- 1.In a medium saucepan, stir together the white sugar, corn syrup, and water. Cook, stirring, over medium heat until sugar dissolves, then bring to a boil. Without stirring, heat to 300 to 310 degrees F (149 to 154 degrees C), or until a small amount of syrup dropped into cold water forms hard, brittle threads. 2.Remove from heat and stir in flavored extract and food coloring, if desired. Pour onto a greased or silpat lined baking sheet/ jellyroll pan (the kind with raised edges). Let cool, and break into large pieces that resemble broken ice. Store in an airtight container.

- Line a baking tray with baking paper.
- Stir sugar and 2 tblsp of water in a medium saucepan
- Dissolve sugar over low heat.
- Bring to the boil then boil without stirring for 6 minutes or till golden brown.
- Pour toffee onto tray, tilt tray to spread thinly.
- Sprinkle with cachous, cool for one hour to set.
- Break into shards.

- Break the dark chocolate into pieces and melt in short blasts in the microwave, or in a heatproof bowl over a pan of just simmering water, stirring frequently. Pour it onto a tray lined with baking parchment or foil.
- Now break the milk chocolate into pieces and melt in the same way. Repeat with the white chocolate, then drizzle them both over the dark chocolate before it sets.
- Shake the tray gently to level the mixture then leave to set somewhere cool. Chop into shards.
