This is a simple appetizer but it packs a punch. Great served hot with crackers or small slices of hot French bread. This recipe was given to me by a friend who says she found it in a local newspaper.

Number Of Ingredients 5

Ingredients

1 can(s) (11 ounces) jalapeno peppers
3 large eggs, beaten
2 c shredded sharp cheddar cheese
several drops hot sauce to taste
salt and freshly ground black pepper to taste

Steps:

1. Drain and chop jalapeno peppers. Remove seeds if you do not want a really hot taste. Place peppers in a 9 inch pie plate. Sprinkle cheese over peppers. Mix eggs with seasonings. Pour eggs over all. Bake for 20 minutes at 400 degrees. Cut into small wedges to serve.

Homemade jelly using the apples and peppers of your choice!

Yield 6 8oz jars

Number Of Ingredients 6

Ingredients

8 Granny Smith Apples, Peeled, Cored, and Diced
3 cups Water
1 cup Cider Vinegar
6 Jalapenos, Stems & Seeds Removed, Diced
3 cups Sugar, (I added 4 cups of sugar)
6 ounces Liquid Pectin, (or 2 boxes of Sure-Jell)

Steps:

Place the apples, water, vinegar, and jalapeno in a large, heavy saucepan. Bring to a boil over medium-high heat, stirring occasionally. As soon as the mixture boils, lower the heat to medium and cook for about 20 minutes, or until the apples soften.
Remove the pan from heat. Using a fine-mesh strainer, strain the liquid into a clean large, heavy saucepan, letting the apples drain, but do not press on them.
When the liquid is extracted, discard the pulp.
Add the sugar to the apple juice and bring to a boil over medium-high heat.
Remove from heat, add pectin, and stir well.
Pour into 6 sterilized jars, seal, and store.

3 tablespoons jalapeno jelly
4 cups peeled sliced granny smith apples
1 tablespoon lemon juice
1 tablespoon sugar
1 tablespoon flour
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
2 tablespoons brown sugar
2 teaspoons minced seeded jalapenos
1/2 cup sugar
1/2 cup flour
1/4 cup butter
3/4 cup grated monterey jack cheese
1 9 inch pie shell

Steps:

Preheat oven to 350°F Spread jalapeno jelly into the bottom of pie shell.
In a bowl, toss apples with lemon juice.
In a separate bowl, combine sugar, flour, cinnamon, nutmeg and brown sugar.
Sprinkle sugar mixture over apples, toss and spoon into pastry shell.
Sprinkle jalapeno pepper over apples.
For topping, combine sugar, flour and butter with a pastry blender to form crumbly mixture.
Stir in grated cheese.
Sprinkle over pie.
Bake 45 minutes, or until golden.

Preheat the oven to 425°F. Sprinkle both sides of one of the pie crusts with flour and rub all over. Press the pie crust into a 9 inch pie plate (glass or ceramic recommended). Spread the hot pepper jelly on the bottom of the pie crust. Set aside.
In a large mixing bowl, add the apples, diced jalapeno pepper, white and brown sugars, flour, cinnamon, nutmeg, salt and lemon juice. Stir until thoroughly combined. Pour the apple mixture into the pie plate.
Roll out the second pie crust so that it extends about 1/2 inch beyond the rim of the pie plate. Place the crust on top of the pie and tuck the edge of the top pie crust under the edge of the bottom crust and press to seal. Crimp the edges with your fingers or a fork. Using a sharp knife, cut five 2-inch slits into the top pie crust from the center of the pie out towards the edge of the pie to allow the steam to escape.
