SUMMER SLAW RECIPE
Summer Slaw is a deli-style cole slaw recipe loaded with fresh summer ingredients of cabbage, tomatoes, cucumbers, and green onions in a creamy cole slaw dressing that is lighter than most slaw recipes. This slaw recipe was created after I tried my local deli's summer slaw salad, it's light and refreshing with a semi-sweet creamy dressing perfect for summer!

Steps:
- In a large bowl, combine the diced tomatoes, cucumbers, cabbage, and scallions. Set aside.
- To make the dressing whisk together all the dressing ingredients until smooth.
- Pour dressing over the slaw and toss everything together. Keep refrigerated and stir before serving.

Steps:
- Make the dressing by blending all of the ingredients in a food processor (or very finely chop them), saving a few herb leaves for the salad. You can make the dressing up to 24 hrs before serving.
- Scatter the beans and spinach over a large platter. Arrange the tomatoes, cucumber, mango, onion and radishes on top and gently toss together with your hands. Top the salad with the avocados, feta and herbs, and serve the dressing on the side.

SUMMERTIME SLAW

- In a large saucepan, combine the sugar, vinegar, oil, water, salt, pepper and, if desired, pepper flakes. Cook and stir over medium heat until mixture comes to a boil. Cook 2 minutes longer or until sugar is dissolved. Cool to room temperature, stirring several times., In a large salad bowl, combine the coleslaw mix, tomatoes, onion, peppers and pickle relish. Add the dressing and toss to coat. Cover and refrigerate overnight. Serve with a slotted spoon.

MISO-GLAZED SALMON COLD NOODLE SALAD

Steps:
- Cook the ramen noodles (minus the seasoning packs) to very al dente according to the package instructions. Let cool.
- Mix together the peanut butter, lime juice and 1/3 cup Asian dressing. Toss with the cabbage mix and cold noodles. Let sit for at least 30 minutes, tossing a couple times in between.
- Position a rack in the middle of the oven and preheat to broil. Line a baking sheet with parchment paper.
- Mix the miso, honey and remaining 2 tablespoons Asian dressing in a small bowl. Season with salt if necessary. Liberally brush both sides of the salmon with the miso glaze. Place on the prepared baking sheet and broil on the middle rack until the fish is browned, the flesh is opaque and the interior is 145 degrees F, 8 to 10 minutes.
- Place the cooked salmon on top of the cold noodle salad. Garnish with a liberal sprinkling of toasted sesame seeds and scallion greens.
SALMON SALAD
Steps:
- Break the salmon into very large flakes, removing any skin and bones, and place the salmon in a bowl. Add the celery, red onion, dill, capers, raspberry vinegar, olive oil, salt, and pepper. Season, to taste. Mix well and serve cold or at room temperature.
PICNIC MARINATED SUMMER SLAW
Oh, such a summertime taste. This easy-to-prepare slaw was given to me by a neighbor who said a little lady from her church gave it to her! A refreshing and delightful change for slaws. Tastes delicious after allowing to marinate for several hours. Enjoy!

- Combine cabbage, cucumber, green bell pepper, tomato, and green onions in a large bowl.

- Whisk together mayonnaise, 1 teaspoon lemon juice, chives, mustard, cayenne, and 1/4 teaspoon each of salt and pepper in a medium bowl.
- Stir together salmon, crackers, 3/4 cup zucchini, and half of mayonnaise mixture in another bowl.
- Add fennel and remaining zucchini and lemon juice to mayonnaise mixture in medium bowl and toss to combine slaw.
- Form salmon mixture into 2 (3-inch) patties. Heat oil in a small nonstick skillet over medium heat until hot, then cook salmon cakes, carefully turning once, until golden and salmon is just cooked through, about 6 minutes total.
- Serve with slaw.
SUMMER SALMON AND SLAW SALAD

- Combine cabbage and peppers in large bowl. Combine dressing ingredients and whisk to blend. Pour three fourths of dressing over slaw mixture and set aside in refrigerator. Stir together mustard, pepper sauce, cumin and black pepper and rub over flesh side of salmon (if salmon is skinless, rub on both sides.) Preheat very heavy skillet over high heat. Add olive oil to pan, and add salmon, seasoned side down. Sear for about 10 minutes. Turn salmon over, turn heat down to low-medium and cover pan. Continue to cook until salmon is cooked throughout and begins to flake. (10 to 15 minutes) Remove skin, and set salmon aside to cool to room temperature. To serve, divide slaw mixture on four individual plates and place chunks of salmon on top. Drizzle salmon with remaining dressing.
