Salted Egg Salad (Itlogna Maalat) image

This recipe substitutes hard-boiled chicken eggs for duck eggs to create a salty and funky egg salad. Top with microgreens.

6 hard-boiled eggs, peeled
2 tablespoons spiced cane vinegar
2 tablespoons olive oil
1 tablespoon chile oil
¼ teaspoon fish sauce
1 teaspoon coarsely ground black pepper
½ teaspoon kosher salt
2 cups quartered cherry tomatoes
1 cup chopped red onion
2 green onions, white parts chopped and green parts finely chopped
2 Thai chiles, finely chopped
1 wedge lemon
1 head butter lettuce, leaves separated into cups

Steps:

  • Mash eggs with a fork in a large bowl into fine pieces. Stir in vinegar, oils, fish sauce, pepper, and salt. Fold in cherry tomatoes, red onion, white parts of green onions, and Thai chiles until well mixed. Squeeze a lemon wedge over the top.
  • Spoon egg salad into lettuce cups; sprinkle with green parts of green onions.

Homemade Salted Eggs made of duck eggs brined in salted water. Delicious in salads or baked goods!

12 duck or chicken eggs
5 cups water
1 1/2 cups coarse salt

Steps:

  • In a pot over medium heat, combine water and salt. Bring to a boil, stirring until salt is completely dissolved.
  • Remove from heat and allow to fully cool.
  • Place eggs in a large container. Add the brining solution, making sure the eggs are fully submerged.
  • Weigh down with a small plate or a plastic bag filled with water. Cover and keep in a cool, dry place for about 18 to 21 days.
  • Drain eggs from the solution.
  • In a pot, place eggs and enough water to cover. Over medium heat, bring to a boil, uncovered, for about 20 to 25 minutes or until hard-boiled.
  • Drain eggs and allow to cool. Store in the refrigerator.

Filipino Itlog Na Maalat at Kamatis (Egg and Tomato Salad) image

This recipe has been passed to me from my Filipino mother. It's a filipino egg and tomato salad. I eat it with plain rice but can also be eaten with fried fish and spam / salted pork. It's traditionally made with salted duck eggs but I use regular hard boiled eggs.

6 -8 hard-boiled eggs, chopped
2 large tomatoes, largely chopped
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/4 teaspoon pepper
1/16 teaspoon Accent seasoning

Steps:

  • Mix all ingredients well. I like to mix mine where the yolks have dissolved and forms a nice cream to the salad.
  • Place in refrigerator for 2 hours or longer.
  • Serve cold with hot rice.

Learn how to make salted eggs, using only brine solution. A popular delicacy both in the Philippines and China that is widely used for various dishes.

10-12 eggs ((fresh) - make sure they have no cracks)
1 cup salt
4-5 cups water

Steps:

  • In a pot, bring the water with the salt to a boil. Once the salt completely dissolves, turn off the heat. Let cool completely.
  • Meanwhile, place the fresh eggs in a big glass jar. Pour the brine solution into the jar making sure that all eggs are fully submerged.
  • To keep the eggs from floating to the surface, put some water in a plastic bag and place this on top of the jar to push the eggs down.
  • Close the lid of the jar and store it somewhere at room temperature for 3-4 weeks.
  • At the end of the third week, test one by putting it in a small pot, add water and bring it to boil. Boil for 10-12 minutes covered at low heat. If you are satisfied with the saltiness, then boil the rest. If not, then leave for another week.
  • Mark the salted eggs and refrigerate up to a month.

It is also known as 'itlog na pula' or red egg because it is usually dyed red. correct me if im mistaken but I think the traditional way of making this is by covering the egg in mud. We usually eat this with tomatoes, fish sauce, etc. I haven't tried doing this particular recipe though.

1 cup salt
3 tablespoons rice wine
1 tablespoon peppercorn
6 cups water

Steps:

  • Wash eggs.
  • Place the rest of the ingredients in a large container with a lid.
  • Mix until salt is completely dissolved; let cool.
  • Add eggs (Make sure the eggs are completely submerged. The eggs will have a tendency to float to the top. Use something to put on top of the eggs to ensure the eggs remain submerged once the lid is closed.) Leave in room temperature for 30 days.
  • After 30 days, boil eggs.
  • When cool, refrigerate.
  • Enjoy!
