3 tablespoons coarsely chopped fresh flat-leaf parsley
2 tablespoons coarsely chopped fresh oregano, plus sprigs for garnish
1 tablespoon coarsely chopped fresh thyme
1 garlic clove, minced
1/4 cup extra-virgin olive oil
Coarse salt and freshly ground pepper
2 small zucchini, cut into 1/8-inch-thick rounds
2 small yellow summer squash, cut into 1/8-inch-thick rounds
6 sheets phyllo dough (each 12 by 17 inches), thawed if frozen
3 tablespoons unsalted butter, melted
1/2 cup pitted Kalamata olives

Steps:

  • Preheat oven to 375 degrees. Stir together herbs, garlic, and 3 tablespoons oil; season with salt and pepper. Toss zucchini and squash with 1 tablespoon oil in a separate bowl; season with salt and pepper.
  • Unfold dough; cover each sheet with a clean, slightly damp kitchen towel. Brush a rimmed baking sheet with butter. Press 1 sheet of dough into baking sheet. Lightly brush dough with butter. Repeat, layering remaining 5 sheets dough and brushing each with butter.
  • Spread herb mixture over dough. Spread zucchini and squash on top; top with olives. Bake until edges are browned, 25 to 30 minutes. Let cool slightly. Cut into 6 pieces; garnish with oregano.

This is such a versatile recipe: it can be served as an appetizer, for brunch or lunch or as a side dish. And it's delicious! I found it on a French-Canadian website - frenchfood.about.com - and I have adapted it for the 2005 Zaar World Tour.

3 tablespoons parsley, chopped (flat leaf or curly, whatever you prefer)
2 tablespoons fresh oregano, chopped (don't substitute dried)
2 tablespoons fresh thyme, chopped
4 garlic cloves, crushed
1/4 cup extra virgin olive oil
2 small zucchini, sliced with a mandoline (or very thinly sliced)
2 small summer squash, sliced with a mandoline (or very thinly sliced)
6 sheets phyllo dough, thawed
3 tablespoons unsalted butter, melted
1/2 cup kalamata olive, pitted
salt, to taste
fresh ground pepper, to taste

Steps:

  • Preheat the oven to 375ºF.
  • Brush a rimmed baking sheet with butter.
  • Slice the zucchini and summer squash.
  • Mix the herbs, garlic and 3 tablespoons of oil together.
  • Put the sliced zucchini and summer squash in a bowl, toss with 1 tablespoon of the oil and season with salt and pepper, to taste.
  • Work with one sheet of the phyllo dough at a time, and keep the other sheets covered with a damp towel.
  • Press one sheet of the phyllo onto the prepared pan and brush it with the melted butter. Repeat with the remaining sheets, brushing each with the butter.
  • Spread the herbed oil mixture over the last layer of dough, top with the zucchini and squash and dot with the olives.
  • Bake for 25 minutes, or until the edges have just begun to turn brown.
  • To serve: Remove the tart from the oven and allow it to cool slightly. Cut into 6 pieces and serve.

1 lb mixed summer squash (zucchini, yellow squash and pattypan, cut into 1/4-inch rounds)
2 shallots, thinly sliced
2 teaspoons fresh thyme or 2 teaspoons fresh marjoram, chopped
1 teaspoon chopped garlic
fresh ground black pepper
1 refrigerated pie crust (from a 15-ounce box)
4 ounces Roquefort cheese (or other good-quality blue cheese) or 4 ounces gorgonzola (or other good-quality blue cheese)
1 roasted yellow peppers (freshly roasted or from a jar) or 1 red pepper (freshly roasted or from a jar)
1 large plum tomato, sliced and seeds removed
1 large egg, beaten

Steps:

  • Heat oil in large nonstick skillet over medium heat.
  • Add squash and shallots and cook, turning pieces as they start to color, 7 minutes or until crisp-tender.
  • Remove from heat, stir in thyme, garlic and pepper to taste, cool to room temperature.
  • Heat oven to 400 degrees F.
  • Line a baking sheet with parchment paper, unroll or unfold pie crust on the parchment.
  • With a rolling pin, roll crust to a 13-inch round.
  • Crumble half the cheese over crust to within 2 inches of edge.
  • Arrange squash mixture, pepper strips and tomato slices on cheese; fold edge of the crust over filling and brush crust with egg.
  • Bake 35-40 minutes or until pastry is golden.
  • Slide tart, still on parchment, onto a wire rack.
  • Crumble remaining cheese over top.
  • Let cool before serving.

All-purpose flour, for dusting
1/2 recipe Pate Brisee for Summer Squash Lattice Tart
2 medium green zucchini
2 medium yellow squash
Coarse salt and freshly ground pepper
2 tablespoons unsalted butter
2 large leeks, white parts only, cut into 1/3-inch dice
1/2 cup grated Gruyere cheese (1 ounce)
1 large whole egg
1 large egg yolk
1/4 cup heavy cream
Extra-virgin olive oil, for brushing

Steps:

  • Preheat oven to 375 degrees. Have ready a 14-by-4 1/2-inch bottomless rectangular tart form or one with a removable bottom on a parchment-lined baking sheet. On a lightly floured surface, roll pate brisee dough into a 7-by-16-inch rectangle. Fit the dough into the mold, and trim the sides flush with the top of the mold. Transfer the shell to the freezer to chill for 20 minutes.
  • Remove the shell from the freezer, prick bottom with a fork, and line with parchment paper cut to fit. Fill with dried beans or metal pie weights. Bake until the crust is just beginning to brown, about 15 minutes. Remove from the oven, and remove beans or weights. Return the crust to the oven, and bake until golden brown, about 10 minutes more. Remove from the oven, and set aside on a wire rack.
  • Using a mandoline or vegetable peeler, very thinly slice 1 green zucchini and 1 yellow squash lengthwise. Place slices in a colander in a single layer, and sprinkle lightly with salt. Place colander in a bowl, and set aside to drain for 30 minutes.
  • Cut the remaining zucchini and squash into 1/3-inch dice. In a large skillet, melt butter over high heat. Add leeks and diced squash, and season with salt and pepper. Cook until golden brown but still firm, about 8 minutes. Evenly distribute cooked vegetables in the crust. Sprinkle Gruyere on top.
  • Place salted squash slices between double layers of paper towels. Gently press down to remove as much liquid as possible. Alternating squash colors, weave a lattice pattern over the top of the cheese and vegetables, covering the entire surface. Trim or tuck in ends to fit.
  • In a medium bowl, whisk together egg, egg yolk, and cream, and season with salt and pepper. Lift the edges of the lattice in several places, and pour in the egg mixture. Using a pastry brush, coat the lattice with olive oil. Bake, loosely covered with aluminum foil, until the custard is set, 30 to 35 minutes. Remove lattice tart from oven, and place on a wire rack to cool slightly before serving.

1 1/2 cups all purpose flour
1/2 teaspoon salt
6 tablespoons chilled unsalted butter, cut into 1/2-inch cubes
3 tablespoons chilled solid vegetable shortening, cut into 1/2-inch cubes
4 tablespoons (about) ice water
5 ounces soft fresh goat cheese
1/2 cup whipping cream
1/4 cup sour cream
1/8 teaspoon salt
Generous pinch of cayenne pepper
3 large eggs
2 tablespoons olive oil
1 small red bell pepper, stemmed, seeded, cut into 1/2-inch strips
1/2 medium fennel bulb, cored, cut lengthwise into 1/2-inch strips
1 small zucchini (about 5 ounces), halved lengthwise, cut crosswise into 1/2-inch pieces
1 small yellow squash (about 5 ounces), halved lengthwise, cut crosswise into 1/2-inch pieces
1/2 cup fresh corn kernels
1 tablespoon chopped fresh basil

Steps:

  • Blend flour and salt in processor. Using on/off turns, cut in butter and shortening until pea-size pieces form. With machine running, add enough ice water by tablespoonfuls to form moist clumps. Gather dough into ball; flatten into disk. Wrap in plastic; refrigerate 1 hour. (Can be made 1 day ahead. Keep refrigerated. Soften dough slightly at room temperature before continuing.)
  • Roll out dough on lightly floured surface to 12-inch round. Transfer to 9-inch-diameter tart pan with removable bottom. Trim dough overhang to 1 inch. Fold overhang in; press to form double-thick sides. Pierce bottom of dough all over with fork. Refrigerate 1 hour.
  • Preheat oven to 400°F. Bake crust until golden, piercing with fork if bubbles form, about 20 minutes. Cool 5 minutes. Reduce oven temperature to 375°F.
  • Whisk cheese, cream, sour cream, salt, and cayenne in medium bowl to blend. Add eggs and whisk to blend. Pour into prepared crust. Bake until filling is set, about 20 minutes. Cool 10 minutes.
  • Meanwhile, heat oil in large skillet over medium heat. Add bell pepper and fennel and sauté until beginning to soften, about 4 minutes. Add zucchini, yellow squash, and corn; sauté until all vegetables are tender, about 12 minutes. Season with salt and pepper. Mound vegetables on top of tart and sprinkle with basil. Serve warm or at room temperature.
