SUNNY'S EASY GRILLED GREEN BEANS WITH A QUICK CHUTNEY



Sunny's Easy Grilled Green Beans with a Quick Chutney image

1/2 cup apricot preserves
1/4 cup finely chopped Chicago-style mild giardiniera sandwich mix (the kind packed in vinegar)
1/4 cup finely chopped red bell pepper
1 tablespoon apple cider vinegar
Kosher salt and freshly ground black pepper
1/4 cup chopped fresh Italian parsley
2 tablespoons chopped fresh mint
16 to 18 ounces green beans, trimmed
Kosher salt and freshly ground black pepper

Steps:

  • For the chutney. In a small sauce pot on medium heat, add the preserves, giardiniera, bell pepper, vinegar, a pinch of salt and a few grinds of pepper. Add a splash of water to loosen and bring to a simmer. Simmer, stirring occasionally, until the bell pepper becomes tender, about 10 minutes. Remove from the heat and stir in the parsley and mint.
  • For the green beans. Prepare a grill for high heat and place an inverted wire resting rack on top of the grill.
  • Place the green beans in a single layer on top of the wire rack and close the grill lid. Grill, rotating midway through, until bright green, 5 to 8 minutes.
  • Transfer the grilled green beans to a large bowl, toss with the chutney, season with salt and pepper and serve.

1 pound thin green beans
2 tablespoons butter
Freshly squeezed lemon juice, to taste
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Snap off the stem ends of the green beans, or cut them off in a big bunch with a knife.
  • Heat a pan over a medium heat and add the butter. (It helps to use a pan with a light-colored bottom so you can keep track of the color.) Swirl the pan occasionally to be sure the butter is cooking evenly. As the butter melts, it will begin to foam. The color will progress from lemony-yellow to golden-tan to, finally, a toasty-brown.
  • Once you smell that nutty aroma, add the green beans and saute for 3 to 4 minutes. Add some lemon juice and salt and pepper, then transfer to a platter in batches with tongs.

2 pounds green beans, ends trimmed
1 tablespoon extra-virgin olive oil
3 tablespoons butter
2 large garlic cloves, minced
1 teaspoon red pepper flakes
1 tablespoon lemon zest
Salt and freshly ground black pepper

Steps:

  • Blanch green beans in a large stock pot of well salted boiling water until bright green in color and tender crisp, roughly 2 minutes. Drain and shock in a bowl of ice water to stop from cooking.
  • Heat a large heavy skillet over medium heat. Add the oil and the butter. Add the garlic and red pepper flakes and saute until fragrant, about 30 seconds. Add the beans and continue to saute until coated in the butter and heated through, about 5 minutes. Add lemon zest and season with salt and pepper.

2 sticks salted butter, cut into cubes
1 tablespoon Italian seasoning
6 cloves garlic
Zest of 2 lemons plus 2 tablespoons lemon juice
2 scallions, white and green parts, cut in quarters
Kosher salt and freshly ground black pepper

Steps:

  • In a food processor, add the parsley, butter, Italian seasoning, garlic, lemon zest and juice, scallions, a nice pinch of salt and a few grinds of black pepper. Blend until smooth; taste and season with more salt if needed.
  • Use on garlic bread, broiled oysters, baked fish, roast chicken, scrambled eggs, lamb, twirled with pasta--just use it, mmmkay?

  • Bring a medium pot filled 2/3 with water to a boil over high heat. Add 1 teaspoon salt. Add the green beans to the water. Adding cold beans to the water will lower the temperature and stop the boiling process. Bring the beans up to a boil and once the water starts boiling again, cook the beans for 4-5 minutes or until crisp, tender. Taste a green bean to be sure it's cooked the way you like.
  • Bring a large saucepan filled 2/3 with water to a boil. Add 1 teaspoon of salt to the water. Add the green beans to the water. (Depending on how cool the beans are it will stop the water from boiling. Bring the pot back to a boil and cook the beans for about 4-5 minutes, or until crisp tender.
  • Use tongs to transfer the beans to the ice bath. Submerge the beans in the water and agitate them with the tongs so they cool very quickly and retain their bright green color.
