DUNCAN HINES PINEAPPLE UPSIDE DOWN CAKE

Steps:

• Preheat oven to 350 degrees F. Grease the sides of a 9x13-inch pan with cooking spray. Pour melted butter into the pan and sprinkle with brown sugar. Arrange the pineapple slices and cherries on top of the brown sugar.
• In a large bowl, combine the cake mix with water, oil and eggs. Using an electric mixer, beat for 2 minutes at medium speed. Then pour the mixture into the pan (on top of the pineapples and cherries).
• Bake for 40 minutes or until toothpick inserted in the center of the cake comes out clean.
• Transfer the cake to a wire rack and let it cool for 5 minutes. Run a knife on around the sides of the pan to loosen the cake and flip it over onto a serving platter. Pour the remaining juices in the pan all over the cake.
• Top the cake with whipped cream. Serve warm (or cool).

• Preheat oven to 350°F. For topping, melt butter over low heat in 12-inch cast-iron skillet or skillet with oven-proof handle. Remove from heat. Stir in brown sugar. • Melt butter in ungreased 13x9-inch pan. Sprinkle brown sugar evenly in pan. Arrange pineapple slices on brown sugar. Place maraschino cherry halves, cut side up, in center of pineapple slices.
• Prepare cake mix following package directions for Basic Recipe. Pour batter evenly over fruit in pan. Bake at 350 degrees F. for 43 to 48 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes in pan. Invert onto heat resistant serving plate.
• Poke holes into cake, pour drained pineapple juice over cake.
