Homemade Cinnamon Sugar Pumpkin Seeds Recipe! Don't throw away the seeds when you carve pumpkins this year! Save them and make this recipe for the perfect sweet and salty fall snack! Vegan, gluten-free and dairy-free! and paleo-friendly!

3 cups pumpkin seeds (dried for at least 24 hours)
3 TBS coconut oil (or butter)
½ tsp pure vanilla extract
4 TBS granulated sugar*
2 tsp ground cinnamon
1 tsp sea salt

Steps:

  • Remove from pumpkins and rinse thoroughly. Spread out in a single layer on a baking sheet lined with paper towels. Let sit at room temperature for 24 hours, changing the damp paper towels out for dry ones after about 12 hours and stirring occasionally.
  • Preheat oven to 325°F. Very lightly grease a large baking pan, set aside.
  • In a small bowl, mix together sugar, cinnamon, and salt. Set aside.
  • Melt coconut oil or butter in a large microwave safe bowl or on the stovetop in a 4-quart pot.
  • Remove from heat and stir in vanilla.
  • Mix in pumpkin seeds until they are all evenly coated.
  • Add dry ingredients to the pumpkin seeds and mix until all they are evenly coated.
  • Spread pumpkin seeds on your prepared baking pan in single layer.
  • Bake for 25-35 minutes, stirring every 10 minutes, until seeds begin to brown.
  • To test for doneness: remove a few seeds from the pan and let sit on the counter to cool. If they harden up the seeds are done. If they remain soft, return to the oven, checking them after 5 minutes. Continue baking in 5 minute intervals until done.
  • Once seeds are done, transfer them from the warm pan to another pan lined with parchment paper to let cool.

We double up the pumpkin flavor by using everyone's favorite seasonal spice blend. A touch of brown sugar makes them into a sweet treat.

2 cups raw pumpkin seeds (from 1 large pumpkin)
1/4 cup dark brown sugar
2 tablespoons unsalted butter, melted
2 teaspoons pumpkin pie spice
Pinch of kosher salt

Steps:

  • Preheat the oven to 300 degrees F.
  • Place the pumpkin seeds in a colander and rinse away all the pulp and stringy stuff.
  • Spread the seeds out on a rimmed baking sheet and roast until dried out, 30 to 45 minutes.
  • Toss the pumpkin seeds with the sugar, butter, pumpkin pie spice and salt in a medium bowl until evenly coated.
  • Return the seeds to the baking sheet, spread them out and roast until dry, about 35 minutes.
  • Let cool, then break up into pieces before serving.

Nonstick cooking spray, for spraying the parchment
1/2 cup lightly packed light brown sugar
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground allspice
1/2 teaspoon ground cumin
Pinch of cayenne pepper
1 large egg white
2 cups salted pumpkin seeds

Steps:

  • Preheat the oven to 300 degrees F. Line a baking sheet with parchment paper and spray with nonstick cooking spray.
  • In a small bowl, combine the sugar, cinnamon, allspice, cumin and cayenne. In a large bowl, beat the egg white until frothy. Stir in the pumpkin seeds, then add the sugar mixture and toss until the seeds are completely coated.
  • Spread the seeds out on the prepared baking sheet. Bake until crispy, 20 to 25 minutes. Let cool completely. Store in an airtight container.

2 cups raw whole pumpkin seeds
2 tablespoons butter, melted
½ cup white sugar, divided
1 tablespoon ground cinnamon, divided

Steps:

  • Remove all the pulp and strings from the pumpkin seeds, then wash and thoroughly dry the seeds.
  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Place the melted butter in a bowl, toss the seeds in the butter to coat, and pour them onto the prepared baking sheet. Sprinkle about 2 tablespoons of sugar and 1 teaspoon cinnamon over the seeds, stir the seeds around to mix the coating, and spread them into a single layer. Bake the seeds in the preheated oven for 5 minutes.
  • Remove the seeds from the oven, and sprinkle them with another coating of 2 tablespoons sugar and 1 teaspoon cinnamon, mixing the seeds together and spreading them out as before. Bake 5 more minutes. Repeat the coating and baking step one more time, and bake the seeds for 5 more minutes.
  • Sprinkle the seeds with the remaining 2 tablespoons of sugar, mix, and bake the sugar coating onto the seeds, about 10 more minutes. Let the seeds cool on the baking sheet before eating.

5 tablespoons sugar
1/4 teaspoon salt
1/4 teaspoon ground cumin
1/4 teaspoon ground cinnamon
1/4 ground ginger
1 pinch cayenne pepper, to taste
1 1/2 tablespoons peanut oil

Steps:

  • Preheat oven to 250°F.
  • Remove and wash seeds from pumpkin.
  • Spread seed on cookie sheet bake for 1 hour stirring occasionally, about one hour.
  • Combine in bowl 3 tablespoons sugar, salt, cumin, cinnamon, ginger, cayenne.
  • Heat peanut oil in large skillet over high heat.
  • Add pumpkin seeds and remaining 2 tablespoons sugar.
  • Cook until sugar melts and seeds caramelize (about 45 seconds).
  • Transfer to bowl with spices and coat well.
  • Let cool.
  • Store for up to 1 week in airtight container.
