You've heard it many times, but it bears repeating. Nothing tastes more like home than a good Roast Stuffed Chicken. This Roast Stuffed Chicken recipe is one of our favorites. It requires only five ingredients and still comes out moist, delicious and perfectly seasoned. Try it as soon as you can!

1-1/2 cups hot water
3 Tbsp. margarine or butter, cut up
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1 whole chicken or capon (5 lb.)
1/4 tsp. dried thyme leaves or dried tarragon leaves

Steps:

  • Heat oven to 325°F.
  • Mix hot water and margarine in large bowl until margarine is melted. Add stuffing mix; stir just until moistened. Set aside. (Do not stuff chicken until ready to bake.)
  • Stuff chicken lightly with prepared stuffing; close openings with skewers and string. Place, breast-side up, on rack in baking pan; sprinkle with thyme.
  • Bake 1 hour 40 min. or until chicken is done (165°F) and stuffing is heated through (165ºF), basting occasionally with pan juices.

This method can be used for roast chicken or turkey. It turns out a lovely moist delicious bird with a tasty stuffing and gravy.

1 (120 g) box chicken flavor stuffing mix
1 1/4 cups hot water (hot tap water is ok)
2 tablespoons butter or 2 tablespoons margarine
1 (8 ounce) can water chestnuts, drained and rough chopped
1 small onion, chopped
1 -2 tablespoon poultry seasoning, to taste
1 (5 lb) chicken (fresh or frozen, thawed) or 1 (5 lb) turkey (fresh or frozen, thawed)
salt & fresh ground pepper, to taste
1/4 cup butter, softened
aluminum foil
chicken giblets
water, to cover
salt and pepper, to taste
1 teaspoon poultry seasoning
3 -4 tablespoons flour or 3 -4 tablespoons cornstarch
hot water, to thin if necessary

Steps:

  • Preheat oven to 400°F.
  • Empty contents of stuffing box, both the bread crumb and seasoning envelopes, into a medium bowl.
  • Add hot water and butter; stir to mix.
  • Add chopped water chestnuts, onion and poultry seasoning, mix thoroughly and set aside.
  • Check inside the chicken for giblets, remove and set aside.
  • Rinse chicken inside and out with cold running water.
  • Dry thoroughly inside and out with paper towel.
  • Sprinkle salt and fresh ground pepper inside the cavity and all over the outside.
  • Place chicken in a roaster.
  • Loosely pack the stuffing mix into the main cavity and any left into the neck cavity folding the skin over it.
  • If necessary secure the neck skin with a pick.
  • Take a length of kitchen string and tie the ends of the legs as close together as possible.
  • Rub the butter all over the outside of the chicken making sure to cover the whole outside surface.
  • Take two lengths of aluminum foil, place one piece over the chicken lengthwise, take the other piece and place it sideways over the first piece.
  • Tuck the foil tightly to the chicken so it is touching the bottom of the roaster but not under the bird.
  • If the bird is not completely covered (except for the underside) Use a third piece to finish covering.
  • Place the roaster on the middle rack of the oven and roast at 400f degrees for 15 minutes.
  • Reduce the heat after 15 minutes to 350f degrees and roast for approximately 2 hours.
  • At about 2 hours, carefully lift the aluminum foil and poke the chicken with a fork, if the juice runs clear, remove the foil and roast a further 30 minutes to brown the skin to golden.
  • If the juice is not yet clear, roast a little longer and check again.
  • Once the chicken is well browned, remove to platter, cover with foil and let rest.
  • In the meantime, if you wish to make giblet gravy, take the giblets (and neck if it's there), place in a saucepan, cover with water, add salt and pepper and a little poultry seasoning if you wish, bring to boil, reduce heat and simmer for at least an hour.
  • Remove to strainer, reserving liquid.
  • Chop the giblets and pick any meat off neck bones, add to a blender and add the liquid.
  • Blend to liquefy level, add 3 or 4 tablespoons flour or corn starch and blend to mix well.
  • Pour off as much fat as possible from the roaster, take a whisk and move up any bits and pieces of stuffing/chicken stuck to the bottom, remove any large pieces of skin, add the giblet mix from the blender, whisk around; place in 450°F to 500°F degree oven until bubbly, about 10 minutes; add a small amount of hot water if necessary if it is too thick until it is the consistancy you want, cook another 5 minutes.
  • (We like ours very thick) Whisk and pour into gravy boat and serve hot with the roast chicken.
  • Gravy can also be made without the giblets, just whisk up the brown bits in the roaster and add 1 cup of hot water and make a slurry of cold water and either flour or corn starch, add the slurry and whisk, cook the same as above adding a little more water if necessary.

For the Chicken:
1 (5-pound) whole chicken
1 tablespoon butter (melted)
1 tablespoon butter (cold; cut into small pieces)
Kosher salt (to taste)
Black pepper (to taste)
Optional: fresh thyme, rosemary, and sage
For the Stuffing:
1/4 cup butter
1/2 cup onion (chopped)
1/2 cup celery (chopped)
1/2 teaspoon dried thyme (or poultry seasoning to taste)
2 tablespoon fresh parsley (chopped, or 2 teaspoons dried parsley flakes)
2 cups soft breadcrumbs
2/3 cup milk (divided)
Kosher salt (to taste)
Freshly ground black pepper (to taste)
1 egg (beaten)
For the Pan Gravy:
Drippings from the chicken
3 tablespoons flour
1 1/2 to 2 cups chicken stock

Steps:

  • Gather the ingredients.
  • Preheat the oven to 375 F. Line a roasting pan with foil and set a rack in the pan.
  • Gather the melted and cold butter.
  • Using your hands or a brush, rub the chicken with the melted butter.
  • Tuck the pieces of cold butter under the chicken's skin along with the optional fresh herbs. Sprinkle the chicken generously with salt and pepper. Set aside while making the stuffing.
  • Gather the ingredients.
  • Melt the butter in a skillet or sauté pan over medium-low heat. Add the chopped onion and celery. Cook, stirring, for about 5 minutes, or until the onion is translucent and the celery is crisp-tender.
  • Add the dried thyme, parsley, and breadcrumbs . Add about 1/3 cup of milk and stir to blend. Taste and season the stuffing with salt and pepper.
  • Stir in the beaten egg and enough of the remaining 1/3 cup milk, if needed, one tablespoon at a time to make a moist mixture. Remove from heat.
  • Loosely spoon the stuffing into the cavity of the chicken.
  • Close the cavity by sewing the loose skin together with toothpicks, or twine. Alternatively, cover the cavity with a piece of foil or a slice of bread.
  • Place the chicken, breast-side up, on the rack in the roasting pan.
  • Roast the whole chicken in the preheated oven for about 1 hour and 30 minutes to 1 hour and 45 minutes, basting several times with the pan juices. When done, the internal temperature of the thickest part of the thigh, away from fat and bone must read the minimum safe temperature for consumption of 165 F. The stuffing needs to have the same temperature reading.
  • Once cooked thoroughly, remove from the oven and let rest for about 15 minutes.
  • Gather the ingredients.
  • Skim off the fat from the pan drippings, or use a fat separator. Reserve the fat.
  • Add three tablespoons of fat back in the roasting pan, reserving the remaining drippings. Add the flour and stir to make a roux . Cook on the stove, stirring, for two minutes.
  • Put the reserved drippings in a 2-cup measuring cup and add enough chicken stock until you have 2 full cups of liquid.
  • Gradually stir the chicken stock mixture into the roux mixture. Continue cooking the gravy until thickened, stirring constantly. Season with salt and pepper to taste.
  • Carve the chicken and serve with cooked stuffing and pan gravy.

BOUDIN STUFFED BONELESS ROASTED CHICKEN



Boudin Stuffed Boneless Roasted Chicken image

1 whole chicken
Olive oil
2 onions quartered and not peeled
5 cloves garlic
4 stalks celery
1 pound boudin, or an Italian sausage stuffing
1/2 cup chopped onion
Butter
Cajun seasoning, to taste
Cayenne pepper, to taste
White wine or chicken stock
Cornstarch
Smothered okra and tomatoes, for service, optional
Butterbeans, for service, optional

Steps:

  • Preheat oven to 375 degrees F.
  • Starting from backbone remove all bones except for maybe the tips of the wings. Reserve bones.
  • For the chicken stock:
  • To a medium saucepan over medium-high heat, add about 2 to 3 tablespoons olive oil. Once heated, add the vegetables and saute until onions are translucent. Next add the chicken bones and cover with water by about 1 to 2 inches. Bring the mixture to a boil. Once at a boil, reduce the heat and continue to simmer for about 3 to 4 hours, skimming the top as necessary. Next, remove the saucepan from the heat and strain. Either allow the stock to cool down and refrigerate or keep warm until needed.
  • For the stuffed chicken:
  • Stuff boudin mixture into the chicken and sew back together to reform chicken shape. Place chopped onion in bottom drip pan of a 2 piece roasting pan. Place the chicken, breast-side up, in the roasting pan. Place a small piece of butter under the skin on each chicken breast. Season chicken well with Cajun seasoning and cayenne pepper. Place in oven covered at 375 degrees F for about 45 minutes, then uncover and cook an additional 15 to 30 minutes. Deglaze drip pan with white wine or chicken stock and reduce. Pour into strained chicken stock. In a small bowl combine 1 tablespoon cornstarch with 3 tablespoons cold water and whisk until combined. Whisk the cornstarch slurry into the stock mixture and bring to a boil, allowing the sauce to thicken. If the sauce is too thin, add more cornstarch slurry. If it's too thick, add more water. After chicken has rested, top with the gravy and serve with a side of smothered okra, tomatoes and butterbeans, if desired.

GREENS STUFFED ROASTED CHICKEN

2 teaspoons cayenne
2 teaspoons paprika
2 teaspoons salt
2 teaspoons ground black pepper
2 cups raw mustard greens, shredded
1/2 cup thin sliced red onion
1/2 cup diced fresh peaches
1 whole fresh chicken (3 pounds average)
1/2 cup clarified butter

Steps:

  • For the seasoning: Combine the cayenne, paprika, salt and pepper in a bowl, mixing well.
  • For the chicken: Preheat the oven to 300 degrees F. In a bowl, mix the greens, onions, peaches, 1/4 cup butter and 1 tablespoon of the prepared seasoning, mixing well. Next, open the center cavity of the chicken and stuff it with seasoned greens/fruit mixture. Then drizzle the remaining 1/4 cup butter over the skin of the chicken. Dust with the remaining seasoning.
  • Roast the chicken for 50 minutes, and then remove from the oven. Raise the oven temperature to 450 degrees F, allow to heat for 10 minutes, and then place the bird back in the oven and finish until skin is crisp, 8 to 10 minutes. Remove the chicken from the oven and allow to rest for 5 minutes before cutting or carving.

The Best Roast Chicken image

We tested several different methods for a classic roast chicken, and this one, stuffed with lemon, garlic and herbs, won out for flavor and ease. It's perfect in its simplicity. Along the way we found that olive oil - not butter - creates the best golden-brown skin.

One 3 1/2- to 4-pound whole chicken
Kosher salt and freshly ground black pepper
1 lemon, cut into 8 wedges
1 head garlic, halved crosswise
3 sprigs mixed fresh herbs (thyme, rosemary and sage)
1/4 cup olive oil

Steps:

  • Pat the chicken dry with paper towels. Sprinkle generously with at least 4 teaspoons salt all over the outside of the bird and inside the cavity. Let the chicken sit at room temperature for 1 hour to allow the salt to penetrate. Or you can refrigerate it, uncovered, up to 1 day ahead.
  • Set a wire rack inside a foil-lined rimmed baking sheet. Position a rack in the lower third of the oven and preheat to 425 degrees F.
  • Toss the lemon wedges, garlic and herbs with 1 teaspoon salt and 1 teaspoon pepper in a medium bowl. Stuff the lemons, garlic and herbs in the cavity of the chicken. Tie the legs together with kitchen twine and tuck the wing tips underneath the back. Transfer the chicken to the prepared baking sheet. If you refrigerated the chicken, let it sit at room temperature 30 minutes to 1 hour before roasting.
  • Just before roasting, brush the oil over the entire outside of the chicken (but don't worry about the bottom), making sure to get into all the nooks and crannies so they evenly brown. Roast the chicken, rotating the baking sheet after 35 minutes, until the skin is golden brown and crispy and an instant-read thermometer inserted into the thickest part of the breast registers 155 degrees F, 70 to 80 minutes (the temperature will climb to 165 degrees as the chicken rests).
  • Let the chicken rest on the baking sheet for 20 minutes (do not tent with foil or the chicken will overcook and the skin will get soggy).
  • Transfer the chicken to a cutting board and discard the lemons, garlic and herbs. Carve into serving pieces.

SAUSAGE-STUFFED ROASTED CHICKEN BREAST AND SIDE DISHES



Sausage-Stuffed Roasted Chicken Breast and Side Dishes image

4 boneless, skin on chicken breasts
2 cups flour, for dredging
6 maple breakfast sausage links
2 tablespoons extra virgin olive oil
1 cup prepared basil pesto
1 cup condensed milk (as used) or cream
1/4 cup dark raisins
1 cup warm water
2 (10-ounce) packs frozen spinach
1 medium yellow onion
2 vine ripe tomatoes
Unsalted butter, for sauteing
4 zucchini flowers
Small piece Brie
1/2 pound fresh string beans
1 fresh lemon

Steps:

  • Pre-heat the oven to 350 degrees
  • To prepare chicken: If frozen, thaw the chicken breasts, rinse, pat dry and set aside. Using a large flat plate prepare the "dredging flour" with salt and pepper and set aside. Take 2 of the maple sausage links and cut them into half so you have 4 pieces. Open the chicken breasts and remove the "fillet" and reserve for another use. Make a small pocket in the inside of the breast. Place 1 of the sausage pieces in the pocket and wrap the breast around it creating a closed container surrounding the sausage. Dredge the breasts in the prepared flour and set the 4 breasts on a clean plate. Heat 2 tablespoons of olive oil in an oven safe lidded skillet. Starting with the open end first, brown the breasts fully being careful not to open the closed breast. As the breasts cook, the opening will seal making it easier to finish the searing and browning. Once fully browned cover and place in the oven and cook through. Using a small saucepan, combine basil pesto and cream and mix well. Over medium heat reduce the pesto/cream mixture by 1/3 and set aside.
  • For the spinach: Plump the raisins in a cup of warm water and set aside. Cut the remaining sausage in to small pieces and set aside. Remove the frozen spinach from the package. Carefully cut the blocks into 8 large pieces. Using a lidded skillet, saute the onion in 2 tablespoons of olive oil for 2 minutes. Add the sausage and lightly brown. Add the frozen spinach and cover. When the spinach has totally thawed combine the onion and sausage and season with salt to taste. Add the raisins and their liquid and finish cooking, about 10 minutes. Allow the liquid to evaporate but do not dry out completely.
  • Tomatoes, zucchini flowers and string beans: Using a non-stick pan quickly sear the tomatoes in some butter. Do not cook them longer than 30 seconds on each side. Reserve the pan and juices for cooking the zucchini flowers. Gently open the zucchini flower and remove the piston from its center. Replace it with a small piece of brie and close the flower. Using the same pan from above quickly cook the zucchini flowers. They are done when you see the Brie melting. Remove from the pan and place 1 on each of the seared tomato slices. Set aside. Bring a pot of lightly salted water to a boil. Add the string beans and cook until your desired doneness. Dress with extra virgin olive oil and some freshly squeezed lemon. Season with the freshly ground black pepper.
  • Remove the roasted chicken breasts from the oven and remove the skin. Place one breast centered on the lower third of the individual plate. Place a zucchini flower topped tomato on each plate centered above the breast. Frame the plate with some dressed sting beans on one side and the sauteed spinach on the other. Slowly re-heat the basil pesto sauce and place 2 to 3 spoonfuls of the sauce on each breast. Serve warm and enjoy.

RICOTTA AND HERB-STUFFED ROAST CHICKEN



Ricotta and Herb-Stuffed Roast Chicken image

1 (3 1/2 pound) free-range chicken, spatchcocked*
1 1/2 cups fresh ricotta cheese
2 tablespoons chopped fresh chervil
2 tablespoons fresh snipped chives
2 teaspoons grated lemon zest
Sea salt and freshly cracked black pepper
Olive oil, as needed

Steps:

  • Preheat an oven to 400 degrees F.
  • *To spatchcock the chicken: Place the bird, breast side down on a cutting board. Using poultry shears or a sharp knife, score along both sides of the backbone, cutting through the skin and bone. Remove the backbone. Turn the bird over and press firmly on the breast bone to break it, and flatten the breast. Tuck the wing tips under the breast. Set the chicken aside.
  • In a large bowl, mix together the ricotta, chervil, chives, lemon zest, and season with sea salt and black pepper, to taste. Using your fingers, carefully loosen the skin over the breast of the chicken and down to the thigh area. Spread the ricotta mixture evenly under the skin to coat the breast and thigh meat.
  • Set the chicken in a roasting pan, drizzle it with olive oil and re-season with salt and black pepper, to taste. Roast until the juices run clear when you poke a skewer into the thickest part of the thigh, about 50 minutes. Let the chicken rest for 5 minutes before carving.

ORIENTAL ROASTED STUFFED CHICKEN

Found this recipe in a cookbook, and made this for Christmas instead of the usual Roast Turkey. Just for a little oriental touch. Looks good on the table, as good as restaurant made, or better! According to my Christmas guest.

1 large chicken, obvious fat removed but with the skin on
2 cups ready-sliced dried Chinese mushrooms
2 bunches boiled baby bok choy
20 shallots, peeled and left whole
20 garlic cloves, peeled and left whole
1/2 cup red wine (any sort)
2 teaspoons light soya sauce
3 tablespoons honey
1 teaspoon salt

Steps:

  • Soak the mushroom slices in water till they soften.
  • Keep the soaking liquid aside.
  • Loosen skin of chicken.
  • Rub the marinade under the skin, in the cavity and over the skin.
  • Do keep a little bit of marinade aside for the gravy.
  • Tuck the sliced mushrooms under the skin of the chicken.
  • Heat oven to 200°C (fan assisted).
  • Roast chicken in a large roasting tin, loosely covered with foil for 30 minutes.
  • Turn heat down to 150°C, add shallots and garlic, and roast uncovered for 20 minutes.
  • Pierce with a skewer, if the juice runs clear, the chicken is ready.
  • TO MAKE THE GRAVY: Pour out excess oil from the roasting tin, add a cup or so of mushroom water, and leftover marinade to the pan.
  • Heat through on top of the stove.
  • Taste to adjust seasoning.
  • Place the chicken on a pretty plate, and garnish with the baby pak choy.

LEMON ROAST CHICKEN WITH CHORIZO STUFFING

The Spanish-style stuffing in this roast chicken dish is packed with flavour and even more so if you make it ahead of time

4 onions , 2 unpeeled and thickly sliced, 2 finely chopped
2 tbsp olive oil , plus extra for greasing
3 tsp sweet smoked paprika
4 lemon thyme sprigs
1 ½kg whole chicken
2 lemons , zested and then halved
100g chorizo , diced
120g cooking chorizo , meat squeezed from the skins
175g fresh white breadcrumbs
100g soft dried apricots , chopped
4 tbsp chopped flat-leaf parsley
1 large egg , beaten
250ml glass white wine
400ml chicken stock
sauteed potatoes and steamed broccoli, to serve (optional)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Lay the sliced onions in the middle of a roasting tin. Mix the oil with 2 tsp paprika and leaves from one of the thyme sprigs. Rub all over the chicken, sit it on top of the onions and season well. Push 3 of the lemon halves inside the cavity, cover the chicken loosely with foil and roast for 45 mins.
  • Meanwhile, make the stuffing. Cook the diced chorizo over a low-medium heat until crisp and plenty of oil has collected in the pan. Scoop out the chorizo to cool, and tip the chopped onions into the pan. Soften gently for 15-20 mins, then tip into a bowl to cool.
  • Rub together the cooking chorizo meat and the breadcrumbs, as if you were rubbing butter into flour to make pastry. When the breadcrumbs are all orange, mix in the cooked chorizo and onions, apricots, parsley, leaves from another thyme sprig, remaining paprika, the lemon zest and egg. Squeeze over the juice from the remaining lemon half, season with lots of pepper, then use your hands to squish everything together really well.
  • Grease a small roasting tin and push in the stuffing, roughing up the surface with a fork - this will create lots of crispy bits. Tear over the remaining thyme sprigs.
  • After 45 mins, remove the foil from the chicken and pour the wine and stock into the tin. Reduce oven to 180C/160C fan/ gas 4 and put the chicken back in with the stuffing on a shelf below. Roast for another 45 mins until the juices between the legs and body run clear.
  • Rest the chicken for 15 mins while you bubble the pan juices to reduce a little, then carve and serve with the stuffing, reduced juices, and sautéed potatoes and steamed broccoli, if you like.

Jacques's Savory-Stuffed Roast Chicken image

Yield Makes 4 or 5 servings

Number Of Ingredients 11

1 chicken, 3 1/2 to 4 pounds
For the stuffing:
1 tablespoon unsalted butter
1 teaspoon virgin olive oil
1/2 cup minced shallots (4 or more large shallots)
4 tablespoons chopped fresh parsley
1 tablespoon finely chopped fresh savory
1/8 teaspoon salt
1/8 teaspoon ground pepper
1/4 teaspoon salt for sprinkling on the chicken
Butter or vegetable oil for the roasting pan

Steps:

  • Special equipment:
  • A small frying pan; a shallow- sided heavy aluminum or copper roasting pan or heavy cast-iron skillet, just large enough to hold the trussed chicken; a 1-quart glass measuring cup or deep bowl; cotton kitchen twine; a basting brush; a board or platter for resting and carving.
  • Preparing the herb stuffing:
  • Preheat oven to 425°F.
  • Heat the butter and olive oil in the frying pan over medium heat. When hot, add the shallots, parsley, savory, salt, and pepper, stirring well and tossing in the pan. Cook for about a minute, just until the shallots begin to soften. Scrape the mixture on a plate to cool.
  • Preparing the chicken:
  • Remove any lumps of fat from inside the cavity near the tail.
  • To make carving easier, remove the wishbone. Lift the flap of neck skin and insert a thin, sharp knife into each end of the breast; then slice diagonally along both sides of the wishbone. Use your finger and thumb to loosen the bone, pry it out at the top, and pull it down. Try to remove it whole-if it breaks, carefully wiggle out the pieces. Cut the wings at the "elbow" joint, leaving only the meaty section attached to the shoulder.
  • Place the chicken on its back. To loosen the breast skin, lift the neck flap and work your fingers between the skin and the flesh, taking care not to puncture the skin. Slide your fingers down the breast and to either side along the legs, especially the thighs.
  • Stand the chicken on its tail end in the measuring cup or bowl; hook the wing sections over the rim, to keep the bird upright. Hold the neck flap away from the breast and stuff the cooled herb mixture down between the skin and the flesh, pushing it gently to the sides and bottom. Lay the chicken on its back, tuck the neck flap underneath, and smooth the skin, to distribute the stuffing evenly over the entire breast.
  • Roasting the chicken:
  • Sprinkle 1/4 teaspoon salt all over the chicken. Grease the center of the roasting pan with a small amount of butter or a dash of oil to prevent sticking (or place a small piece of oiled parchment paper in pan bottom). Set the chicken on its side in the greased pan and place in the oven.
  • Roast for 25 minutes for a 3 1/2-pound chicken (3 or 4 minutes longer for a 4-pound bird), then turn the chicken onto its other side, grasping it with kitchen tongs or towels. The first side on which it rested will be deeply colored; be careful not to tear the skin when turning. Roast for another 25 to 28 minutes, depending on size, then turn the chicken breast-side up; baste with the pan juices. Roast for 10 minutes and baste once again during this final cooking. Test the chicken for doneness; return to the oven for a few minutes if necessary.
  • Remove the chicken to a cutting board; place it on one side or breast down, so the juices flow into the breast meat, and let rest for 15 minutes.
  • Final Steps:
  • Make the deglazing sauce in the roasting pan. Drizzle about half the pan sauce over the carved pieces and serve, passing the rest of the sauce.

4 cloves garlic, peeled
1 teaspoon dried rosemary
1 teaspoon dried thyme
1/2 teaspoon dried sage
1 1/2 cups unsalted chicken stock
1 1/2 lbs potatoes, pared & diced
3 1/2 lbs roasting chickens, skin on but as much fat as possible removed

Steps:

  • Process the parsley, garlic, rosemary,thyme and sage until minced.
  • Reserve 2 tbsp.
  • Put 1 cup of chicken stock in a sauce pan add the herb mixture (reserve the 2 tbsp) and bring to a simmer.
  • Stir in the potatoes, heat to boil,covered, cook until they are tender but still firm about 15 min.
  • let them rest to cool, drain if there is any stock left, and reserve it.
  • Spoon half the potatoes into the chicken sew the cavity shut.
  • Rub the reserved herb mixture all over the chicken.
  • Arrange remaining potatoes around the chicken in the baking dish.
  • Spoon some of the remaining broth over the chicken.
  • Roast in a 375F oven for 1 hour or until the juices run clear-internal temp 180f degrees.
  • Baste the chicken every 15 minutes with the stock.

1 garlic clove, crushed
2 chicken breasts, skin on
4 slices prosciutto
splash olive oil
juice of half a lemon

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Mix the mascarpone with the rosemary, garlic and seasoning. Place the chicken breasts on a board and lift, but don't detach, the skin. Put a spoonful of the mascarpone mix under the skin of each breast. Wrap 2 slices of prosciutto around each, as neatly and tightly as you can, to keep the filling enclosed.
  • Heat a non-stick frying pan, add the olive oil and quickly brown the chicken on both sides. Transfer to a roasting tin, then finish off in the oven for 15-20 mins until just cooked.
  • Add the lemon juice to the roasting tin and stir over the heat, scraping off any crispy bits. Spoon the juices over the chicken and serve with potatoes and green beans.

1 teaspoon saffron
1 teaspoon ground nutmeg
1 tablespoon warm milk
2 ounces butter
1 large onion, chopped
2 hard-boiled eggs, and chopped
1/3 cup dried apricot, soaked till soft and chopped
2 fresh green chilies, chopped
1/3 cup sultana
1/2 cup ground almonds
1/4 cup white poppy seeds, ground
4 spring onions, chopped
3 garlic cloves, crushed and chopped
1 teaspoon five-spice powder
6 green cardamoms, split open
1/2 teaspoon turmeric
1 teaspoon black pepper, ground
2 tablespoons plain yogurt
5 fluid ounces water
1/2 cup desiccated coconut

Steps:

  • Mix together the saffron and nutmeg into the milk. Brush the chicken skin with the mixture and then pour the remaining milk into the body cavity.
  • Melt the butter in a large pan and when hot brown the chicken all over, remove the chicken and set aside for stuffing.
  • Using the same pan, in the remaining butter fry the chopped onions chillies, and sultanas, for 3 minutes Remove from the heat.
  • Add the ground almonds, poppy seeds, apricots and eggs.
  • Stuff the chicken with the mixture.
  • In the same pan fry all off the masala ingredients over low heat for 4 mins, add the water and stir well.
  • Place the chicken on the bed of masala, cover the pan and cook over medium heat till chicken is tender, about 1 1/4 hours.
  • Serve the chicken with the masala gravy poured over and garnished with the coconut.

4 ounces unsalted butter, softened
1 large onion, coarsely chopped
1 teaspoon salt
1/2 teaspoon fresh ground pepper
1 tablespoon fresh thyme leaves or 1 teaspoon dried thyme
3 1/2 lbs whole chickens
6 medium potatoes, scrubbed & quartered

Steps:

  • In a skillet, melt 1 T butter over medium heat.
  • Add onion, 1/4 teaspoon salt and a pinch each of pepper and thyme; saute until onion is light brown (about 10 minutes), then remove from the skillet and let cool to room temperature.
  • In small bowl combine remaining 7 tablespoons of butter, 1/4 teaspoon salt, a pinch of pepper, and remaining thyme.
  • Using your fingers, gently loosen the breast, thigh and leg skin of the chicken: place in baking dish.
  • Rub 4 tablespoons thyme butter under the skin and stuff the cavity with browned onion.
  • Seal the cavity, rub skin with 1 tablespoon thyme butter, and arrange potatoes around chicken.
  • Bake chicken at 400 degrees for 1 hour and 15 minutes or until juices run clear when the thigh is pierced.

1 lemon, halved
1/4 cup olive oil, divided
2 large baking potatoes (1-1/2 lb.), peeled, cut into chunks
2 sweet potatoes (1-1/2 lb.), peeled and cut into chunks

Steps:

  • Heat oven to 375ºF.
  • Mix cream cheese, rosemary, half the garlic and pepper. Starting at neck of chicken, use handle of wooden spoon or fingers to carefully separate skin from meat of breast, thighs and legs, being careful not to tear the skin. Spoon cream cheese mixture under skin; use fingers to spread mixture out to thighs and legs. Place lemon halves into cavity of chicken. Place chicken in shallow pan. Brush with 2 Tbsp. oil.
  • Toss potatoes with remaining oil and garlic in separate pan. Bake chicken and potatoes 1-1/4 to 1-1/2 hours or until chicken is done (165º F), stirring potatoes every 30 min.

In small skillet, melt butter over medium heat. Add pancetta; cook, stirring often, 2 to 3 minutes. Add shallot; cook until softened, about 5 minutes. Add wine; simmer until reduced by half, 2 to 3 minutes. Remove pan from heat; let cool. In bowl, using hands, combine pan­cetta mixture with bread crumbs, orange zest and juice, figs, sage and egg.
