Think of this classic succotash as a greatest hits list of summer veggies.

Number Of Ingredients 11

10 ounces fresh or frozen baby lima beans (2 cups)
4 center-cut bacon slices
1 cup chopped sweet onion (from 1 small onion)
4 ounces fresh okra, cut into ½-inch-thick slices (1 cup)
1 garlic clove, finely chopped (1 tsp.)
3 cups fresh corn kernels (4 ears)
1 ¼ teaspoons kosher salt
¼ teaspoon black pepper
3 tablespoons butter
5 ounces cherry tomatoes, halved (1 cup)
¼ cup thinly sliced fresh basil

Steps:

  • Place lima beans in a medium saucepan, and add water to cover. Bring to a boil over medium-high. Reduce to medium-low, and simmer until beans are just tender, 8 to 10 minutes. Drain and set aside.
  • While beans simmer, place bacon slices in a large cast-iron skillet over medium. Cook until crisp, about 8 minutes, turning once after 5 minutes. Transfer bacon to paper towels; crumble and set aside. Reserve drippings in skillet.
  • Add chopped onion, fresh okra, and garlic to skillet over medium, and cook, stirring often, until onion is just tender, about 6 minutes. Stir in fresh corn kernels, salt, pepper, and drained beans, and cook, stirring often, until corn is tender and bright yellow, 5 to 6 minutes. Add butter, and cook, stirring constantly, until butter is melted, about 1 minute. Remove from heat.
  • Stir in halved cherry tomatoes and sliced basil; sprinkle with crumbled bacon, and serve immediately.

4 thick slices bacon, chopped
1 pint cherry tomatoes, halved
2 cloves garlic, chopped
1 small yellow onion, chopped
5 ears corn, shucked and kernels cut off (about 5 cups)

2 cups canned lima beans, rinsed
1/4 cup fresh basil leaves, torn
1 tablespoon red wine vinegar
Kosher salt and freshly ground black pepper

Steps:

  • Place a large skillet over medium heat, then add the bacon and cook until the fat has rendered and the bacon has crisped, about 10 minutes. Add the tomatoes, garlic and onions and cook until the onions have softened a bit, about 5 minutes. Add the corn and cook another 2 minutes. Add the lima beans and then remove from the heat. Stir in the basil and red wine vinegar, season with salt and pepper and serve.

1/2 cup mayonnaise
1/4 cup buttermilk
1/4 cup sour cream
1/4 cup sriracha
1 teaspoon fine sugar
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon kosher salt
3 to 4 turns fresh ground black pepper
Pinch of cayenne pepper
Pinch of paprika
1 tablespoon plus 1 teaspoon kosher salt
2 cups edamame
2 cups frozen peas
1 cup diced asparagus
1 cup shelled and hulled fava beans
1 cup diced green beans
2 tablespoons extra-virgin olive oil
1/2 cup diced red bell pepper
1/4 cup minced shallots
4 cloves garlic, minced
4 to 5 turns fresh ground black pepper
2 tablespoons unsalted butter
2 large eggs
1/2 teaspoon kosher salt
4 to 5 turns fresh ground black pepper
1 teaspoon baking powder
1/2 cup panko breadcrumbs
1/3 cup grated Parmigiano-Reggiano
1/4 cup all-purpose flour
Extra-virgin olive oil
1/4 cup chopped fresh dill, to garnish

Steps:

  • For the sriracha ranch: In a medium mixing bowl, combine the mayonnaise, buttermilk, sour cream, sriracha, sugar, garlic powder, onion powder, salt, black pepper, cayenne pepper and paprika. Whisk until well combined and creamy in texture.
  • For the green vegetable succotash: In a medium pot, bring 4 to 5 inches of water and 1 tablespoon of the salt to a boil over medium-high heat. Add the edamame, peas, asparagus, fava and green beans to the salted boiling water and blanch for 2 minutes. Drain and immediately plunge into a large bowl of ice water to shock (this locks in the bright green color). Drain once more and allow to dry.
  • In a large saute pan over medium-high heat, add the olive oil, red peppers, shallots and garlic. Saute until the shallots are translucent, 3 to 4 minutes. Then add the blanched vegetables. Season with the remaining 1 teaspoon salt and the black pepper and saute until heated through, 5 to 6 minutes. Finish with the butter and toss together until the butter has melted.
  • For the succotash smash: Put the green vegetable succotash in a large glass mixing bowl and use a potato masher to mash the succotash.
  • In a separate medium mixing bowl, crack the eggs, sprinkle with the salt and black pepper and whisk together. Add the baking powder and continue to whisk. Add the breadcrumbs, cheese and flour and mix until all the ingredients are incorporated evenly. Add this mixture to the mashed succotash. Form into 3-inch patties, about 3/4-inch thick.
  • To cook, set a large nonstick skillet over medium-heat. Coat with a light layer of oil and, working in batches, cook 4 to 5 patties at a time. Cook until lightly golden and crisp around the edges, 3 to 4 minutes on the first side. Turn and cook for 2 to 3 minutes on the second side. Drain on paper towels. Serve with the sriracha ranch dressing and a sprinkle of fresh dill.

A big platter of succotash is a celebration of all the vibrant vegetables coming into season: sweet corn, baby lima beans, ripe red tomatoes, and tender okra. Here's how to make it throughout the spring and summer months.

1 cup frozen baby lima beans
1 medium green bell pepper
1/2 medium sweet onion
2 cloves garlic
1 pint grape or cherry tomatoes
4 ounces fresh or frozen okra (about 1 cup)
1/4 cup loosely packed fresh basil leaves
2 cups fresh or frozen corn kernels (from about 2 ears fresh)
4 slices bacon (about 4 ounces)
1 1/2 teaspoons kosher salt
1 tablespoon apple cider vinegar
1/4 teaspoon freshly ground black pepper

Steps:

  • Thaw the frozen vegetables. Place 1 cup frozen lima beans in a shallow bowl at room temperature to thaw. If using frozen corn or okra, add 4 ounces frozen okra and 2 cups frozen corn kernels to the bowl to thaw also.
  • Prepare the vegetables. Dice 1 medium bell pepper and 1/2 medium sweet onion (about 1 cup onion), and finely chop 2 garlic cloves. Halve 1 pint grape tomatoes. Trim and slice 4 ounces okra 1/4-inch thick (about 1 cup). Thinly slice 1/4 cup fresh basil leaves. If using fresh corn, remove the husks and cut the kernels from the cob (about 2 cups).
  • Chop the bacon. Chop 4 slices bacon into 1/2-inch pieces.
  • Cook the bacon until crisp. Cook the bacon in a large cast iron or stainless steel skillet over medium-high heat until the bacon crisps and the fat renders, 8 to 10 minutes. Transfer the bacon with a slotted spoon to a paper towel-lined plate.
  • Cook the onion and pepper until soft. Add the onion, bell pepper, and 1 1/2 teaspoons kosher salt to the bacon fat in the skillet and cook over medium heat until softened, about 5 minutes.
  • Cook the garlic until fragrant. Add the garlic and cook until fragrant, about 1 minute.
  • Add the remaining vegetables. Stir in the tomatoes, corn, okra, and lima beans, and cook, stirring occasionally, until the vegetables are heated through and tender, 6 to 7 minutes.
  • Season the succotash. Stir in 1 tablespoon apple cider vinegar and 1/4 teaspoon black pepper.
  • Serve the succotash. Top with the crisped bacon and basil leaves, and serve warm.

Squash blossoms (optional)

Steps:

  • In a large pot, melt butter over medium-low heat. Add the diced onion and green pepper. Saute for 5 minutes. Add the rest of the ingredients. Salt and pepper, to taste. Cover and simmer on low heat for 20 to 30 minutes. Serve with washed blossoms.

4 sweetcorn cobs
1 tbsp olive oil
2 garlic cloves , crushed
100g frozen baby broad bean
1 red chilli , deseeded and chopped
large handful basil , chopped
large handful mint , chopped
1-2 tsp sherry vinegar

Steps:

  • Use a knife to cut down the length of the sweetcorn to remove the kernels. Heat the oil in a large lidded pan. Cook the kernels and garlic over a medium heat for 5 mins, stirring all the time.
  • Add the frozen beans to the pan, cover and cook, stirring every so often, for another 4-5 mins or until the beans are cooked through. Turn off the heat and add the chilli, herbs and vinegar. Taste and add seasoning, if you like.
