A bush tomato is an Australian native berry related to the tomato. Sun-dried tomatoes can be subbed. Dampers are usually baked in one loaf, like soda bread, but these are shaped into rounds like American biscuits.

Steps:
- Sift flour and baking powder together into a bowl.
- Add salt, sugar and butter, and mix with fingers until crumbly.
- Add milk and tomatoes and mix.
- Allow to rest 30 minutes.
- Preheat oven to 400F and lightly coat a baking sheet with cooking spray.
- Roll dough out about 1 1/4 inch thick and cut into 8 rectangles or circles. Place on baking sheet and bake for about 20 minutes, or until golden brown.
- Serve hot.

Steps:
- Sift the flour into a bowl and rub in the butter.
- Add the remaining ingredients and mix them until combined.
- Turn the dough out on a floured surface and knead it for a couple of minutes bringing it into a ball.
- Cover the dough with a tea towel or cling film and leave it to rest for 30 minutes.
- Preheat an oven to 375 degrees.
- Divide the dough into 8 balls of dough and place it on a lightly greased baking tray.
- Place the tray on the center shelf in the preheated oven.
- Cook the damper for 20 minutes until risen and golden brown.
- Serve or keep warm until ready to serve.
SUN-DRIED TOMATO DIP
Steps:
- Puree the tomatoes, cream cheese, sour cream, mayonnaise, red pepper sauce, salt and pepper in a food processor fitted with a metal blade. Add the scallions and pulse twice. Serve at room temperature.

- Preheat oven to 200°C.
- Lightly grease a baking tray.
- Combine flour, tomato, parsley and a pinch of salt in a bowl. Stir in enough milk to form a soft, not sticky dough.
- Turn onto a lightly floured surface;knead briefly.
- Shape into a 12cm round on tray. Lightly brush with milk.
- Bake 15-20 mins until golden and a skewer inserted at centre comes out clean.

Paraphrased notes from the site: The best tomato to use for dehydrating is the Roma tomato because it contains less water and seeds. You can use any tomatoes but they may take a little longer to dry. All drying times below are approximate. It takes about 7-8 pounds of tomatoes to yield about a pint of dried tomatoes. Herbs are optional, you may prefer pain tomatoes for greater cooking versatility. After the tomatoes are dry, store in air-tight containers, or pack in oil.

- TOMATO PREPARATION ALL METHODS.
- Cut out the stem and scar and the hard portion of core lying under it.
- Cut the tomatoes in half, lengthwise. If the tomato is more than about 2 inches long, cut it in quarters.
- Scrape out all of the seeds that you can without removing the pulp.
- Mix together thoroughly basil,oregano, thyme, and salt.
- Sprinkle a small amount of this mixture on each tomato.
- OVEN-DRYING (approximately 12 hours).
- Arrange the tomatoes, with the cut surface up, on non-stick cookie sheets (glass or porcelain dishes are OK.) Do not use aluminum foil or aluminum baking sheets as the acid in the tomato will react with the metal.
- Bake in 170°F oven for about 3 hours.
- Leave the oven door propped open about 3 inches to allow moisture to escape.
- After 3 hours, turn the tomatoes over and press flat with your hand or a spatula.
- Continue to dry, turning the tomatoes every few hours, and gently pressing flatter and flatter, until tomatoes are dry.
- DEHYDRATOR (approximately 8 hours):.
- Place the tomatoes, cut side up, directly onto the dehydrator trays.
- Set dehydrator temperature to about 140°F.
- After 4 or 5 hours, turn the tomatoes over and press flat with your hand or a spatula.
- After a few hours, turn the tomatoes again and flatten gently.
- Continue drying until done.
- SUN-DRYING (approximately 3 days):.
- Dry in hot weather, with relatively low humidity.
- Place tomatoes, cut side down, in shallow wood-framed trays with nylon netting for the bottom of the trays.
- Cover trays with protective netting or cheesecloth.
- Place in direct sun, raised from the ground.
- on blocks or anything else that allows air to circulate under the trays.
- Turn the tomatoes over after about 1 1/2 days, to expose the cut side to the sun.
- Place the trays in a sheltered spot after sundown, or if the weather turns bad.
- ADDITIONAL NOTES FOR ALL METHODS.
- No matter what method you choose, be aware that not all of the tomatoes will dry at the same rate. They do not all have the same amount of moisture, nor do they experience the same temperature and air circulation while they are drying.
- They are done when they are very dry, but still pliable. Texture is about that of a dried apricot. If dried too long, they become tough and leathery. If not dried long enough, they will mold and mildew, unless packed in oil. So watch them carefully while they dry. Try to remove them on an individual basis, before they become tough.
"SUN-DRIED" TOMATOES
We love sun-dried tomatoes in lots of things, but they're expensive! And when the garden gave me an abundance of cherry tomatoes, I thought I'd try drying them. They're delicious! This will work with larger tomatoes (Roma are wonderful) as well as grape and cherry tomatoes. Just let dry longer!

- Wash tomatoes, pat dry and cut into pieces. For cherry tomatoes, cut in half; for others, cut into pieces, about 2x1", but this isn't fussy!
- Pat dry with paper towels again.
- Spray large baking tray with vegetable oil.
- If you have a cooling rack, place it on the baking tray and lightly spray it, too. (For very small cherry tomatoes, skip this. They'll just fall through as they dry!).
- Spread tomatoes evenly on rack/tray, trying not to have them touch.
- Place in 170 degree oven and let dry for 5-10 hours.
- OR cover with cheese cloth to keep bugs off and place in a really hot car with the windows up, set in the sun.
- Let tomatoes dry until they're crunchy and look like really dry raisins. Taste them! They should crunch!
- For longer storage, place in a freezer bag and freeze.
- When ready to use, take out what you want and cover with boiling water. Let set for about 20 minute.
