These sugar cookie bars, which are adapted from "American Girl Cookies," are happiness in a 9-by-13 pan. The addition of cream cheese in the batter makes them very tender and slightly tangy, a perfect counterpoint to the sweet buttercream frosting. You can, and should, experiment with frosting colors and use sprinkles with abandon. Whatever you do, do not overbake these beauties. When testing for doneness, you want a few moist crumbs to cling to the toothpick.

- Heat oven to 350 degrees. Lightly butter a 9-by-13-inch baking pan. Line the pan with parchment paper, running it up the two long sides of the pan and letting it extend past the rim by about 2 inches.
- Make the bars: In a medium bowl, whisk together the flour and salt. In a large bowl with an electric mixer, or in the bowl of a stand mixer fitted with the paddle attachment, beat butter and cream cheese on medium speed until well blended, about 1 minute. Add the granulated sugar and beat until smooth, about 1 minute. Add the egg and vanilla and beat on low speed until well combined, about 1 minute. Turn off the mixer and scrape down the bowl with a rubber spatula. Gradually add the flour mixture, mixing on low speed just until blended, about 1 minute.
- Using a spatula, scrape the dough into the prepared baking pan and spread it into an even layer. Bake just until the edges are starting to turn light golden brown, and a toothpick inserted in the middle has moist crumbs, 20 to 25 minutes. (Do not overbake! The bars should be quite moist, and almost slightly underbaked in the middle.) Remove the pan from the oven and set it on a wire rack. Let cool completely. When fully cooled, remove the bars from the pan using the overhanging parchment paper.
- Make the frosting: Place the butter in the bowl of a stand mixer fitted with the paddle attachment. Beat the butter on medium speed until creamy, about 1 minute. Add 1 cup confectioners' sugar, beating on low speed until fully combined, then repeat with remaining 1 cup confectioners' sugar. Add the 1 tablespoon milk or heavy cream, 1 teaspoon lemon juice, the vanilla, salt and food coloring, if using, and beat on medium speed until the frosting is light and fluffy, scraping down the sides halfway through, about 4 minutes. Add more milk if needed to thin out the mixture. Add lemon juice and vanilla to taste.
- Using a spatula, spread the frosting on top, then decorate with sprinkles, if using. Cut into 20 bars and serve.

They are a little under cooked, but I think that they are better that way. Don't bake any longer than 15 mins... They seem to dry out more while baking. Keep it to 10 -12 mins.

- Bars: In a large bowl cream butter and sugar until fluffy. Add eggs, one at a time, mixing after each egg. Mix in vanilla and almond extract.

- Heat oven to 350°. Spray a 9x13 baking pan with cooking spray or line with parchment paper. *I prefer to line with parchment paper because then I can lift the bars out, frost them, and cut them easier.
- In the bowl of a stand mixer, or use a mixing bowl and a handheld blender, add the butter, sugar, powdered sugar, and oil. Beat until creamy, combined, and lighter in color.
- Add water, egg, and vanilla extract. Mix until combined.
- Add flour, salt, baking powder, and baking soda. Mix on LOW speed (to avoid a flour puff) and increase speed as needed, just until dough is combined and no flour streaks remain. *The dough will look like it's crumbled, but that's ok, this dough is a different dough than traditional.
- Dump dough into the prepared pan and use your fingers/hands to spread it out evenly, while pressing down gently on the dough. Sprinkle 1 tablespoon of sugar over top.
- Cook for 11-13 minutes. The edges should be a very pale golden brown while the middle of the bars will still be very pale. *Obviously every oven cooks differently. I never cook mine for longer than 12 minutes. If yours need more time, then let it bake longer. Watch carefully because you don't want to overbake these.
- Let the sugar cookie bars cool completely in the pan.
- MAKE THE FROSTING: Beat together the butter, sour cream, powdered sugar, and almond extract until combined. Add in the cream, starting with 1 tablespoon, and add more if needed. You want the frosting to be thicker so it will stay on top the bars. It's ok if you don't use the full amount of heavy cream or milk listed in recipe. * If you use anything that's less fat than heavy cream you will need less of it. Start with a small amount and add as needed.

- For the cookie portion: Preheat oven to 350 degrees. Butter a 13 by 9-inch baking sheet.**
- In a medium mixing bowl whisk together flour, cornstarch, baking powder and salt. Set aside.
- In the bowl of an electric stand mixer cream together 1 cup butter with 1 cup granulated sugar until blended. Scrape down mixing bowl.
- Mix in each egg, 1 at a time. Scrape down mixing bowl then blend in 1 1/2 tsp vanilla and 1/2 tsp almond extract.

- Let cool completely on a wire rack, about 90 minutes (or about 60 minutes in the fridge).
- For the frosting: in a large mixing bowl using an electric hand mixer blend together powdered sugar, 1/2 cup butter, 2 Tbsp cream, and 1 tsp vanilla extract, and a few drops food coloring (if using) until pale and fluffy.
- If needed thin frosting with another 1 Tbsp cream.

- Preheat your oven to 350 degrees F. Line a 9x13 inch glass pan with parchment paper or foil, to make it easy to lift the bars out of the pan and slice. (Foil needs to be sprayed with nonstick spray) Or you can grease the pan directly with nonstick spray.
- In a large bowl or stand mixer, beat 3/4 cup butter on medium speed until it is soft and fluffy, 1-2 minutes, scraping down the sides at least once.
- Add the softened 4 ounces of cream cheese and continue to beat for 1 minute, until well incorporated.
- Add 1 and 1/2 cups sugar and beat well, 1-2 minutes, until fluffy. Scrape down the sides.
- Add 1 egg, 1 teaspoon vanilla, and 1 and 3/4 teaspoon almond extract. Beat well. Scrape the sides and bottom of the bowl with a spatula. This is my spatula that I love and use for every baking project.
- Add 1 teaspoon salt, 2 and 3/4 cup flour, and 1 tablespoon cornstarch. Beat until just barely combined, scraping the sides and bottom again. Do not stir too much or you will make your dough tough.
- Transfer the dough to the prepared pan. Get your hands a little wet (shake off excess water) and press the dough evenly into the pan. (You can also grease your hands if you prefer.)
- Bake at 350 for about 25-30 minutes. Every oven is different, keep an eye on it. The bars are done when there are just a few golden spots on the edges, and the center is no longer shiny. It's very important not to over bake sugar cookie bars, or they will not be soft and chewy. (They will become dry and crumbly.) When a toothpick comes out of the center with no dough on it, they are done. If you are baking in a metal pan, it will bake a couple minutes faster.
- Let the bars cool completely on a wire rack. Do not frost while warm.
- Top the bars with one batch of The Best Buttercream Frosting for Sugar Cookies!
- To slice into clean bars as shown in the photos, slice off about an inch from all four edges, then slice into bars, cleaning your knife before making each cut.

- Preheat oven to 350 degrees. Line a 9x13 inch pan with parchment or foil.
- In a large bowl, cream butter and sugar for 2 minutes til very fluffy.
- Mix in eggs and vanilla.
- In a medium bowl whisk together flour, baking powder, baking soda, salt, and corn starch.
- Add dry ingredients to wet ingredients and mix until completely incorporated. (Batter will be very thick!)
- Use a rubber spatula or spoon to spread/press dough into prepared pan in an even layer. (The batter is very thick so this will take a minute but trust me, these are worth a little elbow grease!)
- Bake in preheated oven for about 18 minutes. Allow to cool completely in the pan.

Steps:
- Preheat oven to 375 degrees F.
- For the bars, in a large bowl, cream together the butter, granulated sugar and powdered sugar until light and fluffy. Add the eggs and vanilla and mix for 1-2 minutes. Stir in the lemon zest (optional), flour, baking powder and salt. Mix until combined.
- Lightly grease a 9X13-inch baking pan with cooking spray or line with parchment paper and grease. Press the sugar cookie dough into an even layer in the bottom of the pan.
- Bake for 10-13 minutes. Don't overbake! The bars should have hardly any color around the edges and barely be set in the middle. Let the bars cool completely before frosting.
- For the frosting, cream together the butter and powdered sugar until smooth (if the mixture has trouble coming together, add a drop or two of milk). Add in the vanilla, milk or cream, and food coloring (if using), and mix until the frosting is light and fluffy, 1-2 minutes.
- Spread the frosting over the cooled bars and top with sprinkles.

- Place butter and sugar into the work bowl of a large stand mixer fitted with paddle attachment; mix on medium-high speed until butter and sugar are light and fluffy, 2 to 3 minutes.
