1 Smithfield® Pork Tenderloin
1-2 large carrots (peeled and cut lengthwise in quarters to make four long sticks.)
2-3 slices of bacon (cooked and cut lengthwise in thin strips)
5 sprigs of fresh parsley (leaves washed and removed)
1/8 cup raisins of mixed colors
2 dried apricots (cut into thin strips)
2 tablespoons olive oil
Garlic salt to taste
Pepper to taste
1/2 white onion (cut in strips)
2 garlic cloves (peeled and cut in half lengthwise)
1-2 Habanero chiles seeded*
1 cup apricot preserves
1/4 cup white wine vinegar
3/4 cup orange juice
The zest of 1 yellow lemon

Steps:

  • Preheat oven to 425 degrees F. (~220C)
  • Separate the two cuts of pork tenderloin. If you'd like to do two different recipes, check out my stuffed pork tenderloin with sweet and sour chipotle and sherry recipe.
  • Rinse off the tenderloin under fresh cold water and lay out on a cutting board. Using an ice pick or knife, depending on the thickness of you tenderloin, carefully make 2-4 holes the entire length of the tenderloin.
  • With your fingers fill the holes you created with carrots, bacon, parsley, raisins and apricot slices, alternating between ingredients.
  • Oil the entire surface of the tenderloin with olive oil and season generously with garlic salt and pepper.
  • In a pan, seer the tenderloin on all sides to brown and transfer to a baking dish, line the tray with aluminum foil, and place in the oven. Save the juices in the pan for later.
  • Bake for 15 minutes, uncovered. Then lower the temperature to 350 degrees F (175 C). Cover the tenderloin with aluminum foil and bake for 8-10 more minutes or until a thermometer placed in the center of the pork reaches 155 degrees F (68.5 C).
  • Remove from oven and let rest covered for 10 minutes. It's important to let it rest so the juices are absorb into the meat and are not lost when you cut into it.
  • While the tenderloin is baking, make the sauce. Using the same pan where you browned the meat, add the onion, garlic, habanero(s), apricot preserves and vinegar over high heat. Stir. You will see bits of browned meat that were stuck to the pan coming loose and combining with the other ingredients. Let simmer for 5 minutes.
  • Add the orange juice and lemon zest, cook for 3 minutes more. Then, add the sauce to the blender and blend for a few seconds until all the ingredients are completely integrated. Serve on top of the stuffed pork tenderloin.

Head roast of tenderloin, approximately 1 to 1 1/2 pounds
Kosher salt
Freshly ground black pepper
Olive oil
3 ounces blue cheese

Steps:

  • Preheat the oven to 450 degrees F.
  • Slice roast open lengthwise in middle to create a pocket, being careful to not slice all the way through.
  • Salt and pepper the meat on all sides.
  • Heat a grill pan over high heat and brush roast with olive oil. Sear the roast on all sides. Remove from the heat, tent with foil and allow to rest for 15 minutes.
  • After the meat has rested, stuff pocket with the blue cheese. Tie the whole thing together with kitchen string. Return the tied meat to the grill pan, place into the oven and cook until it reaches an internal temperature of 125 degrees F, approximately 20 to 25 minutes. Remove from the oven, wrap in aluminum foil and allow to rest 15 minutes before serving.

APRICOT HABANERO PORK CHOPS

4 bone-in center-cut pork chops
Kosher salt and freshly ground black pepper
1 cup apricot preserves
2 tablespoons soy sauce
1 tablespoon grated ginger
2 cloves garlic, grated on a rasp grater
1 orange, zested and juiced
1/2 to 1 habanero pepper, seeded and diced
Vegetable oil, for the grill grates
1 tablespoon chopped fresh mint
1 green apple, peeled, cored and finely diced
1 red bell pepper, finely diced
1 scallion, thinly sliced on the bias
1 lime, zested and juiced

Steps:

  • For the pork chops: Season the pork chops with salt and pepper; set aside while making the glaze.
  • Add the apricot preserves, soy sauce, ginger, garlic, orange zest and juice and habanero to a small pot and bring to a simmer. Simmer until the sauce is reduced and thickened, 10 to 15 minutes; let cool. Divide the glaze between 2 bowls, reserving 1 bowl for basting and one for serving with the cooked chops.
  • Preheat a grill to medium-high heat. Coat the grates with plenty of vegetable oil to help create a nonstick surface.
  • Using a brush, coat the chops with the first round of glaze. Place them on the grill glazed-side down and grill without moving until the glaze begins to caramelize, about 5 minutes. Brush the tops with glaze, flip the chops, brush the other side with more glaze and continue cooking until the chops are caramelized, charred and sticky and the internal temperature registers 135 degrees F, another 7 to 10 minutes. Discard the basting glaze. Let the chops rest for 5 to 10 minutes, coating them once with the reserved serving glaze while resting.
  • For the relish: Combine the mint, apple, bell pepper, scallion and lime zest and juice in a bowl and toss to coat.
  • Top the pork chops with some green apple relish and serve with the remaining serving glaze and relish.

6 tablespoons butter
1 shallot, diced
2/3 cup dry sherry wine
1/4 cup dried dates, pitted and chopped
1/4 cup dried cranberries
1 teaspoon minced fresh thyme
1 teaspoon minced fresh sage
Kosher salt and freshly cracked black pepper
One 2- to 3-pound center-cut beef tenderloin, trimmed and butterflied (see Cook's Note)
1/3 cup Marcona almonds, crushed
2 tablespoons minced chives
Store-bought horseradish sauce, for serving

Steps:

  • Preheat the oven to 225 degrees F.
  • Heat a medium skillet over medium heat. Melt 2 tablespoons of the butter, add the shallot and cook until translucent, about 5 minutes. Add the sherry, dates, cranberries, thyme and sage and simmer until just dry, about 5 minutes. Season with salt and pepper and set aside.
  • Season the inside of the tenderloin with salt and pepper. Spread an even layer of the fruit and herb mixture over it, leaving about 1/2 inch of tenderloin around the edges. Top with a layer of the almonds. Roll tightly and tie with at least 4 pieces of butcher's twine (easier to cut and portion!).
  • Place the loin on a wire-racked baking sheet and season the outside with salt and pepper. Cook until the center of the tenderloin registers 120 to 125 degrees F, about 2 hours.
  • In a large skillet, heat the remaining 4 tablespoons butter over medium heat until just foaming. Place the loin in the skillet and sear on all sides until evenly crusty and brown, about 3 minutes a side. Transfer to a cutting board and slice. Garnish with minced chives and serve with horseradish sauce.

One 1 1/2-pound pork tenderloin, silver skin removed2 cups favorite mustard sauce, such as Pork & Mindy's, plus additional for basting
4 fresh pretzel rolls, split, buttered and griddled
Apple Slaw, recipe follows
Pickled Red Onions, recipe follows
Apricot Habanero Aioli, recipe follows
Spicy pickles, for serving
1/2 cup apple cider vinegar
2 tablespoons olive oil
1 tablespoon Dijon mustard
1 tablespoon brown sugar
1 teaspoon toasted sesame oil1 teaspoon celery seed
Salt and pepper
2 Granny Smith apples, cut into julienne strips on a mandoline
1 red bell pepper, cut into julienne strips on a mandoline
1 tablespoon minced fresh chives
1 cup red wine vinegar
2 tablespoons sugar
1 teaspoon kosher salt
1 medium red onion, sliced 1/4-inch thick
1 cup mayonnaise
1/4 cup favorite apricot habanero sauce, such as Pork & Mindy's
1/2 teaspoon granulated garlic

Steps:

  • Whisk the salt and sugar into 2 quarts cold water until dissolved. Place the pork into a plastic zipper-topped bag, then pour in the brine. Leave in the fridge 8 hours or overnight.
  • Prepare a smoker for cooking at 225 degrees F. Take the pork out of the brine and pat dry. Coat entirely in mustard sauce. Smoke the pork, basting with more mustard sauce every 20 minutes, until the internal temperature registers 150 degrees F, about 2 1/2 hours. Let rest 20 minutes. Slice very thinly into 1/8-inch medallions.
  • On the bottom buns, place the Apple Slaw, the sliced pork ribboned high, then the Pickled Red Onions. Schmear the Apricot Habanero Aioli on the top buns. Close and cut! Serve with spicy pickles.
  • Whisk together the vinegar, olive oil, Dijon, brown sugar, sesame oil, celery seed and some salt and pepper. Add in the apples, red peppers and chives. Season if necessary and let sit for at least 1 hour.
  • Simmer the vinegar with the sugar, salt and 1/2 cup water until the sugar and salt have dissolved. Add in the onions and let sit 8 hours or overnight.
  • Whisk together the mayonnaise, apricot habanero sauce, garlic and some salt and pepper.

½ yellow onion, chopped
2 habanero peppers, chopped
⅓ cup bourbon whiskey (such as Maker's Mark®)
3 fresh apricots, pitted and sliced

¼ cup brown sugar
2 tablespoons apple cider vinegar
½ tablespoon dried oregano
½ tablespoon Spanish paprika
½ tablespoon chili powder

Steps:

  • Heat olive oil in a pot over medium-high heat. Add onion and cook until translucent, 3 to 5 minutes. Add habanero peppers. Pour bourbon into the pot and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon. Stir in apricots, followed by tomato sauce.
