CHEESE AND PEPPERONI PIZZA BITES



Cheese and Pepperoni Pizza Bites image

Skip the slice in favor of a quick and easy recipe for pizza bites stuffed with cheese and pepperoni and dunked in marinara sauce.

1 pound homemade or store-bought pizza dough, at room temp
Flour, for rolling out dough
1/2 cup homemade or store-bought marinara sauce, plus more for serving
1 1/2 cups shredded mozzarella cheese
1 cup sliced pepperoni
1 large egg
3 Tablespoons shredded Parmesan cheese
Dried oregano or pizza seasoning

Steps:

  • Preheat the oven to 375ºF. Grease a 9-inch cake pan with cooking spray.
  • Lightly flour your work surface then divide the dough into 19 equal portions. Roll each piece of dough into a small circle about 3 inches in size. Add 1 to 2 teaspoons of marinara sauce into the center of each piece of dough then sprinkle the marinara with a small portion of the cheese and one slice of pepperoni. Pull all of the sides up to meet in the center, firmly pinching to seal the fillings inside the dough pocket. Repeat the filling and sealing process with the remaining pieces of dough.
  • Beginning in the center, arrange the filled dough balls seam side down in a single layer in the prepared pan. (Do not overlap the dough balls.)
  • In a small bowl, whisk together the egg with 1 tablespoon water. Brush the eggwash all over the tops of the dough balls then sprinkle the Parmesan cheese on top.
  • Bake for 25 to 27 minutes until golden brown and bubbly. (You can check if the dough is fully baked by lifting one piece to see if the bottom has browned slightly.) Remove the pizza bites from the oven, sprinkle the tops with the dried oregano and serve with additional marinara sauce for dipping.

1 pound pizza dough
8 ounces mozzarella cheese (cut into 16 cubes, or shredded)
3 ounces sliced pepperoni (chopped)
2 tablespoons olive oil
¼ teaspoon garlic powder
¼ teaspoon Italian seasoning blend
2 tablespoons parmesan cheese (grated)
pizza sauce (for serving)

Steps:

  • Preheat oven to 400°F and spray a 9x9 baking dish with non-stick spray, set aside.
  • Divide dough into 16 pieces. Roll each out into a ¼ inch thick circle.
  • Add equal parts cheese and pepperoni into the center of each circle. Pinch together the corners of the dough and create a ball.
  • Place the balls, seam side down, into the prepared baking dish.
  • After all the balls have been made and are in the dish, brush the tops with olive oil and sprinkled on garlic powder, Italian seasoning, and Parmesan cheese.
  • Bake for about 20 minutes or until the dough is fully cooked and the rolls are golden brown.
  • Serve with warmed pizza sauce for dipping.

1/2 pound bulk Italian sausage
1/2 pound lean ground beef
3 1/3 cups Original Bisquick™ mix
3/4 cup cold water
3 cups shredded mozzarella cheese (12 ounces)
1 jar (14 to 15 ounces) pizza sauce
1 cup sliced fresh mushrooms (3 ounces)
1/4 cup chopped green bell pepper

Steps:

  • Heat oven to 450°F. Grease rectangular baking dish,13x9x2 inches. Cook sausage and ground beef in 10-inch skillet over medium heat, stirring occasionally, until brown. Drain; set aside.
  • Stir Bisquick and water in large bowl until dough forms. Divide dough into 2 parts, 1 part slightly larger. Roll larger part dough into rectangle, 16x14 inches, on surface dusted with Bisquick. Fold crosswise into thirds. Place in center of baking dish; unfold. Press on bottom and up sides of dish. Sprinkle with 1 cup of the cheese; top with 3/4 cup of the pizza sauce, the meat mixture, mushrooms and bell pepper, pizza toppings and 1 1/2 cups of the cheese.
  • Roll remaining part dough into rectangle, 13x9 inches. Fold crosswise into thirds. Place on cheese in center of baking dish; unfold. Press bottom and top crust edges together to seal. Make small slits in top crust. Spread remaining pizza sauce over crust; sprinkle with remaining cheese. Bake uncovered 22 to 25 minutes or until edges of crust are golden brown.

8 ounces mozzarella cheese, cut into 48 cubes
48 slices pepperoni
1/4 cup olive oil
1 1/2 teaspoons italian seasoning
2 tablespoons parmesan cheese
1 (14 ounce) jar pizza sauce, heated

Steps:

  • Heat oven to 400.
  • Spray 13x9 pan with non-stick cooking spray.
  • Remove dough from cans and unroll.
  • Press out each dough rectangle to form 12x8 rectangle.
  • Cut each rectangle into 24 squares.
  • Top each square with cheese cube and pepperoni.
  • Wrap dough around filling completely.
  • Press edges to seal and place seam side down with sides touching in pan.
  • Combine oil and seasoning in a small bowl and drizzle over dough in pans.
  • Sprinkle with parmesan cheese.
  • Bake at 400 for 15 to 25 minutes or until golden brown.
  • Serve with warm pizza sauce.

  • Preheat oven to temperature specified on pizza dough package. Usually it’s 400 degrees. (This is also a good option if you make your own dough.)
  • Unroll your pizza dough onto a lightly-floured surface. Pat or roll the dough so it’s at least 12″ by 8″. Use a pizza cutter to slice the dough into 24 squares.
  • Place cheese and desired toppings on each square. I found that it worked best if you layer the cheese on first, as this makes a softer bottom layer for the dough to fold around. Make sure to use just enough toppings so that the dough can fold easily around them.
  • When all of your dough squares have cheese and toppings on them, carefully lift up each square and wrap the dough around the toppings. Pinch to make sure each ball is sealed shut and then place seam-side-down in a lightly sprayed pie pan (or similar sized dish).
