SUN-DRIED TOMATO BASIL PESTO
Simple to make and full of flavor, this sun-dried tomato pesto is one of my favorite sauces to add to chicken or pasta. I won't ever go back to store-bought varieties.

- Combine basil, sun-dried tomatoes, Parmesan cheese, lemon juice, garlic, and salt in the bowl of a food processor; pulse until blended. Pour olive oil in slowly, with the processor running, until a paste forms. Blend to desired texture.

Steps:
- Stir salt, poultry seasoning, onion powder, and black pepper together in a large stockpot. Pour vegetable broth, tomato juice, and water into the stockpot and stir to dissolve the salt mixture; add sun-dried tomatoes and basil leaves. Bring the mixture to a boil, reduce heat to medium, and cook the brine, stirring occasionally, until the seasonings are completely dissolved, about 20 minutes.

TUNA AND SUN-DRIED TOMATO SANDWICHES
Steps:
- In a bowl whisk together the mayonnaise, the yogurt, the garlic paste, the basil, the lemon juice to taste, and salt and pepper to taste and stir in the tuna, the olives, the sun-dried tomatoes, and the scallions. Divide the tuna mixture between the bottom halves of the bread, top the sandwiches with the arugula, and cover them with the top halves of the bread, pressing them firmly.

Steps:
- Core the stem area out from each tomato.
- Cut each tomato in half crosswise.
- Take each tomato half in hand- with the cut-side out- and give it a quick, gentle squeeze to force out the seeds.
- Use a finger to sweep remaining seeds out.
- Place each tomato, cut-side up, on a cookie sheet.
- Spray or drizzle olive oil across the top of each tomato half.
- Sprinkle garlic, basil, oregano across the tomatoes.
- Season with salt and pepper to taste.
- Bake in a 200°F oven for 4-6 hours or until the tomatoes are"dry" to the touch.
- When they are cool, cut each tomato half in quarters and store in fridge-- or start nibbling immediately.

A nice, light tomato sauce for your favourite pasta. The capers and sun dried tomatoes give the flavour of this sauce a big boost!

Steps:
- saute onions and garlic in olive oil until fragrant in large fry pan.
- add beef, pork and salt to pan and brown over medium high heat.
- before beef and pork are completely cooked through, reduce heat to low and add plum tomatoes, tomato paste, basil, oregano, and capers with brine.
- chop sun dried tomatoes and add to pan. add any optional ingredients, if desired.
- simmer over low heat for 20 minutes.
- enjoy!
