- Brown meat with onions in large skillet on medium-high heat; drain. Return meat mixture to skillet. Add ketchup and mustard; cook 2 min., stirring frequently. Cool 10 min.
- Heat oven to 400°F. Unroll pizza dough onto baking sheet sprayed with cooking spray; press into 15x8-inch rectangle. Top with meat mixture to within 1/2 inch of edges; sprinkle with cheese. Roll up, starting at one long side. Rearrange if necessary so roll is seam side down on baking sheet.
- Bake 20 to 25 min. or until golden brown.

TRADITIONAL BEEF ROULADEN

- Preheat the oven to 375 degrees F.
- Place each top round slice between wax paper and pound to tenderize; add salt and pepper and generously spread each with the spicy mustard.
- On the wide part of each piece of meat, place about 5 pieces of the dill pickle spears, some onion and a heaping tablespoon of the browned bacon. Fold in the edges and roll up like a burrito.
- Carefully brown the rolls on all sides in a frying pan. Place in a large pot with the beef stock.
- Put a slice of the raw potatoes between each rolled roulade, making sure the pot is packed tight; the potato slices will hold the roulade together without having to use a string. Cover and bake for about 45 minutes.
- Make your gravy from the drippings by mixing the flour and butter and adding it slowly into the beef stock until it reaches the desired consistency. Serve with red cabbage and potatoes or spaetzle. You can also serve the potatoes that have soaked up all the delicious juices and held together the rouladen.
FRENCH DIP CHEESEBURGERS ON BRIOCHE ROLLS WITH CRISPY, BUTTERY CRUSHED POTATOES

- Gather ingredients.
- Halve and peel the onions and leave root end attached. Thinly slice the onions from the root end, down and in opposite direction, thinly slicing onion, then slice off the root end to separate.
- To a medium nonstick skillet over medium to medium-high heat, add the oil, 1 turn of the pan. Melt butter into oil, then add onions and season with salt and white or black ground pepper, bay leaf. Stir and soften a few minutes, then add 1/2 cup water and about 1/2 cup consomme or beef bone broth and let it absorb, 4 to 5 minutes. Add creme fraiche or sour cream and mustard, then combine and reduce heat to low/warm, cover. Remove bay before serving.
- Warm the remaining 2 1/2 cups consomme or bone stock in small pot over low heat for dipping.
- Preheat cast-iron skillet or griddle for burgers over medium-high heat.
- Meanwhile, place potatoes in a skillet with lid with 2 1/2 cups water and some butter and bring to boil, covered. Cook 8 to 10 minutes to just tender, then remove lid and let water evaporate. Crush potatoes a bit with the bottom of a water glass and brown to crisp up edges and skins, 6 to 8 minutes. Season with salt and pepper.
- While the potatoes are cooking, mix garlic into the beef. Score meat into 4 sections, then form 4 patties thinner at centers than edges for even cooking. Season the meat with salt and pepper. Cook patties in skillet or on griddle about 8 minutes, turning occasionally. Melt cheese, 2 slices per patty, over tops in last minute or so.
- Split and lightly toast buns, optional.
- Drain and slice some cornichons for the buns.
- Chop parsley.
- To serve: Top bun bottoms with pickles, patties, creamy onions, tops of buns. Cut burgers in half and serve with small bowls of warm consomme or stock for dipping burgers and potatoes alongside, sprinkled with chopped parsley.
THANKSGIVING BACON ROULADE

- Preheat the oven to 400 degrees F. Place a cooling rack on a rimmed baking sheet. Top with a 12-by-10-inch piece of parchment.
- Arrange the bacon slices horizontally on the parchment so they are overlapping to form a large rectangle the size of the paper. Bake until the bacon starts to shrink and render fat, about 20 minutes. Set aside to cool slightly. Increase the oven temperature to 450 degrees F.
- Meanwhile, bring a small saucepan of salted water to boil. Drop the green beans in the water and cook for 2 minutes, then remove to a strainer and run a little cold water over the beans to cool.
- To assemble the roulade, spread the potatoes on the bacon blanket in a 6-by-10-inch rectangle, leaving a border of uncovered bacon on all sides. With the back of a spoon, make 2 long troughs lengthwise down the center of the potatoes, leaving space between and around the troughs. Spoon the gravy into the troughs (keeping the gravy chilled prevents it from running all over the potatoes). Sprinkle the gravy and potatoes with the Cheddar. Arrange the green beans 2 to 3 across in a thin line on top of the Cheddar, in between the gravy troughs. Sprinkle the Parmesan over the green beans and potatoes.
- Form the stuffing into a 10-inch log; you can use your hands to shape it or spoon the stuffing onto a piece of parchment and tightly roll it into a log. Place the stuffing log down the center of the bacon rectangle. Working from one of the long sides of the bacon rectangle, grab the parchment and pull it up and over the stuffing. Use the parchment to help you roll it into a roulade, making sure it ends up seam-side down.
- Bake the roulade until the bacon is cooked and crispy, about 30 minutes. Let rest for about 5 minutes, then transfer to a cutting board and slice into 1-inch slices. Serve with warm gravy and cranberry sauce.
BRAISED ROULADEN WITH PAN GRAVY
Steps:
- Lay flat each piece of top round, spread on a layer of mustard, sprinkle lightly with salt and pepper and top with a slice of bacon. At one end of each piece, place about a tablespoon of the chopped onions and a pickle spear. Starting from the filling side (the onions and pickle), begin to roll each piece while tucking in the sides (this will keep your rouladen filling inside as you cook them). Tie a piece of butcher string around each rouladen in the middle and then on both sides (like you would a present), and then knot it.
- Heat the olive oil in a large pan on medium-high heat. Cook the rouladen on all sides until brown. Remove any excess oil from the pan, leaving the leftover brown bits. Reduce the heat, add the beef stock and bring to a simmer. Simmer on medium-low to low heat, covered, until the rouladen are fork-tender, about 90 minutes. Remove them from the pan (leaving the juices), cover loosely with foil and let rest for 10 minutes.
- Whisk together the cornstarch and 1/4 cup cold water until smooth. Bring the leftover pan juices to a simmer and slowly add the cornstarch mixture while stirring. Bring to a boil, reduce the heat and simmer until the starchy flavor has been cooked away, about 10 minutes. Add the red wine near the end of the cooking time if using, to add a nice zesty flavor.
- Serve the rouladen with the gravy.

- Crumble the mince in a large bowl, then tip in the breadcrumbs, cheese, Worcestershire sauce, parsley and eggs with 1 tsp ground pepper and 1-2 tsp salt. Mix with your hands to combine everything thoroughly.
- Shape the mix into 12 burgers. Chill until ready to cook for up to 24 hrs. Or freeze for up to 3 months. Just stack between squares of baking parchment to stop the burgers sticking together, then wrap well. Defrost overnight in the fridge before cooking.

- Put the meat and Worcestershire sauce in a bowl and season with black pepper and 1 generous tsp salt. Mix together well, then shape the meat into 4 thin, flat burgers. Chill until needed. Can be made a day ahead. Combine the chipotle paste, ketchup and mayonnaise in a bowl to make a sauce.
- Heat a gas or charcoal barbecue to high (or you can use a griddle pan on the hob). Cook the burgers over direct heat for 2 mins each side or until grill marks appear. Top each with 2 slices of cheese and cook for another 30 secs or until melted, then remove from the heat. Toast the buns for a few seconds on the cut-side.

- Preheat oven to 350°. In a large skillet, cook and crumble beef with pepper and onion over medium-high heat until no longer pink, 5-7 minutes; drain.
