1/4 teaspoon kosher salt
4 tablespoons unsalted butter

Steps:

  • In a large bowl whisk together cream cheese, brown sugar, 1/2 teaspoon cinnamon, and vanilla extract.
  • Spread over all the bread slices.
  • Add berries to half the bread.
  • Combine the sandwiches and press down gently.
  • In a shallow bowl add the milk, eggs, remaining 1/2 teaspoon cinnamon, and salt.
  • Add the butter to a large skillet or griddle on medium heat.
  • Dip the sandwiches on both sides into the egg/milk mixture and let drip for a few seconds.
  • Add to the butter and cook until golden brown, about 3-4 minutes on each side.

1 teaspoon pure vanilla extract
1 1/2 cups cream cheese

1/4 cup sugar
1 teaspoon pure vanilla extract
1 cup sugar
1 cup water
3 cinnamon sticks
Butter, as needed
4 (2-inch thick) pieces challah bread
Vanilla ice cream, for serving, optional

Steps:

  • Batter:
  • Combine all ingredients in a large bowl, mixing well until incorporated. Keep refrigerated until ready to use.
  • Filling:
  • Fold all ingredients together in a bowl until well incorporated but not completely smooth.
  • Syrup:
  • Combine all ingredients in a saucepan over medium-high heat. Stir until sugar dissolves. Bring to a boil and let reduce by 1/3.
  • French Toast:
  • Preheat oven to 350 degrees F.
  • Heat a large saute pan and then add butter. Dredge the bread in the batter and place in the pan. Cook until golden brown on both sides, approximately 2 minutes. Remove from pan and let cool. Divide filling between 2 pieces of the bread top with the remaining 2 pieces of bread. Transfer French toast to oven and bake for 8 minutes.
  • Cut each French toast in half and serve with the cinnamon syrup and, if desired, a large scoop of vanilla ice cream and fresh berries.

1 loaf braided challah bread, cut into 6 (1 1/2-inch thick) slices
8 ounces cream cheese, softened
1/4 cup Strawberry Jam, recipe follows
1/2 teaspoon lemon zest
1/2 cup fresh blueberries, plus more for garnish
1 cup whole milk
1 tablespoon unsalted butter, melted, plus 2 tablespoons not melted
1 tablespoon brown sugar
2 teaspoons vanilla extract
1 1/2 teaspoons ground cinnamon
3 large eggs
Powdered sugar, for dusting
Maple syrup, for serving
3 cups fresh strawberries, hulled and sliced (about 1 pound)
1 cup sugar
1 medium lemon, juiced (about 2 to 3 tablespoons)

Steps:

  • Using a paring knife, cut through the bottom crust of each slice of bread horizontally, to create a pocket that your fruit filling can be stuffed into.
  • In a small mixing bowl, combine the softened cream cheese, Strawberry Jam and lemon zest. Fold in the blueberries. Place the mixture into a re-sealable bag. When you are ready to stuff the bread you will snip off a corner of the bag and pipe the filling in.
  • In a baking dish, whisk together the milk, 1 tablespoon melted butter, brown sugar, vanilla, cinnamon and eggs.
  • In a large, heavy-bottomed skillet melt the 2 tablespoons butter over medium heat.
  • Using the re-sealable bag as a pastry bag, stuff each slice of bread with about 2 tablespoons of the cream cheese mixture. Once the slices are stuffed, place each slice into the milk and egg mixture for about 10 seconds per side. Once the slices are coated with the custard base, place them into the skillet to brown. Work in batches. Cook each slice of stuffed French toast until golden brown, 4 to 5 minutes per side. If cooking a large batch, transfer the cooked French toast to a baking sheet and keep warm in a 200 degree F oven while you cook the rest of the slices. Repeat the process with the remaining French toast. Serve warm, topped with extra berries, powdered sugar and maple syrup.
  • In a saucepan over medium-high heat, bring the strawberries, sugar and lemon juice to a boil. Reduce the heat to a simmer and stir often until the fruit thickens and becomes syrupy, 5 to 10 minutes.
  • Fill a large bowl with ice and a little water. Have a smaller mixing bowl that can sit within the larger bowl of ice. Once the fruit has cooked, add it to the smaller bowl and set it in the ice bath to cool. As the fruit cools it should become gel-like. Once the jam has cooled it can be stored.

1 (8 ounce) package Neufchatel cheese, softened
1 cup blueberries
3 cups milk
3 eggs
⅓ cup maple syrup
1 teaspoon vanilla extract

  • Mix together the nutmeg and 1/4 cup of sugar in a small bowl. Sprinkle over bread mixture. Cover with foil and bake in the preheated oven until a knife inserted into the center comes out clean, 20 to 30 minutes. Cool in the pan for 5 minutes before serving.
  • To make compote: Heat cornstarch, water and remaining 1 cup of sugar over medium heat and bring to a simmer, cooking until thickened, about 3 minutes. Remove from heat and stir in butter and the remaining 1 cup of blueberries. Serve with the french toast.

2 - 3 (8-10 inch) French baguette loaves (you are lining a 9-in by 13-in pan)
8 oz cream cheese
1 cup powdered sugar
2 teaspoons vanilla
1 cup thinly sliced fresh strawberries
1 cup fresh blueberries
1 cup fresh raspberries
6 large eggs
1 cup milk
½ cup heavy cream
4 teaspoons cinnamon
1 cup packed light brown sugar, divided

Steps:

  • Spray a 9-in by 13-in baking pan with nonstick cooking spray.
  • Slice the loaves of bread into thick slices about an inch thick. Do not cut completely through the bread. Place in the pan.
  • In a mixing bowl, beat the cream cheese, powdered sugar and vanilla together. Fold in the berries.

Whenever you have a little extra time to simmer berries into a simple compote, do - then try stuffing it into hearty French toasts and dusting them with confectioners' sugar. They'll almost remind you of a jelly doughnut, even more so if you use brioche hamburger buns as your bread of choice. (But regular white sandwich bread, challah or any other enriched bread works, too.) You can adjust the sugar in the berries, depending on how sweet they are, and, if you prefer a smoother compote, press the cooked fruit through a mesh sieve once cooled to remove any seeds.

1 pint/285 grams fresh or frozen blackberries, raspberries or blueberries (about 2 heaping cups)
1/3 cup plus 3 tablespoons/100 grams granulated sugar

Steps:

  • Place the berries, 1/3 cup/70 grams granulated sugar, the lemon juice and 1/4 teaspoon salt in a small saucepan. Roughly crush the berries with the back of a fork to help release some of their juices.
  • Bring to a boil over high heat, then reduce heat to medium-low, cover with a lid and cook at a strong simmer, stirring occasionally to ensure the berries never stick to the bottom and burn, until the sauce has thickened and reduced by half, about 20 minutes.   • First allow your sliced bread to sit at room temperature for approximately 1 hour to allow the surfaces to dry out.

2 large ripe bananas
1 tbsp maple syrup , plus extra to serve
2 eggs
50ml milk
50ml double cream
drop of vanilla extract
50g caster sugar
1 tsp cinnamon
pinch of nutmeg
1 large brioche loaf, cut into 4 x 2in slices
100g butter
vanilla yogurt , to serve

Steps:

  • Peel and slice the bananas, mash with the maple syrup and set aside. Place the eggs, milk, cream, vanilla, sugar, cinnamon and nutmeg in a wide, shallow bowl and whisk to combine.
  • Heat oven to 160C/140C fan/gas 3. Using a sharp knife, slice open each slice of brioche from the top to form a pocket, leaving at least 1cm around the edges. Stuff the pockets with the banana mix. Soak the stuffed brioche in the egg mix for 30 secs on each side.
  • In a large non-stick pan, melt half the butter. When sizzling, place the brioche in the pan and fry for 2 mins each side until golden. You may have to do this in batches. Transfer to the oven to warm through for 5 mins. Serve drizzled with extra maple syrup and a spoonful of vanilla yogurt.
