Bake white fish in an aromatic paste of chilli, ginger, coriander, lime and creamed coconut, for a quick, Asian-inspired midweek meal

2 limes
100g creamed coconut from a block, chopped
1 green chilli , deseeded and roughly chopped
handful coriander
large knob of ginger , peeled and chopped
2 garlic cloves , chopped
½ tsp fish sauce , plus extra to taste
4 pieces white fish , skin on (we used sustainable cod)
steamed rice , to serve
thin-stemmed broccoli , to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Zest and juice the limes. In the small bowl of a food processor, whizz together the lime zest and juice with the remaining ingredients, except the fish, until a smooth paste forms. Taste and add a little more fish sauce if you feel it is needed.
  • Put the fish on a baking tray and spread over the coconut mixture. Bake in the oven for 15-20 mins until the fish is cooked through. Serve with steamed rice and thin-stemmed broccoli.

Recipe video above. Poached Salmon in a coconut lime sauce that tastes like a Thai coconut curry - except it's super quick and easy to make! Even though the salmon is poached, it's well worth searing lightly to brown for the extra flavour on both the salmon and in the sauce.

4 salmon fillets (, 180g/6oz each preferably skinless (Note 1))
Salt and pepper
2 tbsp oil (, separated)
2 garlic cloves (, finely grated)
2 tsp ginger (, finely grated)
1 lemongrass (, peeled, finely grated (Note 2))
1 tbsp brown sugar
1 tsp chilli garlic paste (or other chilli paste, adjust to taste (Note 3))
400 g/14oz coconut milk ((Note 2))
1 tbsp fish sauce ((or soy sauce))
2 tsp lime zest ((1 lime))
Lime juice (, to taste)
Fresh coriander/cilantro leaves (, finely chopped (recommended))
Finely sliced large red chillies ((optional))
Vermicelli noodles OR (, soaked per packet, or rice)
Steamed jasmine rice
Steamed Asian greens

Steps:

  • Sprinkle both sides of salmon with salt and pepper.
  • Heat 1 tbsp oil in a non stick pan or well seasoned skillet over medium high heat. Add salmon, skin side up, and sear for just 1 1/2 minutes until golden. Turn salmon and cook the other side just for 1 minute, then remove onto a plate (should still be raw inside).
  • Turn heat down to medium low and allow skillet to cool.
  • Heat remaining 1 tbsp oil. Add garlic, ginger and lemongrass. Cook until garlic is light golden ~ 1 minute.
  • Add sugar and cook for 20 seconds until it becomes a caramel (see video). Then stir in chilli paste.
  • Add coconut milk and stir, scraping the bottom of the skillet to dissolve any bits stuck on the base into the sauce.
  • Stir in fish sauce, increase heat to medium. Simmer for 2 minutes.
  • Place salmon into the sauce, lower heat and simmer gently for 4 minutes, or until just cooked.
  • Remove salmon, stir in lime zest and juice to taste. Adjust salt to taste with fish sauce.
  • Serve salmon over noodles or rice. Spoon over sauce, garnish with coriander and chili if using.

1 bunch fresh coriander
1 red chili, fresh
600 g white fish fillets
1 lime, juice
1 lime, zest

Steps:

  • In a large saucepan heat the fish stock, coconut cream, and ginger. Sprinkle with salt to taste.
  • Bring to a gentle simmer for 10 minutes.
  • Add the fish and lime juice, poach for 5 minutes until just cooked through.
  • Garnish with fresh coriander, chopped, and chilli, sliced.
  • Serve with your choice of steamed rice.

1 1/2 pounds pork tenderloin, cut into 1-inch cubes
1 13.5-ounce can coconut milk
2 tablespoons vegetable oil, plus more for the grill
4 cloves garlic, smashed
1/3 cup plus 1 tablespoon packed dark brown sugar
1/3 cup chopped fresh cilantro, plus more for topping
2 tablespoons fish sauce
2 tablespoons fresh lime juice
2 tablespoons Sriracha (Asian chile sauce)
Romaine lettuce leaves, for serving
Chopped roasted peanuts, scallions and cucumber, for topping

Steps:

  • Toss the pork with half of the coconut milk, the vegetable oil, garlic, 1/3 cup each brown sugar and cilantro, and 1 tablespoon each fish sauce, lime juice and Sriracha in a large bowl. Cover and refrigerate 1 to 4 hours.
  • Preheat a grill to medium and lightly brush the grates with vegetable oil. Thread the pork onto eight 10-inch skewers. Grill the kebabs, turning occasionally and brushing with the remaining coconut milk, until marked and cooked through, about 12 minutes.
  • Meanwhile, combine 1 tablespoon water and the remaining 1 tablespoon each brown sugar, fish sauce, lime juice and Sriracha in a small bowl. Serve the kebabs in romaine leaves and drizzle with the sauce. Top with chopped peanuts, scallions, cucumber and cilantro.
  • If you're using wooden skewers, soak them in water for 20 minutes to prevent scorching.

Jamaican curry powder plays a major role in this deeply savory weeknight dish, giving the sauce its unique flavor and golden hue. The traditional spice blend is heavy on the turmeric, and benefits from being toasted, which brings out its notes. This recipe calls for frozen whiting, which doesn't hold up to frying but shines here, simmered in a sauce studded with red and green bell peppers. If whiting is unavailable, cod is also a good choice.

2 tablespoons olive oil
2 medium red bell peppers, deseeded and sliced into 1/4-inch-thick strips
2 medium green bell peppers, deseeded and sliced into 1/4-inch-thick strips
1 medium onion, sliced
Kosher salt and freshly cracked black pepper
1 1/2 tablespoons Jamaican curry powder (hot or mild)
2 garlic cloves, minced
1 tablespoon grated ginger
4 (6-ounce) fillets frozen fish, such as whiting or cod
1 (14-ounce) can coconut milk
1 lime
2 scallions, trimmed and thinly sliced, for garnish
Fresh cilantro leaves and tender stems, for garnish
White rice or couscous, for serving

Steps:

  • Heat a medium (10-inch) saucepan with deep sides over medium-high. Drizzle in olive oil to cover the bottom of the pan. Add red and green bell peppers and onion, and sauté until softened, about 3 to 4 minutes. Season with salt and pepper.
  • Add the curry powder to the pan, and toast for about 1 minute, stirring often to keep the curry from scorching. Stir in the garlic and cook until fragrant, about 30 seconds. Stir in the grated ginger and cook until fragrant, about 30 seconds.
  • Place fish on top of cooked vegetables, or nestle them into the vegetables, if your pan is becoming too full. Pour coconut milk over fish and vegetables.
  • Cover and simmer over medium-low until fish is cooked and starts to flake, about 20 minutes. Adjust seasoning with salt and pepper. Squeeze lime to taste over the top and garnish with scallions and cilantro. Serve with white rice or couscous.

2 tablespoons finely chopped palm sugar
400 ml coconut cream
2 tablespoons finely grated kaffir lime zest
2 birds eye chiles, chopped finely
4 thick snapper steaks
2 tablespoons raspberry vinegar
250 g fresh raspberries
600 g pawpaw, chopped
1 tablespoon chopped of fresh mint

Steps:

  • Combine sugar, cream, rind and chilies in small pan.
  • Simmer stirring occasionally for about 10 minutes; cool.
  • Poor the coconut mixture over the fish in a large bowl.
  • Leave at this stage for 3 hours or overnight.
  • Drain the fish over a small pan, reserving the marinade.
  • Cook the fish uncovered on a heated oiled bbq plate or frypan until browned both sides and just cooked through- approx 3-4 minutes each side.
  • Meanwhile place the reserved marinade on the bbq bring to the boil and simmer uncovered until thickened slightly.
  • Drizzle the marinade over the cooked fish and serve with the salsa.
  • SALSA- Combine all ingredients in a bowl and leave for approx 30 minutes.

3 garlic cloves, chopped
1 bunch fresh coriander (cilantro)
2 tablespoons of grated fresh ginger
2 hot chili peppers (alter to suit taste)
1 large red onion
2 teaspoons cumin
1 teaspoon ground coriander
1 teaspoon cumin seed
2 teaspoons garam masala
1 teaspoon ground turmeric
4 large white fish fillets (dory, cod etc)
16 tablespoons coconut cream
1 lime, juice of, only

Steps:

  • In a frying pan saute the garlic, onion, ginger and chillies until soft. ADD the spices and more oil if necessary.
  • Blend the fried food with the coriander and juice of one lime LEAVING OUT the fish and coconut cream. Leave overnight (you can freeze batches of marinade too).
  • Take your fish fillets and cut in half so you should have 8 serves. Smother the marinade over the fish generously. Leave to marinade at least for four hours best overnight.
  • Take some aluminium foil, break off enough to make a loose parcel to hold the fish.
  • Get your coconut cream and on the foil put 2 to 3 tablespoons of the coconut cream, place one fish fillet on top, join up the foil allowing for a lot of space.
  • Cook on the barbq of in a hot oven for about 10-15 minutes The fish steams itself in the coconut cream - this is so yummy a great dinner party dish - serve with plain rice, mango salsa and a dry white wine.

4 fish steaks (mahi mahi, tilapia, catfish) or 4 fillets (mahi mahi, tilapia, catfish)
1 tablespoon garam masala
2 tablespoons vegetable oil
2 onions, sliced
2 garlic cloves, sliced
1 dried hot pepper (or pepper flakes to taste)
1 large fresh tomatoes, seeded or 1 tablespoon sun-dried tomato paste
1 teaspoon additional garam masala or 1 tablespoon mild red curry paste
1 1/2 cups coconut milk
1 to 2 lime, juice of

Steps:

  • Rub fish with garam masala and brown on each side in hot oil in a skillet. The fish shouldn't cook through. Remove from skillet.
  • Saute onion and garlic in additional oil (if needed) in the skillet with the lid on, stirring occasionally, until onions are tender and slightly browned. Add pepper, tomato, and more garam masala. Cook with the lid on for a minute to "melt" the tomato.
  • Add the coconut milk and simmer 5 minutes, stirring often. Add the fish and simmer, covered, until cooked through, about 5 minutes longer.
  • Squeeze lime juice over fish and sauce. Remove the hot pepper. Serve over hot cooked rice.
