CHOCOLATE SUGAR COOKIES

Provided by Food Network Kitchen

Categories     dessert

Time 2h20m

Yield about 60 cookies

Number Of Ingredients 13

1 3/4 cups all-purpose flour, plus more for dusting
1/2 cup unsweetened cocoa powder
3/4 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
2 sticks unsalted butter, at room temperature
1 3/4 cups granulated sugar
1 large egg
1 teaspoon vanilla extract
Cooking spray
2 cups confectioners' sugar
2 tablespoons meringue powder
Coarse sugar, for decorating (optional)

Steps:

  • Whisk the flour, cocoa powder, baking soda, baking powder and salt in a medium bowl. Beat the butter and granulated sugar in a large bowl with a mixer on medium-high speed until light and fluffy, about 5 minutes. Add the egg and vanilla; beat until creamy, about 2 more minutes. Reduce the mixer speed to low; gradually add the flour mixture and beat until just incorporated, about 2 more minutes.
  • Divide the dough between 2 sheets of plastic wrap; form into disks. Wrap and refrigerate until firm, at least 1 hour.
  • Roll out the dough between floured sheets of parchment paper until about 1/4 inch thick. Chill 2 more hours.
  • Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Mist 2 baking sheets with cooking spray. Cut the dough into shapes; gather the scraps and reroll once to cut out more cookies. Arrange 2 inches apart on the prepared baking sheets. Bake, switching the pans halfway through, until set, about 12 minutes. Let cool 5 minutes on the baking sheets, then transfer to racks to cool completely.
  • Make the icing: Beat the confectioners' sugar, meringue powder and 3 to 4 tablespoons water in a bowl with a mixer on high speed until smooth and thick. Transfer to a resealable bag and snip a small corner. Pipe onto the cookies; sprinkle with coarse sugar. Let set 30 minutes.

SUGAR FREE CHOCOLATE TEA COOKIES

Sugar Free Chocolate Tea Cookies image

This is a simple and good sugar free recipe.

Provided by Sherry Lewis

Categories     Desserts     Cookies     Chocolate Cookie Recipes

Yield 24

Number Of Ingredients 7

¼ cup shortening
3 tablespoons sugar substitute with aspartame (such as Equal packets)
1 egg
½ teaspoon vanilla extract
2 tablespoons skim milk
1 ¼ cups cake flour
1 (1 ounce) square unsweetened chocolate, melted

Steps:

  • Cream shortening. Add sugar substitute, egg, vanilla and milk and blend well.
  • Add half the flour, mix well and stir in chocolate and the rest of the flour.
  • With cookie press, press onto an ungreased cookie sheet. Use hands and make small ball if you do not have press. Putting flour on your hands, this keeps dough from sticking. Press down with fingers on top of each cookie.
  • Bake at 350 degrees F (175 degrees C) for 20 minutes.

LOW SUGAR DOUBLE CHOCOLATE CHIP COOKIES

Low Sugar Double Chocolate Chip Cookies image

This is an adaptation of a Hershey's recipe I developed for the 2006 'Zaar cookie swap. These are small cookies but they have a wonderful soft cakey texture and a rich chocolate flavor. I made them with a 1 tablespoon cookie scoop and got 26 cookies. Stick with measuring out a teaspoon or so of dough and you should get the full three dozn. They do get dry after a few days, much more so than a typical cake cookie. My advice, share them and enjoy.

One dough, 2 varieties of cookies.

Provided by Judith Hannemann

Categories     Snack

Number Of Ingredients 8

6 oz flour
6 oz soft butter
2.5 oz sugar
2.5 oz semolina
1 tsp almond extract
1.75 oz sliced almonds
Zest of 1 lemon
3 tbs demerara sugar or sanding sugar (optional)

Steps:

  • Preheat oven to 325F/160C. Line 2 large baking sheets with parchment.
  • Add the flour, butter, sugar and semolina in a medium bowl. Mix thoroughly with electric mixer until it resembles the texture of fresh breadcrumbs and will hold together when pressed.
  • Divide dough in half. To one half mix in the almond extract and most of the almond slices; mix thoroughly. Divide dough into 20 balls. Place balls on prepared pan and press down with your fingers so that they are about 1/4-inch thick. Press a couple of sliced almonds in the center of each cookie.
  • To the remaining half of the dough, knead in the lemon zest. Roll into a log about 10-inches (25 cm) long. If using the demerara or sanding sugar, place the sugar on a plate and roll the log in the sugar. Wrap tightly in plastic wrap and chill for 15 minutes. After dough has chilled, cut the log into 20 /12-inch (1.25 xm) slices and place on the other prepared pan.
  • Bake for 10-12 minutes or until the cookies start to brown around the edges. (Both varieties bake at the same temperature for the same amount of time.

Sugar Free Mexican Wedding Cookies image

This and delicious recipe for Sugar Free Mexican Wedding Cookies is a standard holiday season choice. Also known as Russian Tea, polvorones, and Snowball cookies.

Provided by Sugar Free Diva

Categories     cookies     Dessert

Time 40m

Number Of Ingredients 6

17 tbsp Butter (Softened )
1/2 cup Splenda
2 tsp Vanilla Extract
1 3/4 cup Flour (AP flour, see post for alternatives)
1 cup Pecans (chopped)
3/4 cup Sugar Free Powdered Sugar

Steps:

  • Preheat your oven to 300 and line your cookie sheets with parchment paper.
  • Start by creaming together your softened butter with the granular sugar alternative at a low speed in a mixing bowl. Then blend in the vanilla extract.
  • Next, we will add the flour to the mixing bowl. It is best to do this by adding half of the flour at a time, mixing gently between additions. Then you can fold in the chopped nuts.
  • For this next step we will shape the cookies into balls (or other shape such as crescent) and place the cookies onto the prepared cookie sheets. Tip: use a tablespoon to scoop out the cookie dough to make your cookie size consistent. Also, if your cookie dough seems to be a bit sticky, you can coat your hands with a bit of flour or oil.
  • Bake for 18-20 minutes and allow to cool on a cookie rack, When cooled, roll the cookies in the powdered sugar to coat them.
