Lemon Bars With Shortbread Crust image

These Super Easy Lemon Bars have a serious lemon hint. Perfect with a cup of coffee or tea, this recipe is suitable for any occasion.

4 eggs
1 1/2 cups granulated sugar
1/2 cup lemon juice
1/4 cup all-purpose flour
1 teaspoon baking powder
2 teaspoons grated lemon zest (from about 2 lemons)
2 cups all purpose flour
3/4 cup cold unsalted butter
1/2 cup icing sugar

Steps:

  • Preheat the oven to 350F. Line the bottom of a 9x13 inch rectangular baking pan with parchment paper.
  • Ina medium bowl, use a pastry blender to combine the flour, cold unsalted butter cut into small pieces, and icing sugar, mixing them into a crumbly mixture. (You can also make the crust in a food processor: add the flour, sugar, and butter cubes and pulse for 20 seconds.)
  • Press the mixture firmly and evenly into the bottom of the prepared baking pan.
  • Bake for 20 minutes until the crust begins to set. Allow the crust to cool for about 10 minutes.
  • In a large bowl, beat together the eggs, granulated sugar, and lemon juice.
  • Add the flour, baking powder, and lemon zest and beat until smooth.
  • Pour over the baked crust and return the baking pan to the oven for another 25 minutes until the topping is set and just beginning to brown around the edges.
  • Let cool completely, then sprinkle with icing sugar and cut into squares. The recipe makes 24 squares or 35 tiny ones.

1 cup Land O Lakes® Butter softened
1/2 cup powdered sugar
Filling
1 1/2 cups sugar
1/4 cup fresh lemon juice
4 large Land O Lakes® Eggs
1/4 cup all-purpose flour
2 to 3 teaspoons freshly grated lemon zest
1 teaspoon baking powder
Topping
1 teaspoon Powdered sugar

Steps:

  • Heat oven to 350°F.
  • Combine all crust ingredients in large bowl. Beat at low speed until mixture resembles coarse crumbs. Press mixture evenly onto bottom of ungreased 13x9-inch baking pan. Bake 20-22 minutes or until light brown; remove from oven.
  • Combine all filling ingredients in bowl. Beat at medium speed until well mixed. Pour lemon mixture evenly over hot, partially baked crust.
  • Continue baking 15-20 minutes or until filling is set and bars are light brown around edges. Cool completely.
  • Sprinkle bars with powdered sugar. Cut into bars.

½ cup white sugar
2 cups all-purpose flour
4 eggs
1 ½ cups white sugar

2 lemons, juiced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, blend together softened butter, 2 cups flour and 1/2 cup sugar. Press into the bottom of an ungreased 9x13 inch pan.
  • Bake for 15 to 20 minutes in the preheated oven, or until firm and golden. In another bowl, whisk together the remaining 1 1/2 cups sugar and 1/4 cup flour. Whisk in the eggs and lemon juice. Pour over the baked crust.

The ingredients are probably what you already have in your pantry. These lemon bars are pretty healthy - minimal on the flour and butter (except for the crust). It has a sweet cookie-like crust and the lemon on top seperates into two sweet, chewy layers. :] The top is kind of chewy and the bottom is like a sweet cookie so it reminds me of an ersatz cheesecake ;D

1 cup flour
1/8 teaspoon salt (optional)
1/2 cup sugar or 1/2 cup Splenda granular
1/4-1/3 cup butter, the recipe book says 1/3 but I reduced it and it still comes out great
3 medium eggs or 2 large eggs
1/2 cup sugar or 1/2 cup Splenda sugar substitute, see butter
2 tablespoons flour
1 1/4 teaspoons grated lemon rind (optional)
1/3 cup fresh lemon juice, make sure there aren't any seeds
confectioners' sugar (optional)

Steps:

  • Preheat oven to 375. Spray a 9x9 pan with nonstick spray and lightly flour.
  • Mix flour, salt, and sugar together. Add butter and mix (or 'cut') until it clumps. I just squish it with my hands until the butter is evenly distributed and looks like breadcrumbs. Pat this baby evenly on the pan and bake about 15 minutes until the top appears dry and the edges are lightly brown. Cool on wire rack and reduce heat to 350.
  • While you're waiting for crust, mix all the topping ingredients together (except the confectioner's sugar) and food processor/mix until well blended (it will be very liquid-like). Pour mixture on top of the prebaked crust and bake for about 15 - 17 minutes or until the top appears dry (it's normal if the center puffs up a bit). DON'T OVERCOOK, POR FAVOR!
  • Cool for an hour. Sprinkle with a bit of confectioner's sugar if you wish. Cut into 25 squares. MAKE SURE YOU SHARE! :].

1 1/2 sticks (6 ounces) unsalted butter, at room temperature, plus 1 tablespoon for greasing pan
1 tablespoon finely grated lemon zest, plus 1 cup fresh lemon juice, strained (from about 8 lemons)
2 cups granulated sugar
2 cups all-purpose flour, sifted (see Cook's Note)
3 tablespoons cornstarch
1/4 teaspoon fine salt
4 large eggs, plus 2 egg yolks
Confectioners' sugar, for dusting
8 gummy candy lemon slices, cut into thirds

Steps:

  • Position a rack in the center of the oven and preheat to 350 degrees F. Line a 9-by-13-inch glass baking dish with foil leaving a 2-inch overhang on two sides. Grease the foil and dish with 1 tablespoon butter.
  • To make the crust, pulse the zest with 1/3 cup of the sugar in a food processor until the sugar is yellow and sandy, 1 to 2 minutes. Add 1 1/2 cups of the flour, the butter, cornstarch and salt and pulse until the dough comes together, about 1 minute. Press the dough evenly into the bottom of the prepared pan. Bake until the crust is golden at the edges and pale golden in the center, about 30 minutes. Transfer to a wire rack.
  • Reduce the oven temperature to 300 degrees F. To make the filling, whisk the eggs and egg yolks with the remaining 1 2/3 cups sugar and the remaining 1/2 cup flour in a bowl until smooth. Whisk in 1 cup lemon juice.
  • Pour the filling over the warm crust and return to the oven. Bake until the filling is just set, about 30 minutes.
  • Cool the lemon bars on a wire rack, 30 minutes, then refrigerate uncovered until firm, at least 1 hour. Lift the bars out of the pan using the foil. Peel off the foil and cut into 24 bars. Dust with confectioners' sugar. Place a piece of gummy lemon candy on top of each square and serve.

1/2 cup butter or 1/2 cup margarine
1/3 cup brown sugar or 1/3 cup Splenda brown sugar blend
1/4 cup sliced almonds
2 cups flour (no more!)
1/4 teaspoon salt
1 1/2-1 3/4 cups sugar
1/2 cup flour
1/2 teaspoon salt
6 eggs (large)
1 cup lemon juice
icing sugar, for dusting

Steps:

  • Preheat oven to 350°F.
  • Using a food processor, pulse cold margerine or butter, brown sugar, almonds, flour, and salt until it is blended together and has a sandy appearance.
  • Pat crust into a 9x13 pan (i give it a spray to keep everything from sticking and prefer to use a glass pan). It may seem very dry, but that is ok.
  • Bake crust for 20 minutes or until edges are just starting to turn golden.
  • Beat your eggs with a fork or whisk, then stir in lemon juice. In another bowl, mix flour, sugar, and salt. I use 1.5 cups sugar and they are very zingy. If you have any doubts, or know that you prefer slightly less zing, try 1.75 cups of sugar!
  • Remove crust from oven and reduce heat to 320°F This step is important!
  • mix wet ingredients into dry ingredients. Pour mixture on hot crust, and return to oven for 22 minutes, or until filling has set. It might still look a little wobbly in the center, but it will firm up a bit while it cools.
  • Cool, dust with icing sugar (You will need it if you used the lesser amount of sugar!).
  • Pucker up! :D.
