1/4 cup white wine or low-sodium chicken broth
2 Tbsp honey
1 Tbsp dijon mustard
1 rosemary sprig (about 7-inches)

4 (6 oz) salmon fillets (skinless or skin on)
Salt and freshly ground black pepper
2 tsp olive oil
Finely minced rosemary or parsley, for garnish ((optional))

Steps:

  • Allow salmon to rest 10 - 15 minutes at room temperature. Meanwhile, in a medium saucepan combine balsamic vinegar, white wine, honey, dijon mustard, rosemary and the garlic.
  • Heat mixture over medium-high heat and bring to a boil, then reduce heat and simmer over medium-low heat until sauce has thickened and reduced to about 1/3 cup, about 10 - 15 minutes, stirring occasionally.
  • Remove from heat and pour through a fine strainer into a heat proof dish. Set aside.
  • Season both sides of salmon with salt and pepper. Heat oil in a 12-inch non-stick skillet over medium-high heat.
  • Add salmon fillets and cook, without moving until salmon has nicely browned on bottom, about 3 - 4 minutes. Carefully flip salmon to opposite side and continue to cook 2 - 3 minutes longer until salmon has cooked through.

2 salmon fillets (, about 6 ounces each)
1 teaspoon avocado oil (, or olive oil)
1 teaspoon butter (, optional)
Salt and Pepper
chopped parsley (, optional)
2 Tablespoons balsamic glaze (, more if desired)

Steps:

  • Remove the salmon from the refrigerator and let rest for about 10 minutes before preparing. Do not use frozen salmon, it must be thawed. Then pat the fillets dry with a paper towel. Drizzle a little olive oil and sprinkle salt and pepper over top.
  • Heat the butter and oil in a heavy bottom skillet over medium-high heat. Once the pan is hot, add the fillets, skin sides up. Let this side cook undisturbed for about 5 minutes. Turn the heat to medium if it's burning.

1/2 cup balsamic vinegar
1/2 cup dry white wine
2 tablespoons fresh lemon juice
2 tablespoons (packed) dark brown sugar
6 5- to 6-ounce salmon fillets with skin
Olive oil

Steps:

  • Combine first 4 ingredients in medium saucepan. Boil until reduced to 1/3 cup, about 17 minutes. Season glaze to taste with salt and pepper. (Can be made 1 week ahead. Cover and refrigerate. Rewarm over low heat before using.)
  • Prepare barbecue (medium-high heat). Brush salmon lightly with oil; sprinkle with salt and pepper. Grill salmon, flesh side down first, until just opaque in center, about 5 minutes per side. Transfer salmon to platter. Drizzle glaze over salmon.
