Easy Italian Sausage and Peppers image

My Mom made these often when I was growing up and I have always loved them! I think this is the most authentic and traditional way to make these.Traditional Sausage and Peppers do NOT have tomato sauce! We always ate them on Italian sub rolls with mustard but you could eat these alone with good crusty bread on the side. This serves 8 and can easily be scaled down or increased depending on how many you want to feed.

8 hot Italian sausages (if you prefer) or 8 italian sweet sausage (if you prefer)
2 tablespoons olive oil
1 large onion, halved and sliced
2 large red peppers, seeded and sliced
1 green pepper, seeded and sliced
2 garlic cloves, minced
salt and pepper, to taste
1 pinch crushed red pepper flakes (optional)
1 teaspoon dried oregano
8 Italian rolls
mustard (optional)

Steps:

  • Heat the oil in a large pan, over medium heat.
  • Add the sausages and cook, turning frequently.
  • You want them browned all over and this takes about 10 minutes.
  • Add the onions and stir up the browned bits on the bottom of the pan.
  • Then after another 2 minutes, add the peppers, garlic, salt, pepper, and dried oregano.
  • After lowering the heat cook for another 5-10 minutes until the vegetables are tender and the sausages are cooked through.

4 sausage links, sliced on the diagonal (flavor choice is up to you. i love aidells spinach and feta or chicken and apple)
1 medium red bell pepper, sliced
1 medium orange or yellow bell pepper, sliced
1 medium onion, sliced
2 Tbsp coconut oil (or bacon grease)
2 c kale, shredded (optional)

Steps:

  • 1. In a large frying pan, heat oil over medium heat. Saute the peppers and onions for about 8 minutes.
  • 2. If adding kale, add now, and saute for a few more minutes with the peppers until slightly wilted.
  • 3. Add the sausage and heat through for about another 3-5 minutes, tossing consistently.
  • 4. Remove from heat, and serve! It's that easy.

3/4 pound sweet or hot Italian sausage, cut into chunks
3/4 pound skinless, boneless chicken breasts, cut into chunks

1 tablespoon all-purpose flour
1 small onion, chopped
2 Italian green frying peppers, cut into 1-inch pieces
3 cloves garlic, roughly chopped
1/2 cup dry white wine
3/4 cup low-sodium chicken broth
1/4 cup roughly chopped fresh parsley
2 jarred pickled cherry peppers, chopped, plus 2 tablespoons liquid from the jar

Steps:

  • Heat 1 tablespoon butter in a large skillet over medium-high heat. Cook the sausage until golden, about 2 minutes. Season the chicken with salt and pepper, then toss with the flour in a bowl; add to the skillet and cook until browned but not cooked through, about 3 minutes.
  • Add the onion, peppers, garlic, 1/2 teaspoon salt, and pepper to taste and cook 3 minutes. Add the wine, scraping up any browned bits; bring to a boil and cook until slightly reduced, about 1 minute. Add the broth and bring to a gentle simmer. Cover and cook until the sausage and chicken are cooked through, about 5 minutes.
  • Transfer the chicken, sausage and vegetables to a platter with a slotted spoon. Increase the heat to high and stir the parsley and cherry peppers and their liquid into the skillet; boil until reduced by one-third, 2 to 3 minutes. Remove from the heat and stir in the remaining 1 tablespoon butter. Pour the sauce over the chicken mixture.

1 red onion, minced
2 red peppers, roasted and cut 1/2-inch slices
2 yellow peppers, roasted and cut 1/2-inch slices
1 dried ancho chile
Salt and pepper, to taste
2 cloves garlic, minced
8 fresh basil leaves, torn
1 teaspoon fresh oregano, minced
2 pounds sweet Italian sausage
2 cups dry red wine
28-ounce can whole San Marzano tomatoes, crushed by hand

Steps:

  • Saute onions, peppers and chile in olive oil until onions are brown. Add salt and pepper to taste. Stir in garlic and basil. Add oregano. Hold aside.
  • Prick sausage all over with a fork. Saute in skillet over medium heat until brown. Add enough wine to cover about 2/3 of the sausage. Add Sauteed vegetables, tomatoes and any liquid. Simmer gently, partially covered, for 20 minutes. Remove sausage and slice into 1-inch pieces. Can be served on pasta or with bread.

2 tablespoons extra-virgin olive oil
12 fresh Italian sausages, hot or sweet (about 1- 3/4 to 2 pounds)
1 large Spanish onion, cut in halved, and cut into 1/4 inch slices
1 tablespoon tomato paste
2 large red peppers, trimmed, seeded, ribs removed, cut into 1/2-inch wide strips
2 large yellow peppers, trimmed, seeded, ribs removed, cut into 1/2-inch wide strips
2 poblano peppers, trimmed, seeded, ribs removed, cut into 1/2-inch wide strips
4 large cloves garlic, minced
Kosher salt and freshly ground black pepper
1 tablespoon balsamic vinegar
6 crusty sandwich rolls, toasted

Steps:

  • Heat the oil in a large skillet over medium high heat. Add the sausages and cook until well browned on all sides, about 10 minutes. Remove the sausages from the pan and set aside. Pour off all but 1 tablespoon of oil. Add the onions and cook, stirring, until golden, about 5 minutes. Stir in the tomato paste and cook for 1 minute more. Add the peppers, garlic, and season with salt and pepper to taste. Cook until the peppers are wilted, about 5 minutes. Return the sausages to the pan, cover, and cook over medium heat, stirring frequently, until the sausages are cooked through, about 12 minutes more. Stir in the vinegar. Divide the sausage and peppers evenly amongst the crusty rolls and serve.

1 pound rigatoni (or penne, ziti, etc)
1 1/2 pounds Italian sausage
3/8 cup extra virgin olive oil
6 cloves garlic (sliced)
2 large red bell peppers (or any color you like, sliced)
2 large green bell peppers (or any color you like, sliced)
1 large onion (sliced)
3/4 cup water (for steaming veggies)
3 ounces tomato paste
1 28 ounce can plum tomatoes (hand crushed or blender pulsed)
2 teaspoons Sicilian oregano (or Italian oregano)
salt and pepper (to taste)
1/4 cup Pecorino Romano (grated)
1/4 cup basil leaves (hand torn)
1 cup reserved pasta water (will not need all of it)

Steps:

  • Preheat oven to 450f. Roast the sausage links for approximately 25 (flipping halfway through) minutes or until cooked through and browned. Slice the sausage on a bias into 1/2" thick pieces once cool enough to handle.
  • Meanwhile, heat a very large pan to medium-low and add the olive oil and garlic. Once the garlic turns golden add the peppers and onions and mix to coat with the oil. Pour the water into the pan, cover, and cook over medium heat until soft.
  • At this time bring a large pot of salted water (2 tablespoons kosher salt per gallon) to boil.
  • After 15 minutes of cooking, remove the lid from the peppers and continue to cook over medium heat until most of the water evaporates and the peppers are very soft.
  • Once the water has mostly evaporated, add the tomato paste and cook for 5 minutes, stirring frequently. Next, add the crushed plum tomatoes and bring the sauce to a simmer.
  • Add the sliced sausage links to the sauce and continue to simmer. Season the sauce with the oregano and begin to boil the pasta.
  • Cook the pasta to 1 minute less than al dente, drain and add to the sauce. Cook until the pasta is just al dente then turn off the heat. Taste test the sauce and season with salt, pepper, and more oregano if desired to taste. Add the Pecorino and stir to incorporate. Finish with hand-torn basil and serve immediately. If the pasta is at all dry add a couple of ounces of reserved pasta water to loosen it up. Enjoy!
