the army but they use to call it something a little different. When I got a little older I found out it was called "sh.. on a shingle". I'm sure you've all heard of this before. Anyways it made me laugh, still does. I hope you enjoy this.

- Stir until blended.

AWESOME SAUSAGE GRAVY
I've been fiddling around trying to make a perfect sausage gravy for years and I think I finally hit on it with this one. My spices and seasonings are never actually "measured," so play around with them until it suits you! Just a disclaimer: this gravy is NOT for the health conscious! I use fat-free milk to kind of counteract the creams and sausage, but this definitely isn't a "diet-friendly" food!

- Brown and crumble sausage until its crispy. I like to burn mine just a little. Don't worry, it re-hydrates when you add the milk and creams.
- While browning, mix 1 1/2 cup milk with the cornstarch. Add in the softened sour cream and mix thoroughly. Combine the remaining milk and heavy cream.
- Once sausage is browned (don't drain off all of the fat, leave at least a few teaspoons), reduce heat to medium-low and pour in the milk/cornstarch/sour cream mixture. Stir constantly until it just begins to thicken. Add spices.
- Once the mixture has begun to thicken, add the milk and cream and increase temperature to medium high, stirring constantly, until it begins to bubble. Once it has started bubbling, reduce again to medium low. It needs a lot of attention, so keep stirring until it has reached your desired consistency. Make sure you keep tasting it too! Add more salt and pepper as needed.
- Serve over hot biscuits or grits or eggs or whatever you like your sausage gravy on!

SUPER SAUSAGE GRAVY AND CHEATER BISCUITS
I had to name this recipe "Super" because it just is, and "Cheater", because no matter how hard I try, I just can't make a nice soft biscuit! So I use Mary B's frozen southern style biscuits, available where I live. A national chain just bought them up, and if they become available where you are, give them a try! They are like homemade! And although I can't make biscuits, I can make a good gravy to go on top of them. I usually only make enough gravy for 4 biscuits, because I only make for two....I also allow each person to have 2 slices of sausage! Adjust the recipe accordingly. If you have a hearty appetite, double it! I said 4 servings in my listing, but this only feeds one teenage boy!

- First, cut 4 sausage patties off your sausage roll. Cook until done. Remove and keep warm. (This is optional, if you don't want a sausage patty on the side, you can just cut off enough sausage from the roll to equal 4 sausage patties -- my son always ask for a sausage patty on the side LOL).
- Preheat the oven to 400 degrees and cook your biscuits.
- Place the rest of the sausage in the skillet (do not use a non stick skillet, they don't make good gravy -- cast iron is preferred!) Break up the sausage so that it is in small pieces. Cook until there is no longer any pink color in the sausage. Remove any grease over 2 1/2 tbsp, but do not remove more than that!
- Reduce the heat to low, and slowly stir in the flour. Stir until blended, and cook for about 1 minute.
- Slowly stir in the milk, increasing the heat to medium high until boiling. You must constantly stir to keep from getting lumps in your gravy! Once it is boiling, reduce the heat, and continue to stir until your gravy reaches the desired consistency. For my house, this takes about 10 to 15 minutes, depending on the amount of grease in the sausage. Be sure to check your biscuits to make sure they are not getting overdone -- remove them from the oven when they are at your desired brownness.
- Once the gravy has reached your desired thickness, sprinkle in the salt and pepper according to your taste. I've never tested this, but my mama and grandmama told me that if you add the salt and pepper too early, your gravy will be "flat". I don't know what that means, but I'm not about to break their rule!
