This quick recipe is best enjoyed on a hot summer day. It's a simple soup made with locally grown ingredients and tastes exquisite in the balmy July heat.

1 cucumber, roughly chopped
6 medium tomatoes (heirloom variety if possible)
½ oz basil leaves, stems removed
1 celery stalk, roughly chopped
½ red pepper, deseeded and roughly chopped
2 garlic cloves, grated
Juice of 1 lemon
1 tbsp extra-virgin olive oil, plus extra for drizzling
1 tbsp red wine vinegar
Sea salt and freshly ground black pepper

Steps:

  • Put all the ingredients in a food processor and blitz until smooth, then season to taste with salt and pepper.
  • Add some water to loosen the soup if needed, then divide it between bowls and drizzle some more oil on top to serve.

10 tomatoes, quartered
1 jalapeno
6 cloves garlic
3 tablespoons olive oil
Salt and freshly ground black pepper
1 link chorizo, casing removed
2 stalks celery, chopped
1/2 onion, chopped
1 carrot, chopped
1/2 cup white wine
1 tablespoon tomato paste
3 cups low-sodium chicken stock
1 (14-ounce) can diced tomatoes
1 bay leaf
5 sprigs fresh thyme
1 tablespoon cumin
1 cup heavy cream
1 pint cherry tomatoes

Steps:

  • Serving suggestions: cantaloupe balls, chopped tomatoes, chopped bell peppers, minced mint
  • Preheat oven to 350 degrees F.
  • Toss tomatoes, garlic cloves and jalapeno with olive oil, salt and pepper on a large sheet tray. Roast 25 minutes.
  • Brown chorizo in a large pot over medium-high heat. Add celery, onions and carrots and soften without browning. Deglaze with white wine. Add tomato paste and cook until bottom of pot begins to brown. Deglaze with stock. Add canned tomatoes, bay leaf, thyme and cumin. Simmer 30 minutes. Add heavy cream. Remove stems from herbs and blend mixture in a blender. Remove vegetables from oven and add to blender along with cherry tomatoes. Season with salt and pepper and chill. Check seasoning again, and serve with garnishes of your choice.

4 cups chopped ripe tomatoes (about 4 medium)
1 cup cucumber, peeled, finely diced
1 large red bell pepper, finely diced (or green)
1/2 cup sweet onion, finely diced (or green onions)
1/4 cup celery, finely diced
2 radishes, finely chopped
1/2 serrano chili, minced (optional, for those that like heat)
1/4 cup chopped mixed fresh herbs (basil, tarragon and or or chives)
1 large garlic clove, minced
1 teaspoon salt
1 teaspoon fresh ground pepper
1/8 teaspoon crushed saffron thread (I substitute marigold leaves)
2 cups water
3/4 cup tomato juice (or V-8)
1 tablespoon balsamic vinegar (or sherry or red wine)
1 tablespoon extra virgin olive oil
1/2 cup plain yogurt
1 medium garlic clove, finely minced
1 teaspoon fresh lime juice (or lemon)
1/4 teaspoon ground cumin

Steps:

  • In a large bowl, stir together all gazpacho ingredients. Cover and refrigerate 30 to 60 minutes.
  • In a small bowl, stir together all sauce ingredients; refrigerate until ready to serve. Drizzle soup with sauce; pass remaining sauce.

  • Remove the veins and seeds in the serrano chile for a milder flavor.

More of a drink than a soup, served in frosted glasses or chilled tumblers, gazpacho is perfect when it is too hot to eat but you need cold, salt and lunch all at the same time. Gazpacho is everywhere in Seville, Spain, where this recipe comes from, but it's not the watered-down salsa or grainy vegetable purée often served in the United States. This version has no bread and is a creamy orange-pink rather than a lipstick red. That is because a large quantity of olive oil is required for making delicious gazpacho, rather than take-it-or-leave it gazpacho. The emulsion of red tomato juice, palest green cucumber juice and golden olive oil produces the right color and a smooth, almost fluffy texture.

Number Of Ingredients 8

About 2 pounds ripe red tomatoes, cored and roughly cut into chunks
1 Italian frying (cubanelle) pepper or another long, light green pepper, such as Anaheim, cored, seeded and roughly cut into chunks
1 cucumber, about 8 inches long, peeled and roughly cut into chunks
1 small mild onion (white or red), peeled and roughly cut into chunks
1 clove garlic
2 teaspoons sherry vinegar, more to taste
Salt
1/2 cup extra-virgin olive oil, more to taste, plus more for drizzling

Steps:

  • Combine tomatoes, pepper, cucumber, onion and garlic in a blender or, if using a hand blender, in a deep bowl. (If necessary, work in batches.) Blend at high speed until very smooth, at least 2 minutes, pausing occasionally to scrape down the sides with a rubber spatula.
  • With the motor running, add the vinegar and 2 teaspoons salt. Slowly drizzle in the olive oil. The mixture will turn bright orange or dark pink and become smooth and emulsified, like a salad dressing. If it still seems watery, drizzle in more olive oil until texture is creamy.
  • Strain the mixture through a strainer or a food mill, pushing all the liquid through with a spatula or the back of a ladle. Discard the solids. Transfer to a large pitcher (preferably glass) and chill until very cold, at least 6 hours or overnight.
  • Before serving, adjust the seasonings with salt and vinegar. If soup is very thick, stir in a few tablespoons ice water. Serve in glasses, over ice if desired, or in a bowl. A few drops of olive oil on top are a nice touch.

The soup we know as gazpacho originated in Spain's southern region of Andalusia. Farm harvesters traditionally prepared their lunches in the fields by pounding garlic, stale bread, water, olive oil, and salt in a large wooden bowl, forming a sort of nourishing paste to which they added cold water. Legend maintains that Christopher Columbus took barrels of this paste on his first voyage to the New World. Discovering tomatoes, cucumbers, and bell peppers in the Andes, he added them to the mix, creating the liquid salad we still call gazpacho. From "The Florida Keys Cookbook". 3/4 cup finely diced red onion
3/4 cup finely diced red bell pepper

1 cup reduced-sodium Clamato juice
1 cup organic chicken broth or 1 cup vegetable broth

3 tablespoons snipped fresh chives or 1 tablespoon dried chives

1 English cucumber, peeled, sliced thin, then diced (about 1 1/2 cups)

Steps:

  • ONE DAY AHEAD:.
  • Place olive oil in a 5-quart saucepan over medium heat.
  • When oil is hot, add onions, red and green peppers and garlic. Saute until soft, about 7 minutes.
  • Add tomato juice, V-8 juice, Clamato juice, chicken broth, parsley, basil and chives.
  • Season with salt and pepper to taste.
  • Raise heat to high and bring mixture to boil.
  • Immediately remove from heat and add tomatoes and cucumber.
  • Stir to combine.
  • Transfer soup to a covered container and refrigerate overnight to marry flavors.
  • TO SERVE:.
  • Transfer soup to individual bowls.
  • Serve soup cold with sides of bread, cheese, croutons, or crackers.
  • NOTE: The secret to a good gazpacho is the harmonious marriage of flavors. This soup is best at peak harvest season, when vine-ripened tomatoes, peppers, and cucumbers are available.

2 medium cucumbers, peeled & diced
2 lbs ripe tomatoes, chopped (6 large)
1/2 medium red bell pepper, coarsely chopped
1 clove garlic, chopped

1/4 cup red onion, thinly sliced
3 tablespoons fresh lemon juice
1 tablespoon olive oil
salt
pepper
celery salt or garlic salt
red pepper flakes
avocado
radish
cilantro, for garnish
6 tablespoons yogurt or 6 tablespoons sour cream (optional)
1/2 cup water

Steps:

  • In a blender or very large food processor puree the tomatoes, red pepper, garlic, carrots, lemon juice, spices, olive oil,@ 1/2 of the cucumber chunks and a 1/2 cup of water.
  • Pour into a large bowl or tupperware container, stir in the remainder of the diced cucumber.
  • Cover and chill overnight or for at least three hours.

  • In the bowl of a food processor or in a blender, combine the shallots with the onion, and pulse until finely chopped, but do NOT puree! Turn into a bowl. Place the cucumber, fennel, and hot pepper into the food processor and do the same, then add those to the onion mixture. Then add half of the tomatoes with one slice of the bread, pulse, and turn those into the bowl as well. Finally, pulse the rest of the tomatoes with the remaining slice of bread, add them to the lot, and stir to mix.
  • Scoop one cup of the vegetable mixture back into the food processor, then add the tomato juice, olive oil, and vinegar and season with salt and pepper. Puree the mixture then add it to the bowl, along with the diced zucchini and bell pepper and stir to mix.
  • Check the seasonings. Chill the soup for at least three hours, and up to two days (the longer you let sit in the fridge, the more the flavors meld), and serve quite cold. Stir well before serving, adjust the seasonings as needed, and pass the diced avocado and lime wedges on the side if desired. You may also want to give the portions an final drizzle of extra virgin olive oil.

  • Place the diced onions in a small bowl and cover with cold water. Let soak for 10 minutes, then drain.
  • Using a serrated knife, cut the tomatoes in half through their “equator.” Holding each tomato half over a large mixing bowl, use a finger to scoop out the seeds and juices (those will make up part of the dressing). You can also gently squeeze the tomato half to push out the seeds. Remove the cores and dice the tomatoes, then add it to the bowl with the tomato juices/seeds along with the drained onions and remaining salad ingredients. Toss well.
  • Chill the salad the refrigerator for at least 1-1/2 hours and up to 4 hours to allow the flavors to marry. During this time, the vegetables will exude more juice so you'll need to taste and adjust the seasoning with salt, pepper, balsamic vinegar, and more Tabasco before serving, if necessary. Spoon the vegetables and dressing into bowls and serve cold with soup spoons.
  • Note: It may seem odd to juice and seed the tomatoes when they end up as part of the salad anyway. The reason behind that is to preserve both. Otherwise, they tend to spill off the cutting board and make a mess (especially if you have very juicy tomatoes).
