1 tablespoon olive oil
1 large onion, finely chopped
4 garlic cloves, minced
1 medium carrot, shredded
1 to 2 teaspoons chili powder
1 teaspoon ground cumin
1/4 teaspoon pepper
1 can (15 ounces) pinto beans, rinsed and drained
1 can (15 ounces) black beans, rinsed and drained
2 tablespoons Dijon mustard
2 tablespoons reduced-sodium soy sauce
1 tablespoon ketchup
1-1/2 cups quick-cooking oats
8 whole wheat hamburger buns, split
8 lettuce leaves
1/2 cup salsa

Steps:

  • In a large nonstick skillet, heat oil over medium-high heat; saute onion 2 minutes. Add garlic; cook and stir 1 minute. Stir in carrot and spices; cook and stir until carrot is tender, 2-3 minutes. Remove from heat., In a large bowl, mash pinto and black beans using a potato masher. Stir in mustard, soy sauce, ketchup and carrot mixture. Add oats, mixing well. Shape into eight 3-1/2-in. patties. , Place burgers on an oiled grill rack over medium heat or on a greased rack of a broiler pan. Grill, covered, or broil 4 in. from heat until lightly browned and heated through, 4-5 minutes per side. Serve on buns with lettuce and salsa.

1 pound fresh green beans, trimmed
2 tablespoons butter
1 small shallot, minced
1 garlic clove, minced
1/2 cup grated Parmesan cheese

Steps:

  • In a 6-qt. stockpot, bring 4 quarts water to a boil. Add beans; cook, uncovered, just until crisp-tender, 2-3 minutes. Remove beans and immediately drop into ice water., In a small skillet, melt butter over medium-high heat. Add shallot; cook and stir until lightly browned, 2-3 minutes. Add garlic; cook 30 seconds longer. Remove from heat. Drain beans and pat dry., In a large bowl, combine beans, shallot mixture and cheese; toss to coat. Transfer to a piece of heavy-duty foil (about 18 in. square) coated with cooking spray. Fold foil around beans, sealing tightly., Grill, covered, over medium heat or broil 4 in. from heat until cheese is melted, 7-9 minutes. Open foil carefully to allow steam to escape.

While grilling out, we decided to try grilling fresh green beans. After having this, we will never have green beans another way. I use my own mixture of 'silly salt' for this recipe--equal amounts of pepper, salt, onion powder, and garlic powder, but seasoned salt works as well.

8 sheets of aluminum foil
1 pound fresh green beans, trimmed
12 teaspoons butter, or more to taste
1 pinch seasoned salt to taste

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Layer 2 sheets of aluminum foil on a work surface to create a double sheet. Repeat with remaining foil to make a total of 4 double sheets.
  • Place 1/4 of each of the beans on the center of each double sheet of aluminum foil; season liberally with seasoned salt. Add 3 teaspoons of butter to each bean serving and close the foil tightly to form a packet.
  • Place foil packets on the preheated grill and cook until beans are tender, 15 to 20 minutes. Remove from grill and carefully open the packets to let the hot steam evaporate.

Green beans don't number among the vegetables we normally grill - eggplants, onions, peppers, zucchini - but there's something about the high, dry heat of the fire and the gentle scent of smoke that heightens their snap and natural sweetness. But how do you grill a vegetable so slender it seems doomed to fall between the bars of the grate? The secret is to use a meshed grill basket, which lets enough fire through to char the beans and enough smoke through to perfume them. The New York chef Missy Robbins grills Romano beans (a.k.a. flat or pole beans), whose shape maximizes the surface area exposed to the fire. If unavailable, substitute conventional green beans or haricots verts. The Italian inspiration for this dish is evident in the garlic, basil, mint and extra-virgin olive oil, but grilling the beans over a wood fire, instead of boiling, is uniquely and distinctly American. If necessary, you can use charcoal rather than wood; a gas grill is fine if that's what you have.

  • Build a hot wood fire in your grill. (You can do the same with charcoal. If you're using a gas grill, place a few hardwood chunks under the grate over one or two of the burners. Heat one burner on high heat and additional burners on medium heat, adjusting the heat as necessary.) Brush and oil the grill grate.
  • Combine 1/4 cup oil and the garlic in a small saucepan and cook over low heat until the garlic is fragrant but not browned, 8 minutes. Remove pan from heat and let cool. Stir in red-pepper flakes, lemon zest and parsley.
  • Place beans in a large bowl with the remaining 1/4 cup olive oil. Season with salt and pepper and toss to mix.
  • Arrange beans directly on the grill or in a wire grill basket. Grill beans until charred and crisp-tender, 3 to 4 minutes, turning with tongs. (You may need to work in two batches, depending on the size of your grill.)

Steps:

  • Preheat your grill to Medium-High 400 degrees F.
  • Wash and trim the ends off of your green beans, place them in your vegetable grilling basket
  • Drizzle with olive oil and season iwth salt and pepper

  • Prepare a clean grill for cooking on medium heat about 350 - 400 degrees F.
  • Lay out one piece of foil about 12'' x 24'' and put the green beans in the middle of the foil, evenly spread out. Fold up ends of green beans to make a edge to contain water and olive oil. Sprinkle the seasonings over the beans, then drizzle with olive oil and water. Fold the ends of the foil in towards each other to form a packet. Wrap another time with foil to double layer the foil to prevent foil from tearing open.

My husband came home yesterday with green Romano beans he bought at our local farmers' market and I was thrilled because we don't see them too often! What a rare treat! As far as preparing the beans, simple and quick is best and I usually steam or lightly sautè however this time I tried a stove top grill pan. If you are fortunate to find (or grow) yellow or purple Romano beans, replace a portion of the green ones for yellow/purple beans in this recipe. The garlic is my addition as is the cheese and although the latter is my contribution it is optional. *Be careful how much you salt the beans especially if you are adding the optional cheese- remember the cheese is salty, too.* Perfect all on its own, as a side dish, or as a delicious ingredient in warm weather salads or arranged over fresh pasta. 1/2 lemon - juice only

Steps:

  • Snap off any stems that may still be attached to the individual bean pods and rinse the green beans in cold water. Pat them dry.
  • Prepare all other ingredients before starting to cook.
  • Prepare the grill to a two-temperature zone and make sure the hot zone is set to hot temperature, about 425°-450°. You will be cooking over cooler side or you'll burn butter and garlic.
  • Set a cast iron skillet over indirect heat once the grill is preheated and let the skillet preheat for a few minutes.
  • Add butter to the skillet and once it starts to melt, add minced garlic and squeezed lemon juice.
  • When butter is melted, toss in green beans and season with salt, pepper, and garlic powder. Use long metal tongs to toss the green beans with butter and seasoning. (It's best to use long tongs to keep your hands away from the heat and preferably ones coated in silicone so you don't scratch the skillet.)
  • Cook grill beans, stirring them often, until it's reached desired tenderness. This will take somewhere between 10 and 15 minutes.

  • Start by washing and breaking the green beans into bite size pieces. Since everything will be cooked in a grill pan, it's important to keep everything in large enough pieces that they don't fall through the pan and into the bottom of the grill.
  • Cut the red pepper lengthwise into bite-sized pieces, slice the shallot into long thin pieces, and thinly slice the garlic. Put the green beans, pepper, shallots and garlic into a large bowl.

  • Lay the pieces of foil on top of each other, and put the beans in the middle of the foil, in a pile roughly following the shape of the foil. Sprinkle the salt and pepper over the beans, then drizzle with the olive oil and water. Bring the long sides of the foil together over the top of the beans. Fold the long sides over twice, then keep folding until you have a long envelope with the foil tight against the pile of beans. Fold the open ends of the envelope a few times to seal.
  • Prepare the grill for cooking on medium heat, then clean with a grill brush. For my Weber summit, I preheat the grill with all burners on high for 15 minutes, then turn the burners down to medium and brush the grate clean.
  • Put the envelope of beans over direct medium heat, and cook with the lid closed for 8 minutes. Flip the bag of beans, and cook for another 8 minutes. Carefully open the bag and check the beans – a bean from the middle of the pile should be floppy, and cooked all the way through. If not, seal up the envelope and cook until the beans are tender.
  • Open one end of the foil envelope – be careful, the steam is hot – and pour the beans onto a platter. Serve.
