SANDRA'S SHORTCAKE
Steps:
- Preheat oven to 350 degrees F.
- Unroll biscuits, place on baking sheet and bake in the oven according to directions.
- Meanwhile, in a medium bowl, combine the strawberries and half of the sugar. Let stand for 1 hour to meld flavors.
- In a small bowl, combine remaining sugar and cinnamon.
- Remove biscuits from oven; split the biscuits and dredge in cinnamon sugar; place on serving plate. Top biscuits with macerated strawberries.
- Place whipped topping in a bowl and fold in the sour cream. Garnish shortcakes with a dollop of whipped topping mixture.
SUNSET COCKTAIL
Steps:
- In a collins glass filled with ice, pour in orange vodka and fill almost to the top with mango nectar. Pour grenadine over top. As grenadine sinks, float dark rum by pouring over the back of a spoon.
SUNSET SHORTCAKE
Steps:
- In a bowl, stir together strawberries, pineapple, and marmalade; set aside.
- Slice thawed pound cake into 16 slices. Spread half of the slices with cream cheese. Set on serving plate. Spoon half of strawberry mixture over pound cake slices. Top with remaining pound cake slices and strawberry mixture.
- Serve garnished with whipped cream and a sprig of mint.

- Dissolve sugar in water. In a blender combine raspberries, 3/4 cup ice, sweetened water and lemon juice. Blend until smooth. Divide mixture between 2 wine glasses. In the same blender, blend orange juice concentrate, the remaining ice and remaining 1 tablespoon of lemon juice. Fill glasses to top. Garnish each with a cherry.

- Preheat oven to 400 degrees F (200 degrees C). Lightly grease a baking sheet.
- Sift together the flour, sugar, baking powder, baking soda, and salt in a mixing bowl. Using a pastry blender or two forks, cut in the cold butter until the mixture resembles coarse crumbs. Make a well in the middle of the flour mixture; pour in the buttermilk and milk, and mix just until the dough gathers together. Do not overwork. Cover the bowl, and allow dough to rest 10 to 15 minutes. Roll or pat the dough into 6 rounds, each about 3 inches in diameter. Place on prepared baking sheet.
- Bake in preheated oven until puffed and golden, about 15 minutes. Place on a rack and cool to room temperature.
- Meanwhile, combine the blueberries, apricots, and cherries in a bowl. Toss to blend and set aside.
- Beat the whipping cream in a mixing bowl until soft peaks form. Stir in 2 tablespoons confectioners' sugar; continue beating until stiff peaks form. Split the shortcakes in half and place the bottom halves on 6 serving plates. Spoon whipped cream over each half, top with fruit, and place a shortcake top on each. Dust tops with remaining 1 tablespoon confectioners' sugar.

This is a fabulous old-fashioned recipe given to me by a friend. It was her mother's recipe and it is the best shortcake. It sops up all the juice and the touch of nutmeg sends it over the top. My very favorite recipe for strawberry shortcake!

- Preheat an oven to 450 degrees F (230 degrees C). Grease an 8-inch baking pan.
- Sift flour, sugar, baking powder, salt, and nutmeg in a large bowl. Cut in butter with a knife or pastry blender until the mixture resembles coarse crumbs. Beat egg and milk in another bowl; stir into flour mixture until batter is just blended. Spread batter in the prepared baking pan.

- Preheat oven to 425 degrees. In a food processor, combine flour, butter, 1/3 cup sugar, baking powder, and salt; process until mixture resembles coarse meal. Add milk; pulse just until moistened, 4 or 5 times. Do not overprocess.
- Turn out dough onto a lightly floured surface; with floured hands, gently pat dough into a 4-by-8-inch rectangle.
- Dust a large knife with flour; cut dough into 8 squares. Transfer to a baking sheet; sprinkle with 1 tablespoon sugar. Bake until golden, 25 to 30 minutes; cool on baking sheet. To serve, split biscuits with a serrated knife; layer with berries and Whipped Cream.

- Preheat oven to 350°. In a large bowl, cream shortening, butter and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition.
