ORANGE SPICE SUGAR COOKIES
Christmas is the time of year to make flavorful butter cookies.We roll them. We cut shapes from them. We decorate them. I decided to add the flavors of the season to this cookie.It is a sweet and zesty spice butter cookie.These were a big hit with my friends and neighbors. Merry Christmas!

Steps:
- 1. Beat the butter, sugar salt, Baileys Irish cream, and Amaretto together until smooth. (You can replace the Liquors with 2 teaspoons of vanilla if desired. Making the cookies kid friendly.)
- 2. Mix in the egg yolk until combined well. Add the flour, orange zest, Cinnamon, ginger, and cloves. mix to combine.
- 3. Add the flour,and beat until all ingredients are incorporated ,and a big ball forms. You can continue on ,and make the cookie dough my way,or you can simply roll dough out on a floured surface ,and cut shapes out to bake.
- 4. take ball of cookie dough,and divide in half. Make 2 circular logs from cookie dough. 2 inches in diameter. Wrap in plastic wrap,and refrigerate until stiff enough to slice.
- 5. Slice dough in to 1/8 inch wide slices,and bake on ungreased cookie sheet at 325 degree's for 10 minutes,or until edges turn light golden brown.
- 6. make white chocolate icing. Mix 1 cup of any color candy melts with 1/2 teaspoon of Amaretto,and 1/2 tsp Baileys Irish cream., or vanilla Add 1 tsp of shortening and microwave for 1 min. Stop microwave and stir every 30 seconds. Remove and stir again. Make sure the chocolate is melted. Add 1/2 teaspoon orange zest stir well. If you need a more liquid consistency. Just add a dash of milk.
- 7. Decorate cookies with icing. Put a small Dollop of icing on top of cookie. Place the almond slices on the icing. You may also frosty entire top with icing instead of adding almonds if desired.

- Preheat oven to 350º F. Line baking sheets with parchment paper.
- Beat 1 cup sugar with the shortening, egg, vanilla and orange zest. Add the orange juice, flour, soda and salt and stir until well combined.
- Combine 1/3 cup sugar with 3 tbs cinnamon. Shape dough into walnut sized balls. Roll in cinnamon sugar and press onto prepared cookie sheets with a glass dipped in cinnamon sugar.
- Bake 10-15 minutes until lightly golden.

- Sift the cake flour, baking powder and salt onto a piece of parchment paper or into a medium bowl; set aside. Beat the butter and sugar in a large bowl with a mixer on medium-high speed until light and fluffy, about 5 minutes. Add the egg and vanilla and beat until incorporated. Reduce the mixer speed to low and beat in the flour mixture in 2 batches until just incorporated. Divide between 2 pieces of plastic wrap; shape into disks. Wrap and refrigerate until firm, at least 1 hour. (The dough can be frozen for up to 1 month; thaw overnight in the refrigerator before rolling.)
- Line 2 baking sheets with parchment paper. Working with 1 disk at a time, roll out the dough on a floured surface, dusting with flour as needed, until about 1/8 inch thick. Cut out shapes with 2-to-4-inch cookie cutters; arrange 2 inches apart on the prepared baking sheets. (If the dough becomes too soft as you work, return to the refrigerator until firm.) Gather the scraps and refrigerate until firm; reroll once to cut out more cookies. Chill the cutouts 30 minutes.
- Position racks in the upper and lower thirds of the oven and preheat to 350 degrees F. Bake, switching the pans halfway through, until the cookies are slightly puffed and just golden, 13 to 15 minutes. Let cool 5 minutes on the baking sheets, then transfer to racks to cool completely before icing.
- Whisk one 1-pound box confectioners' sugar and 2 tablespoons meringue powder in a large bowl. Add 5 tablespoons water and beat with a mixer on medium-high speed until soft glossy peaks form, adding up to 1 more tablespoon water if necessary. Cover the bowl with a damp paper towel and plastic wrap until ready to use to prevent the icing from drying out.

- In a medium bowl, combine the flour, baking powder, and salt.
- In a large bowl, with an electric mixer on medium speed, beat the butter and granulated sugar for 3 minutes, or until light and fluffy.
- Beat in the eggs, orange juice, orange peel, and orange extract.
- Beat in the flour mixture, a little at a time, until well-blended.
- Divide the dough into thirds, wrap each portion in plastic wrap, and refrigerate for 3 hours.
- Preheat the oven to 350°F and grease baking sheets or use silpats.
- Place one-third of the dough on a lightly floured surface, leaving the remaining two-thirds in the refrigerator.
- Using a floured rolling pin, roll to 1/8 inch thickness.

- Cool on a rack for 2 minutes- Remove to the rack to cool completely.

- In a mixing bowl, cream shortening and sugar.
- Add eggs,and mix in well.
- Add orange juice/peel.
- Combine dry ingredients and gradually add to the creamed mixture.
