2 tablespoons olive oil
½ cup celery, sliced
½ cup leek, julienned
½ cup carrot, julienned
salt, to taste
white pepper, to taste
1 cup heavy cream
1 whole sea bas, cleaned
black pepper, to taste
2 tablespoons fresh tarragon, chopped
2 sheets puff pastry
2 eggs, beaten
fresh parsley, for serving
lemon wedge, for serving
1 cup white wine
lemon juice
4 shallots, minced
½ bunch fresh tarragon
1 cup heavy cream
18 tablespoons butter, sliced, 2 1/4 sticks
salt, to taste
pepper, to taste
chive, minced

Steps:

  • Heat the olive oil in a medium pan over medium heat.
  • Add the celery, leeks, carrots, and a pinch of salt and white pepper, and sauté until the vegetables start to cook down.
  • Add the cream and stir to coat the vegetables. Cook until the cream is thickened.
  • Remove the pan from the heat.
  • Line a baking sheet with parchment paper. Roll out both sheets of puff pastry until they are ⅓-inch thick. Transfer one sheet of puff pastry to the baking sheet.
  • Cut the sea bass along the back to remove the spine, then butterfly open. Season with salt, pepper, and the tarragon.
  • Scoop the cooked vegetables onto one side of the fish, then fold over the other fillet.
  • Transfer the fish to the center of the sheet of puff pastry.
  • Brush egg wash around the fish, then lay on the second sheet of puff pastry, pressing around the fish to seal. Use a paring knife to cut away the excess puff pastry in the shape of a fish.
  • Brush the top of the puff pastry with egg wash and use the leftover pastry scraps to decorate the fish with an eye and gills. Use the tip of the knife or the large opening of a pastry tip to draw scales on the body and tail.
  • Chill in the refrigerator for at least 30 minutes.
  • Make the Chive Butter Sauce: In a medium saucepan over medium heat, combine the wine, lemon juice, shallots, and tarragon. Reduce until only a ¼ cup (60 ml) of liquid remains. Add the cream and reduce until the mixture thickens slightly.
  • Slowly whisk in the butter, 1 piece at a time, until the sauce is glossy and thickened.
  • Remove the tarragon stem and season with salt and pepper. Stir in the chives.
  • Preheat the oven to 375℉ (190℃). When the oven is heated. Bake the fish for 15 to 20 minutes, or until the pastry is golden brown.
  • Transfer the fish to a platter and garnish with fresh parsley and lemon wedges.
  • To serve, cut the fish into individual portions and plate with a drizzle of Chive Butter Sauce.
  • Enjoy!

12 (4-ounce) trout fillets, skin removed or 6 whole trout, cleaned, scaled, filleted and skinned
Salt
Freshly ground black pepper
2 tablespoons chopped fresh tarragon leaves
1 pound fresh pike fillets, skin removed
2 eggs
2 1/2 cups heavy cream
2 pounds puff pastry
Chive Butter Sauce, recipe follows
4 shallots, minced
1/2 bunch tarragon, cleaned and leaves chopped
1 cup white wine
1/4 teaspoon chopped fresh thyme leaves
1 cup heavy cream
3/4 pound butter
1 lemon, juiced
Salt and pepper
2 bunches chives, minced

Steps:

  • Season the trout with salt, pepper, and 1 tablespoon of the tarragon. Reserve in the refrigerator.
  • To make the fish mousse: Puree the pike in a food processor. Add 1 egg, mix well, and with the motor running, add the cream. Refrigerate for 2 hours.
  • Divide the pastry dough in half and roll out each piece so it is approximately 1/3 inch thick. Cut the pastry into 12 equal pieces that are all slightly larger then the fish fillets. Place half of the pastry pieces on a baking sheet. Place 1 fish fillet in the center of each piece of pastry, skin-side down. Spread the chilled mousse over the fillets and cover with another fillet, skin-side up. Lightly beat the remaining egg for egg wash. Brush the pastry around the edge of the fish and cover with a second sheet of pastry. Press the layers of pastry around the edges of the fish to seal. Trim the pastry following the outlines of the fish, and use the leftover dough to decorate the fish with scales, an eye, and gills. Chill in the refrigerator for at least 30 minutes.
  • Preheat the oven to 375 degrees F.
  • When ready, bake the fish for 15 to 20 minutes, or until the pastry is golden brown and the center of the mousse is hot (when you insert a skewer in the center for 1 minute, it should be hot when touched to the lip).
  • Sprinkle fish with remaining 1 tablespoon tarragon.
  • Serve the fish with Chive Butter Sauce.
  • In a saucepan, combine shallots, tarragon, wine, and thyme. Reduce until only 1/4 cup of the liquid remains. Add the cream and reduce until the mixture thickens slightly. Slowly whisk in the butter, 1 small piece at a time. Add the lemon juice, salt, and pepper, to taste. Strain the sauce into a small saucepan and stir in the chives.

4 salmon fillets, check to make sure there no bones
1 (10 ounce) box of chopped spinach, defrosted and squeezed dry
1 onion, sliced
3 garlic cloves, diced sauted with onions and cooled
1 box of defrosted frozen puff pastry sheet
1 (10 ounce) can cream of mushroom soup
1 teaspoon curry
salt and pepper
Old Bay Seasoning

Steps:

  • Roll out pastry slightly and cut each in half.
  • Season each salmon with salt, pepper and Old bay seasoning.
  • Place one salmon fillet on each pastry.
  • Then place 1/4 of the onions, garlic and spinach on top of each salmon.
  • Wrap up pastry over salmon twist and seal.
  • Bake in a 425 degree pre heated oven for 15 to 20 minutes.
  • Heat can soup with curry. Adding water to thin to consistency you like.
  • Place soup on bottom of plate then place Puffed pastry with salmon fillets on top.
  • Serve with plain Jasmine Rice.

6 puff pastry shells, thawed and baked according to directions on pkg
1/2 lb raw scallops
1 lb medium shrimp, cook, peel and devein
2 cups crabmeat, picked over
2 tablespoons butter
3 tablespoons flour
1/4 teaspoon salt
1/2 cup cream
1/2 cup milk
1 teaspoon paprika
1/4 teaspoon Worcestershire sauce
1 dash red pepper
sherry wine, to taste

Steps:

  • Cook scallops in boiling salted water for 7-10 minutes and drain.
  • Melt butter in large sauce pan.
  • Add flour, salt and red pepper.
  • Blend well.
  • Add cream and milk stirring well and cook until thickened.
  • Add paprika and worcestershire sauce.
  • Blend well, cover and cook 10 minutes over medium heat.
  • Add scallops(cut in smaller pieces if large) and shrimp, cook 15 minutes.
  • Add crab and cook 10 minutes longer.
  • Add Sherry, to taste; try 2 tablespoons to begin with.
  • It makes a lot of sauce - so says the recipe.

This recipe is definitely a company dish although I occasionally make it just for the family. I like to present the whole fish to guests before cutting into serving pieces, you will have earned the compliments. You could also substitute your favorite deviled crab or crab cake recipe for the filling offered here.

¼ cup butter
1 cup finely chopped onion
1 cup minced celery
1 tablespoon chopped fresh parsley
8 ounces crabmeat
8 ounces shrimp, peeled, deveined and minced
¼ cup dry vermouth
salt to taste
ground black pepper to taste
¼ teaspoon hot pepper sauce
½ cup bread crumbs
1 (17.5 ounce) package frozen puff pastry sheets, thawed
2 pounds flounder fillets
2 egg yolks, beaten

Steps:

  • To make the stuffing: Melt butter or margarine in a large saucepan over a medium-low heat. Saute onion, celery, and parsley until all of the vegetables are just tender. Mix in crabmeat, shrimp, and vermouth. Season with salt, pepper and hot pepper sauce; cook until shrimp is finished cooking (it will be pink). Mix in bread crumbs, a little at a time. When the mixture holds together well, stop adding bread crumbs. Taste and add more seasoning (salt, pepper, and hot pepper sauce) if necessary. Set this mixture aside to let it cool.
  • Spray a baking sheet with non-stick cooking spray.
  • Roll 1 sheet of puff pastry onto a flat surface. The puff pastry, once rolled should be about 1/3 to 1/4 inch thick and large enough for you to lay the fish on top of it and still have puff pastry on the sides. Lay one of the fish fillets on top of the puff pastry. Spread the stuffing mixture evenly over the fish fillet. Place the remaining fillet over the stuffing. Trim the pastry around the filets in roughly the shape of a fish. Save the trimmings.
  • Roll second sheet of puff pastry out to about 1/3 to 1/4 inch thick. Drape second sheet over stuffed fillets, making sure that there is enough of the top sheet to tuck under the bottom sheet of puff pastry. Trim the top sheet of pastry about 1/2 inch larger than the bottom sheet. Brush underside of top pastry sheet with water and tuck under bottom sheet of puff pastry pressing lightly to totally encase the fish and stuffing package. Place the sealed packet on the prepared baking sheet, and let it cool for 10 to 15 minutes.
  • While packet is chilling, roll out pastry scraps. From the scraps cut out fins, an eye and 'lips'. Attach cut-outs to chilled package with a little water. Use an inverted teaspoon to make indentations in puff pastry to resemble fish scales but do not puncture pastry. Chill entire package.
  • While the package is chilling, preheat the oven to 425 degrees F (220 degrees C).
  • Remove the fish from the refrigerator and brush the package with the egg yolks. Measure the thickness of the package at its thickest part. Bake for 15 minutes, then reduce the temperature to 350 degrees F (175 degrees C) and bake the fish for 10 extra minutes per inch of measured thickness. Test for doneness by inserting a thermometer into the package, when the temperature reaches 140 degrees F (70 degrees C) the fish is finished cooking.

2 cloves garlic, chopped
½ medium onion, chopped
5 oz fresh spinach
1 teaspoon salt, for spinach
1 teaspoon pepper, for spinach
⅓ cup breadcrumb
4 oz cream cheese
¼ cup shredded parmesan cheese
2 tablespoons fresh dill, chopped
1 sheet puff pastry, softened to room temperature
1 salmon fillet
1 teaspoon salt, for salmon
1 teaspoon pepper, for salmon
1 egg, beaten

Steps:

  • Preheat oven to 425°F (220°C).
  • In a pan over medium heat, melt butter. Add the garlic and onions, cooking until translucent.
  • Add the spinach, salt, and pepper, cooking until spinach is wilted.
  • Add the breadcrumbs, cream cheese, parmesan, and dill, stirring until mixture is evenly combined. Remove from heat and set aside.
  • On a cutting board, smooth out the sheet of puff pastry. Place the salmon in the middle of the pastry and season both sides with salt and pepper.
  • Place several spoonfuls of the spinach mixture on top of the salmon, smoothing it out so that it does not spill over the sides.
  • Fold the edges of the puff pastry over the salmon and spinach, starting with the longer sides and then the shorter ends. Trim any excess pastry from the ends, then fold the ends on top. Flip the puff pastry-wrapped salmon over and transfer for a baking sheet lined with parchment paper.
  • Brush the beaten egg on the top and sides of the pastry. Score the top of the pastry with a knife, cutting shallow diagonal lines to create a crosshatch pattern.
  • Brush the top again with the egg wash.
  • Bake for 20-25 minutes, until pastry is golden brown.
  • Slice, then serve!
