1/2 teaspoon salt
1/8 teaspoon pepper
1 tablespoon vegetable oil
1/2 cup packed brown sugar
1/2 cup thawed orange juice concentrate
Hot cooked rice

Steps:

  • Sprinkle pork chops with salt and pepper. In a skillet over medium-high heat, brown chops in oil on both sides. Combine brown sugar and orange juice concentrate; pour over the chops. Bring to a boil. Reduce heat; cover and simmer for 7-9 minutes or until the meat juices run clear. Serve pork and sauce over rice.

1/2 cup butter or margarine
3 medium stalks celery, diced (1 1/4 cups)
3/4 cup finely chopped onion
2 teaspoons dried sage leaves

1/2 teaspoon salt
1/4 teaspoon pepper
1 cup Progresso™ chicken broth (from 32-ounce carton)
8 pork boneless center-cut loin chops (about 4 ounces each)
3 tablespoons orange marmalade
1 teaspoon lemon juice

Steps:

  • Heat oven to 200°F. Place bread slices in single layer on cookie sheet. Bake about 1 hour or until dry. Coarsely crumble enough dry bread to measure 10 cups. Place in large bowl.
  • Heat oven to 350°F. Melt butter in 8-inch skillet over medium heat. Cook celery and onion in butter 6 to 8 minutes, stirring occasionally, until tender. Stir in sage, thyme, salt and pepper. Pour over bread crumbs; toss to mix. Pour broth over bread crumbs; toss to mix (mixture will be dry). Spoon into ungreased 13x9-inch (3-quart) glass baking dish.
  • Place pork chops on stuffing. Mix marmalade and lemon juice in small bowl; brush over pork. Bake 45 to 60 minutes or until pork is no longer pink in center.

4 pork loin chops, about 5 ounces each
Salt and freshly ground black pepper
1 tablespoon peanut oil
1 cup orange marmalade
1/2 cup reduced-sodium chicken broth
2 tablespoons reduced-sodium soy sauce
1 teaspoon sesame oil
12 ounces udon noodles, cooked according to package directions
2 tablespoons chopped scallions

Steps:

  • Heat peanut oil in a large skillet over medium-high heat. Season both sides of pork with salt and black pepper. Add pork to the skillet and cook 2 minutes per side, until golden brown.
  • In a medium bowl, using a spoon, combine orange marmalade, broth, soy sauce, and sesame oil. Mix well and add to the pork in the pan. Bring to a simmer for 5 minutes, or until pork is cooked through and sauce thickens and reduces. Arrange noodles on a serving platter. Top with pork chops and sauce. Garnish with scallions just before serving.

1 medium Granny Smith apple, peeled and diced
1 celery rib, diced
1/3 cup raisins
2-1/2 cups apple juice, divided

4 center-cut pork rib chops (1-1/2 inches thick and 12 ounces each)
1/2 teaspoon salt
1/4 teaspoon coarsely ground pepper
1/3 cup packed brown sugar

  • Preheat oven to 350°. Place first four ingredients in a large bowl. Add 3/4 cup juice and melted butter; toss until combined., Cut a pocket in each pork chop by slicing horizontally to the bone. Fill each with about 1/2 cup stuffing; place on a rack in a roasting pan. Sprinkle pork with salt and pepper. Add 1-1/2 cups apple juice to pan. Cover tightly with foil; bake until a thermometer inserted in pork reads at least 145°, 35-45 minutes., Place remaining stuffing in a greased 8-inch baking dish. 1/4 cup chopped prunes
1/4 cup toasted slivered almonds, chopped, plus more for garnish
3 tablespoons lemon olive oil
4 pork loin rib chops, 1 1/2 inches thick
Course salt and freshly ground black pepper
2 ounces goat cheese

Steps:

  • In a bowl, mix the prunes and almonds with 1 tablespoon of lemon olive oil.
  • Cut a pocket on the side of each pork chop from the fat side to the bone. Season the outside of each chop with salt and pepper, to taste. Stuff each chop with 1/2-ounce of goat cheese, pushing it to the bottom of the opening, then stuff with the prune mixture. Secure with toothpicks.
  • Heat the remaining 2 tablespoons lemon olive oil in a large shallow Dutch oven over medium-high heat. Sear the chops on both sides until golden brown. Add water to come 1/4 of the way up the side of chops. Cover and simmer until the chops are cooked, about 15 to 20 minutes. Remove chops to a serving platter and simmer the liquid and any stuffing drippings until reduced to a thick sauce. Pour the sauce over the chops and serve garnished with toasted almonds.

stuffing: 2 tbsp. butter 1/3 c. finely chopped onion 1/2 c. chopped celery 1 1/2 c. soft bread cubes 2 tbsp. chopped parsley 1 tsp. salt 1/2 tsp. grated orange peel 1 1/2 tsp. seasoned salt 3 tbsp. orange juice
glaze: 1/2 c. orange juice 1/4 c. light brown sugar 1/4 c. orange marmalade 2 tbsp. cider vinegar

Steps:

  • 1. Preheat oven to 375 degrees. Wipe pork chops well. Make stuffing. In hot skillet add butter, cook onions and celery until tender, about 8 minutes. Add bread cubes and brown slightly. Remove from heat. Add parsley, salt, orange peel, 1 teaspoon seasoned salt and orange juice; toss mixture lightly to combine. Fill pocket of chops with stuffing. Stand chops on rib bones on rack in shallow roasting pan. Sprinkle with 1/2 teaspoon seasoned salt. Pour water to 1/2" depth in roasting pan (water should not touch rack). Cover chops and roasting pan with foil. Bake chops 1 1/2 hours. Meanwhile, make Glaze. Combine all ingredients in small saucepan, mixing well. Bring to boiling, stirring. Reduce heat and simmer, uncovered 15 minutes, stirring. Remove foil from chops and pour off water. Brush chops with some of the glaze. Tasty pork chops with a simple bread and celery stuffing, and a sweet and sour orange marmalade sauce. The original recipe, from McCall's Greatest Recipe Card Collection, called for 4 rib chops cut 1-1/2" thick (2 lbs. total) with a pocket. Instead of the rib chops I use boneless pork chops, place stuffing between two of them, then tie them together with kitchen string. Then I adjust the cooking time according to the thickness of the chops. You can adjust the seasonings to suit your taste too. The stuffing is also good with chicken breasts. Serve with a green veggie or salad and baked potatoes for dinner. Note: Edited to remove some of the salt and reduce the sweetness of this recipe.

This is one of my favorite recipes to show off to friends. Stuffed with leeks and bacon with an apple Dijon mustard glaze. It is a very moist and tasty pork chop. I like to serve it with Roasted Red Potatoes with fresh rosemary and sea salt, and sauteed fresh green beans.

6 slices bacon, chopped
1 cup sliced leek
1/4 cup dry white wine
1/2 teaspoon thyme
1 dash salt
1 dash pepper
1/4 cup apple jelly
1 teaspoon dijon-style mustard
4 boneless pork loin chops

Steps:

  • For stuffing, in a large skillet, cook bacon over medium high heat until crisp. Remove with a slotted spoon and rain on paper towels. Reserve 2 teaspoons drippings in skillet. Cook leeks in reserved drippings for 3 to 4 minutes or until almost tender. Add the wine, thyme, salt, and pepper. Cook and stir until liquid is evaporated. Remove from heat. Stir in cooked bacon.
  • For glaze, stir together the apple jelly and mustard; set aside. Trim fat from chops. Make a pocket in each chop by cutting from fat side almost to, but not through, the opposite side. Spoon stuffing into pockets with chops. If necessary, secure with wooden toothpicks. Sprinkle with additional salt and pepper.
  • Place chops on rack of an uncovered grill directly over medium coals or medium low flame on your gas grill. Grill about 20 minutes or until juices run clear, turning once, and brushing with glaze the last five minutes of grilling. Remove toothpicks before serving.

Thick pork chops are stuffed with a mixture of acini de pepe, dried apricots and celery and grilled. The pork chops are basted with a glaze made up of honey, dijon mustard and apricot preserves giving it a delectable sweet flavor. Leftover stuffing is also cooked on the grill as a side dish. I diced up a small piece of crystalized ginger instead of the ground ginger.

1 tablespoon dijon-style mustard
2 tablespoons apricot preserves
2 tablespoons vinegar
1 cup chicken broth
1/2 cup acini di pepe pasta
4 green onions, thinly sliced

1/3 cup dried apricot, diced
1/2 cup celery, finely chopped

  • For glaze, combine honey and Dijon mustard in a small saucepan.
  • Stir in apricot preserves and vinegar.

  • Remove from heat and set aside.
  • For stuffing, In a saucepan, add chicken broth, green onions and ginger.
  • Bring to a boil and add the acini de pepe.

  • (you may need to add a little more broth).
  • Remove from heat.
  • Fold in apricots, 2 TB of the honey glaze and the celery.
  • Cut a pocket in each pork chop
  • Spoon about 3 TB stuffing into each chop.
  • Fasten pockets with toothpicks.
  • Spoon remaining stuffing onto a large sheet of heavy-duty aluminum foil.
  • Fold securely, leaving space for steam to build.
  • Set aside.
  • In a covered grill, place chops on a hot grill off to the side, NOT directly over the coals.
  • Cover and grill for approximately 25 minutes, basting often with honey glaze, turning chops after about 10 minutes.
  • Place foil packets of stuffing on grill next to the chops but not over the coals and grill along with the chops. Pork chops should have an internal temperature of the 145 degrees.

Pork Loin: 1.25 pounds
Salt: 1/4 teaspoon
Pepper: 1/8 teaspoon
Orange Juice: 1/2 cup
White Wine: 1/4 cup dry
Fresh Tarragon: 1 tablespoon chopped
Cornstarch: 1 tablespoon
Water: 2 tablespoons
Pork Rib Chops: Instead of pork loin, use same amount of
Chicken Broth: Instead of white wine, use
Dried Tarragon Leaves: Instead of fresh tarragon, use 1/2 teaspoon of

Steps:

  • Cut and discard most of the fat from the pork chops. Spray the room-temperature skillet with cooking spray, and heat over medium heat 1 to 2 minutes. Sprinkle salt and pepper over both sides of pork chops. Cook them in hot skillet about 5 minutes, turning once, until light brown. Remove the skillet from the heat.
  • Add the orange juice, wine, and tarragon to the skillet. Heat to boiling over high heat. Once the mixture is boiling, reduce heat just enough so the mixture bubbles gently. Cover and cook 10 to 15 minutes, stirring occasionally, until pork is slightly pink when you cut a small slit near the bone.
  • While the pork chops are cooking, mix the cornstarch and water.
  • When the pork chops are done, remove from the skillet to a serving platter. Cover with aluminum foil or lid to keep warm. Stir cornstarch mixture into orange juice mixture in skillet. Cook over medium heat, stirring constantly until the mixture thickens and boils. Continue boiling 1 minute, stirring constantly. Pour over the pork chops and wait 5 minutes until serving. Enjoy!

4 loin pork chops - 1 inch thick
2 slices raisin bread - 1 cup - cut into cubes
1/2 cup chopped apple
1/2 cup chopped pecans
1/4 teaspoon grated orange peel
1/2 teaspoon salt
1/8 teaspoon cinnamon
Dash pepper
1/4 cup orange juice
2 tablespoons sugar
1 tablespoon cornstarch
1 cup apple juice
1 tablespoons margarine or butter

Steps:

  • Preheat oven to 350°F. Cut deep horizontal pocket in each pork chop.
  • In medium bowl - combine next 8 ingredients. Mix well. Stuff each chop with about 1/4 of the stuffing mixture. Place chops in ungreased 13x9 inch pan.
  • Bake for 30 minutes.
  • Meanwhile - in small saucepan combine sugar and cornstarch - stir in apple juice. Cook over medium-low heat till mixture boils and thickens - stirring frequently. Remove from heat - stir in margarine. Pour evenly over chops -Bake an additional 30 to 35 minutes or till pork in tender and no longer pink.

1/3 cup olive oil
2 (12 to 16-ounce) bone-in pork loin chops
Salt and freshly ground pepper
2 pinches crushed red pepper flakes
1 cup maple syrup

Steps:

  • Preheat oven to 500 degrees F.
  • In a large oven-safe saute pan over high heat, heat the olive oil until oil ripples. Season pork chops on both sides with salt and pepper and crushed red pepper flakes. Sear the chops, presentation side down, until browned. Then flip and cook until the other side is browned. If the chops are more than 2 inches thick, sear them on the sides as well, using tongs to hold them.
  • Once a uniform sear is achieved, remove the pan from the heat and pour the syrup over the chops. Cook in the oven for 20 to 25 minutes or until firm to the touch. A meat thermometer should register 150 degrees F.
  • When fully cooked, remove the pan from oven and place it over a burner on high heat for a minute to thicken the glaze. Flip the chops so they are evenly coated and serve immediately.
