This comforting vegetarian Indian dish is quick and easy to make: just add couple of fresh ingredients thrown into a pan of simply seasoned dal.

Number Of Ingredients 10

100g (3½ oz.) spilt moong dal
400ml (14 fl oz.) boiling water
½ teaspoon salt
½ teaspoon ground turmeric
1-inch piece piece of fresh root ginger, peeled and roughly chopped
7 oz. fresh spinach leaves
2 tablespoons ghee
2 onions, finely chopped
1 teaspoon chile powder
3 tablespoons plain yogurt

Steps:

  • Put the moong dal in a pan with the measured boiling water, salt, turmeric and ginger. Bring to the boil, then cover and cook over a low to medium heat for 10 minutes. Add the spinach, cover again and cook for another 5 minutes until the lentils are soft and the spinach has wilted.
  • Meanwhile, heat the ghee in a frying pan, add the onions and cook over a low to medium heat for 10 minutes until golden, then stir in the chile powder. Remove from the heat and set aside.
  • Once the lentils are ready, blitz to a purée with a hand blender or in a blender or food processor. Return to the pan, if necessary, and bring to the boil. Then take off the heat, add the yogurt and mix well. Transfer the dal to a serving bowl, top with the fried onions and serve.

1 cup red lentil (rinsed and drained)
1 slice fresh ginger (quarter sized slice)
1 teaspoon ground turmeric
4 cups water
2 tablespoons vegetable oil
1 pinch asafoetida powder
1 teaspoon whole cumin seed
2 whole dried hot peppers
1 teaspoon salt

Steps:

  • Bring dal to boil in a large stock pot with 4 cups water and bring to a boil.
  • When it comes to a boil, there will be a gray surface scum.
  • Skim this away and then add the ginger and turmeric.
  • Turn the heat low and simmer partially covered for 1 hour.
  • When done, a thick puree settles on the bottom.
  • Make sure you stir the dal several times in the last 15 minutes.
  • Heat the oil in a small skillet and when it smokes add the pinch of asafetida.
  • One second later, add the cumin and peppers.
  • Cook until the peppers until both sides turn dark (a few seconds).
  • Pour the oil spice mixture into the dal with the salt and stir for 1 minute.

  • Rinse lentils and bring to a boil with 5 cups of water. Reduce heat and simmer, partially covered, stirring occasionally, for about 40 minutes, or until very soft. Stir in salt and turmeric.
  • Place oil in a small saucepan over medium-high heat. When shimmering hot, sprinkle asafoetida (if using) over the oil, then add the mustard seeds and curry leaves. As soon as the mustard seeds pop and the curry leaves turn a shade darker, reduce heat to low and stir in the ginger and chiles. Fry for about 15 seconds, then add the tomatoes. Give it a stir, then stir it into the cooked lentils, oil and all. Taste and add more salt if needed (I added an extra 1/2 tsp).

  • For the Chaunk: Heat the oil in a small skillet over high heat and add the mustard and cumin seeds. Fry until the mustard seeds begin to pop, about 10 seconds. Reduce the heat to medium-high and add the chilies, garlic and ginger. Fry for another 20 seconds. Add the onion and fry until soft and a light caramelized brown, about 5-7 minutes. Add the turmeric, chili powder, asaefoetida, coriander, turmeric, chili powder, cinnamon and cloves and stir to combine.
  • Combine the Dal and Chaunk: Scrape the contents of the skillet into the stock pot. Stir to combine and bring it to a boil. Reduce the heat, cover, and simmer for about 20 minutes, or until the lentils are done the soup is a thick consistency, stirring occasionally.
  • Before serving, add the lime juice, a little at a time, according to taste. Add more salt as needed. Serve sprinkled with fresh chopped cilantro.
