- Preheat oven to 350°F (175°C).
- Heat one tablespoon of the oil in a pan over medium-high heat. Combine the garlic, onions, mushrooms, salt, and pepper in the pan and cook until almost all of the moisture has evaporated and the onions are caramelizing, 15-20 minutes. Remove from heat and set aside.
- Lay the flank steak on a cutting board. Add salt and pepper on both sides, to taste.
- Spoon the mushroom and onion mixture on top, spreading it evenly across the steak. Sprinkle the spinach on top, followed by the slices of provolone. Press down lightly to compress the spinach.
- Starting at the bottom of the flank steak, roll it up tightly, making sure the grain of the meat is running horizontally. Use six toothpicks to secure the steak roll. Slice the steak roll into six equal rolls.
- Heat the remaining oil in a pan over high heat. Sear the steak rolls on one side for one to two minutes, then flip. Sear the second side for about one minute, then bake for 10-15 minutes, until medium rare.
- Remove the toothpicks, then serve!

- Preheat oven to 350°F (180°C).
- Heat the oil in an oven-proof skillet. Toss in the bell peppers, onions, salt, pepper, and garlic, and sauté until the veggies have softened, about 10 minutes.
- Season the flank steak on both sides with a good pinch of salt and black pepper.
- Sprinkle on the spinach in an even layer and top with the sautéed peppers.
- Sprinkle the mozzarella cheese over the veggies and tightly wrap the steak into a roll.
- Skewer the steak with toothpicks about 1½ inches (4 cm) apart so that the steak will hold its shape.
- Slice between the toothpicks to create individual steak rolls.
- Heat a few more tablespoons of oil in the skillet. When the oil has begun to smoke slightly, sear the steak rolls until browned, about 2 minutes per side.
- NOTE: To bake the entire steak roll at one time, simply sear each steak roll in a large skillet and transfer to a parchment-lined baking sheet. Once each roll has been seared and transferred to the baking sheet, proceed with steps 10-12.
- Transfer the skillet to the oven and bake for 10-15 minutes, or until it has reached desired level of doneness.
- Let the steak rest for 5 minutes before removing toothpicks.

- In a medium bowl, combine the bread crumbs, pecorino Romano, ½ cup (20 g) chopped basil, provolone, parsley, 5 minced cloves of garlic, salt, pepper, and the olive oil. Stir and set aside.
- Lay the flank steak on a cutting board. Season both sides with salt and pepper. Cover the the meat with a sheet of parchment paper. Using a meat mallet or rolling pin, pound the steak until it's ¼ inch (6 mm) thick.
- Remove the parchment and sprinkle the bread crumb mixture evenly over the steak.
- Starting from the bottom, roll the meat into a log. Using butcher's twine, tie up the roll so it holds its shape while cooking. Season with salt and pepper.
- Heat the canola oil in a large Dutch oven over high heat. When the oil is shimmering, add the steak roll and, without moving it, cook until a dark brown crust forms on one side, about 3 minutes. Turn the roll and repeat until all sides and the ends have been seared. Remove the roll from the pan and set aside.
- Preheat the oven to 350°F (180°C).
- Add the butter, carrot, onion, celery, remaining 3 cloves of garlic, salt, and pepper to the pan and cook until caramelized, about 5 minutes.
- Add the white wine and stir to loosen any brown bits from the bottom of the pot. Cook until the wine reduces and the pan is slightly dry again.
- Add the tomatoes, bay leaves, oregano, and red pepper flakes. Stir to combine.
- Return the beef roll to the pot. Cover and bake for 1 hour, flipping the roll halfway through (if the sauce is drying up too much, add more crushed tomatoes or water), until the beef is tender.

- Slice the steak in half lengthwise then season all of the sides with the salt and pepper.
- Heat oil in a pan over extremely high heat until oil is slightly smoking.
- Sear the steak for about one minute, then flip.
- Add the butter, rosemary, and garlic, swirling the pan so that the butter melts. Tilt the pan towards you, and using a large spoon, constantly scoop the melted butter on top of the steak, basting it for about one minute.
- NOTE: This helps cook the top of the steak faster and provide more flavor.
- Sear the sides of the steak for about 30 seconds, then remove it from heat completely. Repeat with the other strip of steak.
- Cut the ends off the baguette and remove the insides using a knife.
- Preheat oven to 350°F (180°C).
- Once the steaks are completely cool, stuff the hollowed out baguettes with the steak. Place the baguettes on a baking sheet.
- In a medium bowl, combine the melted butter, garlic, Parmesan, and parsley, stirring until evenly combined. Spread the garlic butter evenly on top of the steak-stuffed baguettes.
- Bake for 15-20 minutes, depending on how you like your steak.
- Slice into 1 in (3 cm) bites.

STUFFED STEAK ROLL YUM!
This recipe is simple yet amazing! It may look kind of long but i promise i just like to make sure i explain everything. For this particular time I used two 1/4" thick top round steaks, but is also great with flank steak, I go with what's on sale. Sure to please the whole family and makes PLENTY!

- First defrost spinach in microwave.
- Brown up about 1/4 pack of bacon. I just cut about 8 1/4" slices down the whole package of bacon then they cook in small pieces that when is brown you place on paper towels to cool. While bacon is browning i chop everything and then the bacon is usually finished by the time i cut everything up and then i use the 3 tbsp of the bacon oil for the next step.
- Add butter and oil to small skillet on medium heat. Once heated place in chopped onions and garlic. Let cook for about 2 minutes, and then add mushrooms. After about 1-2 mins add in the spinach, bacon (you can just roll the paper towel in a ball and the bacon will crumbles small), bread crumbs (you may a light sprinkle more), and the crumbled cheese. Mix all together and remove from the heat to cool.
- Lay out steaks and pound to thin out slightly, and tenderize. Sprinkle both side of the steak with the remaining seasonings (except chili powder), and soy sauce.
- Take the remaining sliced cheese and lay out along the surface of steaks. Then spoon on the filling and pat down, leaving about 3" without filling at each end. Then start rolling the steaks securing the ends with tooth picks. Then lightly dust with chili powder.
- Preheat the oven to 300. Place rolls in heated skillet to brown all sides, about 5 minutes totals, then place on roasting rack/pan in oven for about 45 mins (i tend to like mine medium rare, so keep in for 1 hr for less of a pink center).
- When cooled slice into 1 inch 'wheels' and fan out on serving platter. Looks BEAUTIFUL! (Goes great with a gravy and some rice or noodles.

- In a large pan, heat the olive oil over medium-high heat. Add the onion, garlic, salt, and pepper. Stir until softened, 3-4 minutes.
- Add the spinach and stir until wilted down. Remove the pan from the heat.
- Season the steak on all sides with salt, pepper, garlic powder, and paprika. Lay a piece of parchment paper over the cubed steak. Using a meat mallet or rolling pin, pound the steak until ¼-inch (6-mm) in thickness.
- Remove the parchment paper. Lay the slices on Monterey Jack evenly over the cube steak. Add the sauteed spinach mixture over the cheese.
- Gently roll up the steak, making sure to keep it as tightly wrapped as possible. Place the steak log on a sheet of plastic wrap. Wrap the steak up, tightly securing each side.

- Preheat oven to 325˚F (160˚C).
- Fill a pot with tall sides with one inch (2 cm) of oil and heat to 350˚F (180˚C).
- Gently place the steak roll into the oil, and fry until golden brown, about 2-3 minutes.
- Gently turn the steak over with tongs, and fry until the other side is golden brown, about 2 minutes.
- Transfer the steak roll to a baking sheet.
- Bake for 25-30 minutes.
- To a small pot on medium heat melt the butter, add garlic and the flour, mix the ingredients together until a loose paste forms and cook this mixture on low until it starts to darken just a bit, about 5 minutes.
- Add in the milk, salt, nutmeg, pepper, and whisk until smooth. Let the gravy come to a simmer, then take off the heat.
- Once the steak Rolls are finished. rest at room temperature for at least 10 minutes. Slice into four to six slices.
- Serve with mashed potatoes, green beans, carrots, corn and peppercorn gravy.

STUFFED ROLLED STEAK
This recipe was created by Sue Haas from North Salem, Indiana from a their sesquicentennial issue cookbook. These steak rolls are so tender and quite different. It reminds me of a Mexican dish with the green chiles but also has a slight Greek taste with the oregano. I cooked it in my pressure cooker (use 1-1/4 cup water) for 30 minutes and served it with white rice and a nice tossed green salad.

- Pound meat until about 1/4 inch thick.
- Sprinkle beef with 1-1/2 teaspoons salt, oregano and pepper.
- Arrange ham (I used Boar's Head Virginia ham) evenly on beef.

- Carefully roll up beef jelly roll style and tie with string.
