- Allow salmon to rest 10 - 15 minutes at room temperature. Meanwhile, in a medium saucepan combine balsamic vinegar, white wine, honey, dijon mustard, rosemary and the garlic.
- Heat mixture over medium-high heat and bring to a boil, then reduce heat and simmer over medium-low heat until sauce has thickened and reduced to about 1/3 cup, about 10 - 15 minutes, stirring occasionally.
- Remove from heat and pour through a fine strainer into a heat proof dish. Set aside.

- Add glaze ingredients to a small saucepan and heat over medium-low heat.

- Remove the salmon from the refrigerator and let rest for about 10 minutes before preparing. Do not use frozen salmon, it must be thawed. Then pat the fillets dry with a paper towel. Drizzle a little olive oil and sprinkle salt and pepper over top.
- Heat the butter and oil in a heavy bottom skillet over medium-high heat. Once the pan is hot, add the fillets, skin sides up. Let this side cook undisturbed for about 5 minutes. Turn the heat to medium if it's burning.
