CRANBERRY-BRIE KNOTS
Two of the holiday season's most popular ingredients-cranberries and Brie-team up in this easy appetizer. Twist them with fluffy pizza dough and bake until golden for the ideal handheld starter.

Steps:
- Brush the bottom of a rimmed baking sheet with 1 tablespoon olive oil and place the pizza dough on top. Brush the top of the dough with the remaining 1 tablespoon olive oil and cover lightly with plastic wrap. Let rest at room temperature until just about doubled in size, 1 hour.
- Cut off the rind from the sides of the Brie wheel, then cut the Brie into 18 equal-sized cubes. Set aside.
- Lightly flour a work surface. Using floured hands, shape the dough into an 18-by-4-inch-rectangle. Using a pizza cutter or sharp knife, cut the dough into eighteen 1-inch-wide strips.
- Shape each strip into a 10-inch-long rope and tie into a knot, tucking the two ends of the rope underneath it. Divide the knots between two baking sheets and let rest until slightly puffed, 40 to 45 minutes.
- Meanwhile, position the oven racks in the upper and lower thirds of the oven and preheat to 425 degrees F.
- Cut a small slit in the top of each knot with a sharp paring knife and use your fingers to create a small well. Spoon a heaping 1/4 teaspoon cranberry sauce into each well and top with 1 piece of Brie. Reserve the remaining cranberry sauce for serving.
- Brush the tops of the knots with 4 tablespoons of the butter. Sprinkle with the Italian seasoning, 1/2 teaspoon salt and a few grinds of black pepper. Bake until the cheese is melted, and the dough is fully cooked and turning light golden, 20 to 25 minutes. Let rest for 10 minutes before serving.
- Meanwhile, stir together the remaining cranberry sauce and 2 tablespoons butter in a small bowl. Serve with the knots for dipping.
BRIE, CRANBERRY AND PROSCIUTTO BITES

- Unmold the cranberry sauce from the can, and slice into 1/4-inch-thick rounds. Trim the rounds into 1-inch squares.
- Remove the outer rind from the wheel of Brie, leaving the top and bottom rind intact. Cut across into 3/4-inch-thick slices, then cut the slices into 1-inch pieces.
- Put Brie squares on mini toasts and top with pieces of cranberry sauce, then wrap in prosciutto and secure with decorative toothpicks. Serve at room temperature.
PROSCIUTTO, BRIE AND APRICOT CROSTINI

- Preheat the oven broiler. Put the baguette slices on a baking sheet lined with foil. Cut the Brie into 1/4-inch-thick slices and top each piece of bread with a slice. Broil until the cheese melts, 1 to 2 minutes.

- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Arrange the crescent roll triangles on the prepared baking sheet with the points sticking out, overlapping the bases to form an 8-inch (20 cm) circle.
- Spoon the cranberry sauce onto the bases of the crescent dough triangles and top with the brie wedges. Fold the pointed ends of the dough over the cranberry sauce and brie and tuck underneath to seal.
- Brush the ring with the beaten egg and sprinkle with the flaky salt and thyme.
- Bake for 30 minutes, turning halfway through, or until dark golden brown. Transfer to a platter and serve.

PROSCIUTTO AND PROVOLONE CROISSANT BREAD PUDDING
Leftover croissants may seem like a stretch, but there's an easy work around to ensure you can enjoy this savory bread pudding. Some bakeries offer 2-for-1 deals on pastries after 4:00 p.m., so stock up on them then.

- Grease an 8-inch loaf pan, and then set aside.
- In a deep bowl, beat together the eggs, milk and salt if using with a fork. Add half of the prosciutto and provolone, and all of the croissant pieces. Use a rubber spatula to stir until well mixed. Pour into the prepared pan. Press the croissants down with the spatula to help them absorb the milk mixture. Sprinkle the remaining cheese and prosciutto on top. Cover with foil, and refrigerate at least 2 hours or up to overnight.
- Preheat the oven to 350 degrees F. Bake for 20 minutes. Remove the foil, and bake until puffed and the cheese is golden, 30 minutes more. Serve hot.
GOOEY BRIE CRESCENT WRAP

- Preheat the oven to 375 degrees F. Line a sheet pan with parchment paper.
- Remove the crescent rolls from the packages and separate into individual triangles. Place an upturned bowl on the prepared sheet pan and arrange the crescent triangles in a circular star shape around it, with the pointed ends furthest away from the bowl and the thicker ends nearest the bowl, slightly overlapping. Press the overlapping dough to flatten.
- Spread the cranberry preserves onto the dough around the center nearest the bowl and top with the Brie pieces, half the pistachios and half of the dried cranberries. Remove the bowl from the center and fold the pointed ends of the crescent rolls up and over the filling, tucking the tip of each under the base to secure. Brush the top with the beaten egg and sprinkle over the rosemary and flaky salt if using. Bake until golden and gooey, 18 to 20 minutes.
- Drizzle the top of the wreath with the honey. Garnish with the remaining dried cranberries and pistachios and rosemary sprigs. Sprinkle with flaky salt if desired. Allow to cool slightly before transferring the wreath to a board. Serve with a cheese knife to slice and enjoy.

PUFF PASTRY BAKED BRIE WITH PROSCIUTTO AND CRANBERRIES

- Place pastry on a parchment-lined baking sheet. Spread cranberry sauce in a circle in centre of pastry. Scatter torn Prosciutto di Parma over cranberry sauce, then position the brie on top. Fold the corners of the pastry over the brie to cover it, then use the parchment paper to help you press the pastry snugly into the round shape. Freeze for 15 minutes while you preheat the oven to 400ºF.
- Just before baking, flip the brie over so the folded edges are underneath (it's easier to do this once chilled). Brush pastry all over with egg wash (or use a paper towel to dab it on). Bake for 25 minutes, or until crust is beautifully golden brown. Let stand 15 minutes at room temperature before cutting into it. The cheese will be melty and irresistible, but won't run out like hot lava.
